      Ah, you caught it too! We have done risotto alla zucca many, many times but never done the mantecatura with Gorgonzola. We are trying it tonight. It might be interesting to garnish with walnuts, but not this time.

      @@kathrynschenk7432 Walnuts and gorgonzola is like Laurel & Hardy! If you go with the Squash alone try it with almonds, made it three weeks ago and was really good (Only squash and almonds, butter and parmigiano for the mantecatura)

    Oh my Chef Alfredo! You made me switch from wine to whisky to get through your cooking segment! Thankfully Eva saved the day with the unwashed carnaroli rice and the stock from scratch, so I could go back to my beloved vino while I watched her create perfection. Which reminds me, that plate of sawdust Chef Alfredo tasted at the end reminded me of garden mulch.

      Use Violife Prosociano cheese (alternative to Parmagiano Reggiano), it is just fantastic, to die for. You would never know it was plant based, if nobody told you! Not kidding! I have had so much pasta with olive oil, pepper and Prosociano lately! Can’t get enough... 😋

      @@AdelineSasongko - Well, if you prefer to eat plant based or vegan, instead of using parmesan (which is out of the question), you can make «vegan parmesan» easily using almonds (or cashews), garlic powder and nutritional yeast (I’m sure you can find that somewhere). It is very tasty too to use on pasta. And not to forget, healthy! 😊

    You were trying to use "hom ma-li" (Thai fragrant rice) to make a risotto???? Would have been better off with "kao neyow" (sticky rice) as that is glutinous. Your Italian is getting better Chef Alfredo! Well done Eva!

      I'm from Lombardy and risotto is a very important dish for us. I love and cook also asian cuisine. Asian rice is not good because it doesn't have enough starch.

      for risotto sticky rice (asian style) is not good. Risotto must not be sticky. The best rice for risotto is carnaroli, because you need high starch content and firm texture to obtain the right consistency. If you can't find Carnaroli, go for Arborio

      @@aqsw57 Arborio and Originario are more adaptable varieties: you can make a risotto or even Asian cuisine if you wash them well. I use them for Japanese curryrice. With Carnaroli or Vialone you can't do Asian cuisine.

    Hahaha I love this comedy! First of all, "Dove abito, a Milano" and you show the wikipedia page of Milan, Michigan (which is even pronounced ˈmaɪlɪn). Then the packaged broth and the Jasmine rice to make a risotto hahahhaha. Soooo funny Harper when he says "Abbiamo bisogno l'olio" (showing the garlic) "e l'aglio" (showing the oil) while it's the opposite hahahaah. At 2:41 when Harper added the wine and the result was a lot of steam, was that a tribute to the Milanese fog? :D (I'm from Milan, the one in Lombardy :D)? And finally, as some other users remarked, Harper's "che schifo" was very convincing hahahaha. Nothing to say of course about Eva's risotto :D. Thank you both for the funny moments you give us every Sunday, bye-bye.

    Eva has the coolest finger tattoos. I cooked professionally for over a decade. I taught my father how to make a proper risotto meal last year when I visited him in FL. He now makes it once a week.

      After a glass of wine I decided to make risotto only to discover I was out of Arborio rice and all I had was jasmine so used it. Surprisingly, though sacrilege, wasn’t too bad

    Actually, in the Philippines we do fry rice with garlic. It’s a dish called Sinangag and, at least in my household, we only cook that with leftover rice, which was already cooked.

      @mark heyne I live in India, and rice is my common food everyday. The reason I asked is, we don't use this jasmine rice, I haven't heard of it. We use everyday SonaMasoori rice. And rich ppl use Basmati rice. Basmati rice is long grain and is easy to cook than our normal everyday rice. It's very fragrant when cooked. So we use it for Biryani or Cumin Rice preperation for times like Christmas or New Year or birthdays.
      Now Pakistanis grow and eat rice like Indians. But they are more attached to perfumes in their culture. Many Muslim friends I have here use strong perfumes which bear the strong smell of Cloves. And I read long ago, when one body guard killed the governor in Pakistan for being pro Christian and wanted to abolish blasphemy law in Pakistan, the lawyers in the court threw rose petals at him on the way. And put rose garland to that criminal for killing the Governor. So these roses and jasmines are closer to Islamic traditions. And I was thinking jasmine rice may be from Pakistan. But thank you for clarifying. Much appreciated.

    Eva, could you explain the geography of Italy and what ingredients and recipes the various regions are known for and how their cuisines, ingredients, and wines differ from each other? In various videos you have mentioned Calabria and Tuscany and Rome. I don't know where any of these are and what their relationship is with each other. I would love to hear your explanation rather than reading Wikipedia.

    I had a few good laughs with this video. You two are quite the team. As for risotto, my family has been making it since the 13th century. So I’ve made it hundreds of times for history’s sake.….yet never with squash. I have many, many different recipes. I will add yours to the list. Thanks

      @@rodgerpalmer9872 I was joking: I'm italian from the north, where people used to be (in my youth here on the eastern border) tall, blond mostly, blu or green eyed, like my family, from slavic and german heritage. In the following decades, massive immigration from the south has effectively changed the look: no more blonds, no more fair skin and eyes........so mr Harper could effectively hail from Milano.

    My favourite vegetarian risotto has leeks, mushrooms and tarragon, but this pumpkin recipe looks delicious.
