Hey guys... For anyone doing this, reduce the sugar in the cream cheese frosting , instead of 4 cups , put 2 1/2 cups .. Trust me, it'll taste so much better with less sugar..

Made this for Christmas this year and definitely had to tweak the recipe. Everyone loved it! All I did was increased the granulated sugar for the cake to 2 cups because it will not be sweet AT ALL! I increased the cocoa powder to 3 tbsp and the vanilla to 2 tsp. The original recipe that they have much taste to the cake part so try it this way
For the cream cheese frosting I still wanted the taste of a little cream cheese so I decreased it to 2 cups and i it was perfect for the right tanginess and sweetness. Increase the sugar to your preference but 2 cups for me was perfect. And increase the vanilla to 1/2 tsp as well (I used Nielsen-Massey Madagascar bourbon pure vanilla extract, the only brand i use when i need vanilla). Do not overbeat the frosting. Mine ended up melting a tiny bit but still was able to hold its shape when I piped the frosting. Do not keep adding more sugar it’s only going to make it more sweeter. I ended up putting the frosting in the fridge a bit to chill it. FYI the recipe that calls for 6 oz of cream cheese wasn’t enough so you may want to double the ingredients to frost all of the cupcakes and there is going to be left overs. Let me know what you guys think if you guys try it!

As the most-preferred cake makers, we really appreciate such videos. This recipe was so precise and well-explained. Cupcakes are little things of joy. The only important thing is that they should be well-baked, soft and spongy. And a wee bit of cream toppings of different flavours always helps!

I just finished making this recipe and oh my goodness it tastes so good! I personally love the frosting to be more on the cream cheese side and not so much sweet like it normally tastes at georgetown cupcake, so I made my frosting a smidge different but all in all it tastes better than any bakery around and to me its better than georgetown cupcake itself! So thank you so much for the recipe (: Im so very pleased

i think i may have put around 250g of cream cheese because looking at the recipe it seemed too little for 24 cupcakes.
I basically translated the video into this basic guide below
      Recipe:
      Red Velvet Cupcakes
      Makes around 18 - 24 cupcakes
      Preheat oven 180C/350F
      170g/12 tbspunsalted butter room temp
      1 ¾ cup granulated sugar
cream together for 3-5 min til light and fluffy
add 2 large eggs one by one on low speed
      2 ½ tbsp. cocoa powder
      4 tbsp red food colouring
      2 tsp vanilla extract
whisk together then add to batter
Add tsp salt to 1 ½ cup of whole milk
3 ¼ cup all purpose flour sifted
Add flour, milk, flour, milk, flour, milk (alternating)
Add 1 ½ tsp apple cider vinegar and 1 ½ tsp of baking soda in a little bowl and mix, then quickly add to batter
      Mix batter to incorporate
Use ice cream scoop to scoop into cupcake patties
Put in oven for 18-20 mins or until skewer comes out clean
      Frosting
170g cream cheese (I put around 250g, maybe a little less and managed to frost 23 out of 24 cupcakes, and i didn't put as much frosting as she did in the video)
      60 g unsalted butter
cream together to medium to high speed til light and fluffy
      ¼ tsp pure vanilla extract
      4 cups powdered sugar
Put into piping bag with large round tip and decorate with fondant heart/sprinkles

The vinegar is not a secret😳Red velvet recipes have been around forever.Growing up in the early 60's in Alabama my grandma always made red velvet cakes. Grandma used buttermilk instead of whole milk for a moist batter. However I'm sure their cupcakes are awesome.

It has been my understanding that the vinegar or apple cider vinegar "activates" that infamous RED color and it also helps with the texture of the cake's crumb! ;-D And yes, most "true" Red Velvet Cakes have vinegar, buttermilk & cocoa in the mixture! The traditional Red Velvet cake had a "cooked" frosting made with flour, butter, cream/milk, and vanilla; however, later on, the frosting evolved into a whipped "Cream cheese" frosting! BOTH ARE EQUALLY DELICIOUS! Yum.:-D

    • @inmyopinionwisdom4986

      @Jean B.: I AGREE WITH YOU!
It has been my understanding that the vinegar or apple cider vinegar "activates" that infamous RED color and it also helps with the texture of the cake...referred to as the crumb! ;-D And yes, most "true" Red Velvet Cakes have vinegar, buttermilk & cocoa in the mixture! The traditional Red Velvet cake had a "cooked" frosting made with flour, butter, cream/milk, and vanilla; however, later on, the frosting evolved into a whipped "Cream cheese" frosting! BOTH ARE EQUALLY DELICIOUS! Yum.:-D It is said that the Waldorf Asteria Hotel (sp?) is famous for their take on the RED VELVET CAKE. But, I got to say my southern Great Grandmother's recipe (by the way, she was born in 1918) is pretty darn delicious! :-D She won 6 Blue Ribbons so far!
Additionally, it has been my understanding that the vinegar or apple cider vinegar helps "activate" that infamous RED color and it also helps with the texture of the cake, I.e. The crumb! ;-D
And yes, I agree with you concerning the BUTTERMILK, most "true" Red Velvet Cakes have vinegar, buttermilk & cocoa in the mixture!
I learned from my GG Mama that the "traditional" Red Velvet cake had a "cooked" frosting made with flour, butter, cream/milk, and vanilla; however, later on, the frosting evolved into a whipped "Cream cheese" frosting! BOTH ARE EQUALLY DELICIOUS! Yum.:-D
I have seen some RED VELVET CAKES that did not have that infamous "RED" color. I use WILTON'S "CHRISTMAS RED" FOOD GEL COLORING (it's the perfect red hue for this cake and it doesn't take but a few drops of the gel to accomplish the intense red color VERSUS using almost a whole bottle of McCormick's liquid food coloring.

Are you sure? Because I have tried so many and am not pleased with any so far. I tried the Georgetown red velvet tonight and half the batch came out good and fluffy the other half came out too dense. I think a few reasons as to why but not finding any good red velvet recipes from scratch so far. I've tried from reputable sources. The frosting was very good from Georgetown though, it's a keeper for me. To me its not too sweet.

I don't think that is the actual buttercream recipe. The actual frosting is way more fluffier & it is lighter than just cream cheese, butter & heaps of sugar. They may have purposely left out some 'secret' ingredients.

      @prope matutino:
More than likely it's one of the "true" recipes for RED VELVET CAKE; however, I sort of think it's not so much the "ingredients" that are making the cupcakes so "unique"...but, I believe it is the "procedure" utilized.
Additionally, let us not forget that their cupcakes are being made on COMMERCIAL EQUIPMENT, BAKED IN COMMERCIAL OVENS, ETC. I'm also assuming that Georgetown utilizing premium ingredients (that's what keep the customers coming back). That bakery is not putting out inferior product!!!
I respect all chefs; however, perhaps, your chef friends are going to have to put a little LOVE into the PREPARATION/STEPS. DO NOT GO BY THE "TECHNICAL" BOOK ON THIS ONE! ;-D Tell them to "pretend" like they are HOME BAKERS and I bet you that those cupcakes will come out just as DELICIOUS as Georgetown Bakery OR perhaps, even better! :-D *P.S. Hang around those Grannies that know a thing or two about baking! HINT HINT ;-D Put the chef coats down on this one! LOL
