I remember one day coming home and declaring to my mother, I am now a vegetarian, she walk in with brown chicken and rice and said you don't want this then. I couldn't resist it, still a meat eater🤣 Thank you for this love from England❤️🇬🇧

I watched this video in hospital with covid. I couldn’t wait to get home to cook it….. I had a best friend growing up who’s mother would cook this for me. I must say everyone who ate this along with your macaroni pie said is was to die for and not one drop was left over. Covid took my taste and smell from me so as soon as I get my senses back!!!! I’ll be cooking this again and again. Thank you for posting!!!
I jus made this like five minutes ago and you helped me because I usually don’t get the right color or something goes wrong and I love this technique thank u so much
Saw many stew chicken recipes this is as original as it could get...best recipe...sometimes i add tomatoes and I've stop using soy sauce for health reasons and it's still delicious..
Nice thanks. I like to add tomatoes in my stew chicken, it thickens the sauce and gives it a different flavour. I love my stew chicken with a lot of different side dishes such as rice, provision, with pigeon peas etc.
Welcome back!! Made this yesterday with lots of hot pepper😁 I also like to add a little green or red sweet pepper. Great recipe👍. I live alone so with leftovers I make either soup or pelau the next day..
now discovered your channel.......i used to follow your website ... i was in uni and learnt to make cheese puffs from it...thank youuuuuuuuuuuuu ❤❤❤❤❤❤❤❤❤❤❤❤❤❤
Thank you much. My dear mum passed back in September 2019 and growing up she used to cook this every week, along with curry chicken or goat, macaroni pie, rice and peas, and the roti! When she became sick, I learnt a few of these recipes, but it was never with the same colour. Hence why I've checked out your video, looking for a specifically Trini recipe. Now I understand properly how she used the ketchup and soy sauce, and I remember the sugar also!...Ah the memories, thank you so so much. The only other thing I need reminding of is the macaroni pie and the roti, where she did this trick with the butter to keep it soft. Do you know what I mean? Thanks again, my wife will be very happy when I surprise her with this.
Sunday last I tried your sister in laws way in stewing , while the sugar is getting brown I added the ketchup . That was very tasty rich color thanks my son love it that will be my NEW way
Quick question Ria, what is the difference between adding the seasoning ingredients separately ( each ingredient minced separately) vs blended green seasoning. I notice in other videos you add blended green seasoning to curries but in this video for stew chicken its different. Great recipe by the way !!!!!! :)
Always based on what I have available at the time. If I have blended green seasoning I will use that. However, for stewed chicken I like chopped seasonings--just a personal preference.
Love your video's!!God bless .. Also the way you clean the chicken. Which I do for all the years. . And where Dr.Oz get his scenario about not washing chicken is totally disgusting if you ever saw that video
LMBO. Always keeping it 💯. Fact: Browning chicken to trigger the alarm is always a damn good reason for legit eye candy to come thru. Agreed Ria. We still need to discuss vacuum seal technology for these aromas...love, love, love this episode. Stewed chicken is my jam.
Remembering this good restaurant I used to go to. Potato Salad, Rice & Peas would also be a good. Don't know how to make rice & peas. But if I would guess on how to make good rice & peas. I would either try lard or flour.
I am diabetic, and I would love to make this delicious dish. I was wondering can I still have the same results if I omit the brown sugar and ketchup? Or can you suggest something else that give me the same color and unique flavor?
Iriz Perez You May Omit the ketchup and reduce the sugar by half. Won’t be as dark but you will still get that unique ‘stew flavor’! There is something called roucou which is used in place of the sugar but I am sure it will be difficult to find. Haven’t seen it in ages!
veshmah Lalwah I do have a variation with gizzard and liver (no crix) but I don’t think I have the time to get it done for Christmas! These videos take such a long time to complete and I have two more I’m working on! I’ll keep it in mind..! Thanks for requesting! 🙈😀🤔🤔
Delicious! But when I made mine, I felt like it was too sweet :/ I mean I loved it but my boyfriend isn’t a big of sweet stews..would you know how I can combat the overly sweet taste?
Thank you Mam, I tried your style/steps and, my chicken came out perfect, Im sure it tasted like yours lol☺️. Thank you for sharing your recipe. God bless you 🙏💕
I love how we wash the heck out our chicken! Wypipo don't be doing that, lol! This recipe isa vibe!!!! I will make it soon and let y'all know how it tastes. :)
Ria, your instructions are great. I usually use celery. Do you ever use celery? I cannot get shadow Beni where I live. I have referred your channel to a few friends who live in Trinidad for the Indian dishes
islandgirl3330 Appreciate the recommendation! In stewed chicken, I sometimes use just a little celery-unless I’m making a different type of stew with carrots etc. Scallion is a good substitute for shado Beni.
I really don't believe that was a typical sunday lunch ,,, for me it was dhal ,rice and stewed chicken … (now I gave up meat ) I would prefer red beans instead of chicken …..
Thank you Ria! This is how my Mom (God bless her soul) used to make it! FirstTrini you tuber who made like this!
I remember one day coming home and declaring to my mother, I am now a vegetarian, she walk in with brown chicken and rice and said you don't want this then. I couldn't resist it, still a meat eater🤣 Thank you for this love from England❤️🇬🇧

