If you place an AirTag in a bicycle and that bicycle is stolen, the thief won’t know if you’ve hidden an AirTag in the bag as they continue to walk, ride or drive around with it. Only if the thief has an iOS device running iOS 14.5 or later will they be notified that there is an unidentified AirTag near them once they take the stolen bag “home.”
This location of “home” is determined in the iPhone's Address Book.
In the case of theft, this will give victims a good deal of time to report the device as stolen to police and actively track it using the Find My app - especially since even if the AirTag is disabled, the last known location will still be shown.

Heb hier destijds ook over nagedacht gezien mijn Piece of Mind deze maand vervalt. Alleen als de eventuele dief zelf 'n iPhone heeft worden zij op de hoogte gebracht van de Airtag. Kan dan best zijn dat ze even langs je fiets gaan om te kijken of ze hem kunnen ditchen. Maar je hebt gelijk, beter iets dan niets.

A thief can grab your property or kids or dog, then mark his current location as home or work and they will then get a notification that your airtag is covertly tracking them, the one you placed in your stolen property. They would cause it to ‘sound off’ then they find it and toss the tag, voila. That will teach you for trying to be a stalker. Basically, Apple has decided to lump all their customers into the creeper category when actually they just want to secure their own property or keep their kids or pets safe. In other words it’s worthless as a theft deterrent. Sorry but true.

maybe they will introduce new forms of Airtags within next years but I don’t think that there will be a new Airtag v.2 soon, since everything (usability, accuracy, battery life) seems to be pretty adequate.
