      It does help to learn that way tho because it helps in all aspects of cooking .. my parents were always like "until it's done" or when you ask how much " enough" and now I work in a kitchen as a cook and it helps alot to know that stuff

      @@skeetsmcgrew3282 specifically in regards to thickening things the smooth consistent motion will usually yield a more even result because if it gets abnormally airated or agitated it may break up developing filaments of the thickener
      Likewise if you stir when you are meant to fold you may cause excess deflation leading to stodgy baked goods or sad meringues

    Can I request a sweet guava soup? My grandma made this one time like 20 years ago and has not made it ever since until she passed away. I don't know the exact recipe or the way it was cooked but had some ideas about the ingredients she used. I tried googling if there are similar recipes out there but most are for savory dishes and are way off what my grandma did.
    The soup was made of those small guavas with green to yellow green skin with pink flesh. They were cut in half then cut into thinner slices but not thin enough that the green skin break apart when cooked. I remember she used ginger, coconut milk and sugar and I think she added water too or used water to extract more of the coconut milk from the shredded flesh.
    The end product was a slightly thick (almost like corn starch was added though wasnt) soup of a pink hue (was a darker pink, like almost brown pink or something). The pink part of the fruit was completely integrated in the soup while the green skin are still intact.
    Besides the ginger, I don't think I've tasted anything other than the obvious when I had it. I only knew about the addition of ginger because I tasted it in the soup. It was served hot but I noticed that scent ginger has and its warming effect. Thinking back, I think it would've been better served cold cause back then I thought the feel of warm guava skin on my mouth was weird.
    I'm from the Philippines, btw. I googled this but all I can find are recipes that used guava as souring agent. I tried asking my friends but they haven't heard of this too.

      Okay, the Spanish version leche frita worked out A LOT better for me! I used loads of cinnamon in the milk mixture and it was EXACTLY as Emmy described, like a custard-y French toast and yes, I let the littles eat some WAY PAST BEDTIME 😬 I couldn’t contain my jazz hands and force them to bed, I figured the treats wouldn’t be great next day anyhow. Harry Potter and a fire for them to cover my banging and clanging!
      Father unit, the munchkins and I all agreed the cinnamon version was better, or it just worked better for me due to any number of biases and variables?
      Okay, on to the Chinese version, THAT is the one that got me drooling but I used peanut oil and I don’t have a deep fryer so I’m afraid my heat control was subpar as opposed to the pan fried version which was very easy to monitor, it also broke apart and absorbed too much oil, I fear I over coated the pieces and they became hard nuggets instead of the delicate pieces Emmy had. Since the panko scorched it added an odd bitterness to the coconut flavor which frankly didn’t bother me but “creeped out” my 16 year old daughter 😂 (she’s a foster adoptee who I’ve had for five years and came from a very BAD scene where she was extremely neglected...new things are challenging) she is keen on trying new things but often has an aversion reaction, my six year old is a bit less discerning, ie. she eats bugs with me so dad said her and my opinion are moot, MAN HATES coconut so I think he was a negative from the outset because yes, it was “coconutty” but not strongly so. I’m going to try a thermometer next time, it was late and I didn’t feel like digging!! It took a long time to cool off enough to handle and I also had to reheat (Chinese version) because texturally it was gelatinous, it reminded me of coconut almond jelly, slippery and slightly more mooshy. Kiddos wanted to play with it as if it were slime.
      I’ll say that I’m going to add the leche frita into the repertoire, it was very easy and thoroughly enjoyable, it’s not “healthy” (could be worse though!) but it’s so simple and the ingredients are few so it’s a nice way to whip up a sweet snack without planning ahead, I’d also make it if someone were to drop by for a visit and have tea, I usually make a fast milk cake in those situations but this would be a surprising accompaniment. I’m gonna tweak the Chinese version until I get it right, I could taste the potential and I know mine were probably overly coated because I could tell it absorbed A LOT of the cornstarch.
      All in all I loved it, it’s very very easy and to be honest something that could be eaten year round!

      you're also supposed to boil it. The starch needs the heat to coagulate. absolutely doesn't matter which direction you stir :D It's not gonna get lumpy if it gets too hot, as long as you don't heat it too rapidly and forget to stir it. She just didn't cook it hot enough, which was then remedied by the microwave

    The gulab jamun I've had is more cake/dough like in consistency, but I think that's because modern/American preparations of it use powdered milk. It comes out more like a really wet doughnut hole.

      Even in India it is more of a cake-like consistency. The recipe and preparation for Gulab Jamun is different from this and is not really comparable.

    A chinese restaurant near me had fried milk balls, but no longer had them after a management change. I had never heard of them again until seeing some videos start appearing. Those things were amazingly good!

    Hi Emmy! i just made the recipe and id like to share my findings i found that using coconut cream instead of coconut milk resulted in a much more rich, creamy Zha xian nai, i also found that using coconut cream meant that the Zha xian nai was able to hold its shape far better. :D Cheers from New Zealand

      You can definitely make the coconut one by replacing the dash of dairy milk by plant milk

      Just use coconut milk. I made custard a while ago, didn’t even have a recipe, but it was soooo smooth and lovely! 😋

    as a Spanish guy who just found out your channel i'm quite happy you made this, even tho i don't really like leche frita my mom and brother do. the skewer part i've never, ever, seen it anywhere here :P that's some fancy invention. and i know it's been 2 years however if you want to try it for the preparation there's 2 things you can do:
    first off we also use the peel of oranges, you put one small piece of lemon skin, we use like 3-4 pieces double of the size of the one you used of lemon and 4-5 pieces (as big as the lemon ones) of orange. optionally you can add vanilla extract too.
    and secondly if you want it to have even better mouth feel you can use one part of (whole) milk and one part of sweet whipping cream (without whipping it) this version i like it a bit more
    and yes, you have to cook it for longer :P

    I find it funny that in almost every other country you find “corn flour” or “corn starch” in large quantities, then in the US we either get a small can or smallish tub...corn starch is such a staple in international cooking.

    Ooh I love fried milk! I’ve only had the Chinese version though (also looking at the pinyin is always interesting as someone who speaks Cantonese and whose mandarin knowledge is uh, limited)

    Texas State Fair sells fried butter. I think it's butter wrapped in dough or something that allows it to be fried. It comes in flavors too.

    My dad is from India and whenever we visit, I always make sure we get Gulab Jamun! It is my absolute favorite sweet from there! Gulab Jamun is definitely more bread-like, and I would absolutely recommend you make it cause it’s so delicious!

    The first one you made with the coconut milk is like Haupia in Hawaii. I think it needed to simmer a while longer. If you don’t it does have the consistency of pudding.

    TFW you're American and have never heard of Fried Milk! I have heard of fried ice cream, though. It was my favorite childhood dessert at ChiChi's-- a now defunct Mexican-style restaurant, in the US at least.
