As seen in many of my breakfast videos, I love using eggs since they’re a versatile, high-quality protein. Despite popular belief, eggs can be absolutely be part of a healthy diet that includes a variety of nutritious foods!
Sweet potato egg hash recipe (this recipe is AHA Heart-Check certified):
Preheat the oven to 425˚F and place a rimmed baking sheet in the oven while it preheats.
Add 1 lb of 1/2-inch diced sweet potatoes, 1/2 cup diced red or yellow onion, 1 diced red bell pepper, 1 diced green bell pepper, 1 tbsp oil, 1/2 tsp smoke paprika, 1/4 tsp garlic powder, 1/8 tsp ground cayenne pepper, 1/4 tsp salt and black pepper to a large bowl and stir to combine.
Remove baking sheet from the oven and coat with 2 teaspoons oil. Use a wooden spoon or spatula to spread potatoes and vegetables out evenly onto the baking sheet. Bake, stirring occasionally during cooking time, until sweet potatoes are fork-tender, about 18 to 20 minutes.
Move vegetables away from the sides, toward the center of the baking sheet (to create a mound for adding 4 eggs). Use the back of a spoon to create 4 wells in hash. Crack one egg into each well. Season with salt and pepper. Bake until whites are set and yolk is jammy, about 8-10 minutes.
Drizzle 1 tbsp red wine vinegar over everything and garnish with 2 tbsp chopped chives just before serving.
Additional notes:
Be sure to keep potatoes to a ½-inch size so that they cook evenly and quickly.
Cracking the egg into a bowl first makes it easy to remove any rogue eggshell that may end up in the egg when it’s cracked.
The USDA recommends cooking eggs until the yolk and whites are firm.

I’m a dietetics student and I’ve come to learn through numerous studies and biochemistry science, eggs are perfectly fine for you. You can have more than 7 eggs a week lol

When I looked into the research, that seven is just a suggestion. They've done several long-term experiments with even up to 3 eggs per day and their cholesterol didn't go up. So if you're at say 10 or so a week, I wouldn't sweat it either 😅

It also depends on your genetics. Some people have a tendency to have a higher cholesterol
@@Ella-dv8ef my step mom only eats vegetables and chicken breast, she is permanently on high cholesterol medication. Genetics is crazy on cholesterol.. made me doubt everything i knew about cholesterol.
I have eaten 3-4 eggs every day for over 20 years. My cholesterol is perfect. But I do go to the gym every day, I walk 10k steps/ day or more, I go lane swimming every other day
The fact that eggs being an unhealthy food or too high in cholesterol has been disproven decades ago and people still not knowing this shows how far we need to go to help knowledge progress in what is healthy and balanced food.
Eggs are high in cholesterol. The egg industry is a donor for the American Heart Association. Of course they need to in return promote the very thing that causes heart disease. The health orgs in the US especially are corrupt to the core and are all backed by the food industry.

That's not true. Eggs in moderation are safe for most people, except those who are sensitive to dietary cholesterol and those who have heart disease. In those cases, you should talk with your Dr.

Meat, dairy and egg corporations are some of their biggest donors. Of course they will push these products by paying these influencers. But when you use your brain for 5 seconds, you'll notice the connection between a non profit fighting against heart disease and them being backed by donors who coincidentally sell products causing heart disease. This isn't anything to applaud, it's just someone being a sellout. Think.

I have a minimum of 21 eggs a week - three for breakfast every day. Due to stomach health problems my diet is extremely limited, but I can have eggs!
My doctor would sanction that.

I've been learning more about balanced eating and was so sad when I learned about the cholesterol in eggs. I thought I could only have a couple a week, but im so glad to hear it's 7! That's a number I can work with!

I've been prepping veggies and freezing them. As long as I cook them _without thawing_ they cook up like fresh veggies!
Onions
Peppers
Chopped sweet potatoes
Broccoli
Asparagus
Shredded cheddar and mozzarella
Gorgonzola
All of these freeze amazingly well!
I freeze these in recycled glass jars - especially the onions or they will flavor your ice cream!

Love your videos. I have been struggling with a lot of body image issues due to a suspected but undiagnosed ED, along with diagnosed OCD. It’s extra hard figuring out what to eat or even *wanting* to eat, especially because I’m an ultra runner and know I need calories, but also feel self conscious surrounded by so many rail-thin people. My waistline is much bigger than I’d like, and I’ll be honest and say I hate it more often than not. But your videos, while they don’t fix everything, remind me to take joy in eating and to be kinder to myself sometimes. Maybe my waistline isn’t what I want it to be, but I’m not the only one with that situation and it doesn’t mean I don’t need/deserve food.

