I used to make Apple/pecan muffins and in addition to Apple pieces and chopped pecans, I added a cup of applesauce which not only increased the flavor but also kept the muffins moist for a long time. Nonetheless, this is a very good video with easy to follow instructions and the end result shown is easy to achieve.

You could have made a vegan version by losing the fat, using bananas instead and replacing eggs with chia seed or crushed linseed and water. Use dates for sweetness. The apples could make it sweet anyway. Spices such as cinnamon , nutmeg etc could be used and vanilla for flavour. Nuts such as walnuts, pecan chopped into the mix would be interesting. You could make a simple cashew cream to decorate.
Various flours could also be used. Buckwheat, oat, banana, chickpea even. You will need to use a raising agent such a baking powder and activate it with organic cider vinegar.

Mine had a strange taste to them and you couldn't taste the apples at all. I added little cinnamon Yoghurt but weird taste...think I will throw our!
They are not as good as they claim ! It’s a bland recipe and definitely not my choice !

Not in this recipe. But you can add lemon juice to apples if you cut them before making cake dough.