How much I love this dish 🇹🇹🇹🇹🇹🇹🇹🇹
Saw many stew chicken recipes this is as original as it could get...best recipe...sometimes i add tomatoes and I've stop using soy sauce for health reasons and it's still delicious..
Darren Mohammed Thanks Darren. I personally don’t add it as well. I really try to offer the most authentic Trini recipes with options!
You can use coconut aminos for a healthy alternative for soy sauce
worcestshire tastes good too
Nice thanks. I like to add tomatoes in my stew chicken, it thickens the sauce and gives it a different flavour. I love my stew chicken with a lot of different side dishes such as rice, provision, with pigeon peas etc.
Librarian Yummy! Tomatoes is a great addition too!
I must take a vacation to Trinidad'n'Tabago just to explore and eat your islands authentic Trini cooking.
You would love it
I'm thinking Caribbean ppl must be the only ones that eat and enjoy chicken neck and foot. Good job..
Luhyas in kenya too
And Asians
in Africa too. I believe 1/2 of the world's population eats like whole chicken. In Mozambique everything is earthen including the organs and the head.
Bangladeshis do too
I've been eating chicken feet at dim sum with my family for as long as I can remember. I didn't know Carribeans were also haters of waste!
Thank you. I’ve checked out many, many Brown Stew Chicken recipes, but this is one of my favorites!!!
Thanks so much!
Looks delicious.i love stew chicken. It's one of my favorite dish to eat. Great job as always.
Thanks for sharing this awesome recipe I'm definitely going to make this dish yummy yummy ❤❤
Hope you enjoy
I brown my sugar without the oil, looks delicious 🇻🇨
Well done! This was the Sunday meal when I was a child in Trinidad.
I am Haitian, we always clean our meat with lime, salt, and vinegar, and hot boil water. If it is season food, clean the same way but with cold water
Welcome back!! Made this yesterday with lots of hot pepper😁 I also like to add a little green or red sweet pepper. Great recipe👍. I live alone so with leftovers I make either soup or pelau the next day..

Dont ask why im here. My mother not home..
Thanks for posting your recipe. What to do if it turns out too sweet?
You are welcome! Means you did not cook/caramelize/brown the sugar long enough.
Great recipe Ria, thank you for sharing...
once the first liquid boils down, it is better to replace the liquid with coconut milk.
Thank you for sharing Ria!! It looks delicious.
Yolanda Byrd Thanks Yolanda ! You finally got the time to stop by ! Yay !😀👏🏽🌷
Thanks for this video! I've always tried to make it but I never got the colour I wanted.
we goofed, too sweet, have to try again
we had no smoke and the taste was not developed, funny what the fireman had to say :-)
Thank you for this!🙏🏽🙏🏽🙏🏽❤️❤️❤️
For washing chicken i use broad leaf thyme grated onto the chicken well rubbed in when there are no limes....
We trinis know how to improvise when we have little or nothing to work with when you are cooking from an early age....great day to you.....
I see a chicken foot in the pot. I haven't seen that in years. haha !!! Good recipe
Do u have to wait a couple days to cool it after seasoned ? Or can I season it and cook it immediately?
Meats are left to marinate in green seasoning at minimum 2 hrs at maximum 8 hrs in the fridge.
@@lizabetx483 thank you. I kept it marinated for bout 3 hrs
Hi Riaaa...the website doesn't give the soy sauce measurements...helps 😆...and when do we add in the potato if using?
Love your recipes btw
Add the potato after you add the chicken. 1 tbs of soy-sauce will work. Thanks.

You sound like alexa🤣👌 love your recipes❤
When you add water, is it plain water or would you recommend chicken stock?
Plain
Can I use crushed ginger and tomato paste if I don’t have fresh vegetable
Crushed ginger ok-just a little. Don’t use tomato paste-too acidic.. instead of fresh tomato you can use a little ketchup.
Okay omg it’s coming out so good thank you
Delicious! But when I made mine, I felt like it was too sweet :/ I mean I loved it but my boyfriend isn’t a big of sweet stews..would you know how I can combat the overly sweet taste?
You might not have cooked the sugar long enough
yummy !!!

Chickennin USA can be water chilled, absorbing excess liquid.
I have never heard of that being the case in trinidad
Oh gosh so delicious!
Thks
If I don't have soy sauce can I use browning??
Just eliminate.

Yet they are healthier
Can you put a tad of golden ray too?
I don’t use that in my cooking. It’s a trans fat that causes heart disease, raises bad cholesterol, lowers good cholesterol etc.
Hi I have not seen you made oldies call kitchri also murtani
What I want to know is how much water did you add to the stew. That looks like two cups or more🤔
About 2 cups- also depends on remaining cooking time and amount of sauce you would like.
Tasty

Um how'd to know when the chicken is done cooking
The meat pulls away from the bone,
softens and no longer looks raw.
Is it just me lost in thought about the looks of that sexy fireman or everyone just remembered the video was playing🤦🏾♀️🤷🏿♀️😄
Yummy👍👍👍👍👍👍👍👍
Wasn't the chicken supposed to be season before placing it into the pot?
Anthony Wright It is recommended but not absolutely necessary if you know how to cook!
That liquid from American chicken is from them pumping it with broth or sodium solutions to make the meat last longer :/. Makes you miss home, I bet.
Im hearing the man bull finch singing in the back
Ria do you have a curry fish video,?
Judy Peter coming soon!
CURRY FISH VIDEO IS NOW ON YOU TUBE AND THE BLOG! th-cam.com/video/urUDaZQwRxk/w-d-xo.html
I thought you were supposed to saughtey onions and garlic with the oil and sugar?
Not for stew
I messed up and added the meat before the safrito(ketchup) damn
Ketchup isn't in traditional recipe.
Not in ur hse
I really don't believe that was a typical sunday lunch ,,, for me it was dhal ,rice and stewed chicken … (now I gave up meat ) I would prefer red beans instead of chicken …..