One thing that helped me learn to love my body was providing care for someone who had a spinal cord injury and was a quadriplegic, but still had an insatiable desire to live to her most capability. I eat about 7 eggs just during breakfast in the form of scrambled eggs then I snack on boiled eggs throughout the day. My cholesterol is just fine I’m just active at the gym and meat makes me feel sick after I eat it so I use tofu and eggs for my proteins lol

She figured out toast w/her 4 eggs made her hungry so she tossed the toast n made another egg. Perfect now! She adds mayo on top for more satiety. Usually eats again bout 6 hrs later. A glass of kefir with it and half an orange or a some kiwi if rly hungry but carbs make her hungry…
I love serving my fam eggs for breakfast or brunch, so many nutrients that aren't in as many things plus the protein. And especially with veggies! So easy, tasty, and truly versatile.
Dutch dietician here; guidelines change according to research. That's why nutritional organisations say one thing a few years back and the another thing now.
For egg intake: it is an advice in general and made for the culture and demographics that apply to your country. For instance in the Netherlands, we give the advice to take 2-3 eggs a week. Americans and Dutch people have different diets and health organizations give different forms to what research says. They look at the whole puzzle, not just one puzzle piece. Advice for you, specifically can vary according to your needs (based on age, gender, ethnicity, genetic makeup, daily activity, etc) and dietary choices (cultural food preferences, ethical reasons, belief systems, etc). This is why, if you talk to a good dietician, you can hear: " 14 eggs a week is no problem." Or: "maybe slow down on the eggs to a maximum of 7."
If you're worried about your cholesterol, talk to a dietician. If you cannot afford this; try to avoid fatty meats, eat more nuts, seeds and fatty fish, increase your wholegrain, vegetable, and fruit intake and make shure you move/excercise at least 30 mins a day. The easiest way to find free and reliable information is through foundations such as the one she mentioned.

I don't know about worried. I'd start with curiosity towards him. It really depends on the rest of his eating patterns, lifestyle and health. By being curious, you can learn a lot, such as why he eats five eggs a day and what the rest of his diet contains. A variety in diet is important, but if he switches the eggs for marshmallow fluff on bread... I don't think that's a good alternative. Because I know only 2 relevant things about your bf (male, 5eggs a day) and this is the internet, where you don't want to share all your personal data, you can always see a dietician in your neighborhood and ask for a short consultation if your boyfriend agrees. If not, I think eating at least one or three eggs a day less would not hurt him. Try to replace it with other lean protein, or plant based products, such as hummus.
Dutch are way healthier looking. We should look to their standards instead of the other way around

The only downside of this is having to preheat the oven in time for breakfast. But who says I can’t make this for dinner? Cause it looks yummy!

Because a person online who is being paid to say this is reassuring you? The nonprofit that paid her to spread this information is backed by the meat, dairy and, you guessed it - egg industry. Consuming their products in excess is the number one cause of coronary artery disease. When the American Heart Association itself is telling you that it's okay to clog your arteries you should probably take a step back and think twice about the reason why this was posted in the first place.

I read a book once saying pregnant women should eat AT LEAST 3 eggs a day. So I do that even when I’m not pregnant, what’s healthy for a pregnant woman is healthy for all women right? :)

Where’s the recipe? I’m craving sweet potatoes so badly after watching this.
My doctor said I can have 3 whole eggs per day, that if i want more eggs to just use the whites. My cardiologist said it depends on the individual. Some people are more sensitive to the cholesterol in eggs and it influences their levels. Others aren't. They felt I could have 2 or 3 per day. My other doctor is a naturopath and eats 6 eggs every morning as part of her carnivore diet. Her blood work is marvelous. None of this is one size fits all.
Your hair is so pretty, do you attribute that to good nutrition or certain products?
As someone who is sensitive to eggs (I will be intensely nauseous for many hours if I force myself to eat a scrambled egg) but would prefer a savory breakfast, what would your tips be for me? I know I can do bacon or sausage but that's not really a full breakfast.

What you need is a source of protein and fat, you could add sausage or bacon but also put some avocado on top for the healthy fats
have you tried turkey or chicken sausages? they don’t taste quite the same due to their lower fat content, but they do tend to pack in a bit more protein! i’m also a fan of dairy sources for protein like cottage cheese or yogurt or something, but those tend to pair better with sweet breakfasts imo
@@efo19wire I like turkey sausages better than regular sausages actually. I don't think I've ever tried chicken.
If you are looking for an actual swap for scrambled eggs you could try tofu scramble. I don’t personally like it much on its own but they are great for breakfast burritos.

Protein recommendations for someone with nut allergies, can’t stomach tofu/soy in that large of an amount, and only likes deviled and soy-marinated (ramen) eggs? 😂 BTW, a one pan breakfast is amazing and I do love the video!!

We've known this for decades. Eggs are a protein- and nutrient-packed superfood, not unhealthy. It is a failure of doctors that the general public still doesn't know this after so many years.
What is the pink stuff? Like... the first thing you throw into the bowl?
I do almost the same thing but I throw in a can of drained black beans as well. So nice on a cold morning and easy to make. As for eggs, I have a mixed relationship. I love them for the easy protein which helps my ADHD brain work, but now that I'm headed into menopause my body doesn't work like it used to. So I've been saving whole eggs for things like this or on top of congee, but I stick to egg whites for scrambles (with veggies) and egg bites.

I didn't even think eggs were unhealthy 😮💨 I'm tired of people calling everything unhealthy. Granola has too much sugar. Soup has too much salt. People even say fruits are because there's too much sugar. I can't do this. Every thing is just going to kill me. Key word is too much. Idc if it's healthy anymore, I just want to eat to survive.
