It wasn't until my son adopted veganism about 18 months ago that I started prepping and cooking vegan meals. It's interesting and very enjoyable.
My tip ..cut your tofu like you did and cover it in flour and fry it before, add it to your sauce...it will keep the shape and be more firm and has a nice rosted flavor to it... and you can even add some extra spices you like to the flour to give the tofu some taste... but well done recipe!
I cooked my first tofu dish (stir fry) a week ago and I floured and shallow fried the tofu. It kept its shape and interesting texture. Be careful though if the oil splattering even though I took out the moisture and floured the tofu 😅

Hi, not adding ginger is a deliberate decision? Would adding ginger will make it more flavourful ? Also can sugar be skipped?. If not, can a sweetner can be used?
Another tip is to add some of that Currie sauce to the tofu and leave it over night for a more flavorful tofu. Make sure you use a press first to remove all excess water
I like everything here. Except would use a non silken tofu, with the water pressed out and maybe pan fried first before adding the that yummy curry sauce. I see some other comments for tofu changes below as well. Silken tofu is GREAT for making puddings and pie fillings.

Yes without a little frying the tofu doesn't drench in that spices when added directly
He did mention you could pan fry the tofu first or just poach the tofu in the curry sauce.
That will it even more unhealthy, maybe bake it instead.
