@@FoodImpromptu I actually made it today with jasmine rice, I put a piece of ginger to cook with the rice then take it out once it is finished . OMG the tofu curry is a must for everyone to try but adding that onion salad takes it to the top level. Will be making this again by the end of the week. This recipe would work better with frozen tofu, which is porous after rethaw, which makes it easy to squeeze out water and absorb the flavors. The texture is more interesting as well.

why can't the tofu be left to marinate longer than 1 hour?
I find that the plant-based yogurt separates releasing it’s water and looses it’s creaminess. If left to marinate for too long.

Sugar added in small quantities balances sourness..
Recently discovered that a standard chili chicken recipe works well with tofu as well- chunks of protein make for a good time.
Why should we not marinate it for more than an hour ?

Why did my yogurt curdle and not stay creamy as shown in the recipe?
What type of yogurt did you use?
Pl avoid using polythene sheets to cover with style. A simple plate will do. We do what you do. So .. be eco friendly.

Don't call it tofu curry, it it paneer masala or veg paneer. Both tofu and curry are foreign words.
