How To Make Trini Stewed Chicken | Foodie Nation

  • Chef Jason teaches Kezzianne how to make 'Trinbagonian' Stewed Chicken:
    *Yield: 10 - 12 Portions
    INGREDIENTS
    2 Whole Chickens
    2 ¼ Tsp Salt
    ¾ Tsp Black Pepper
    2 Tsp Garlic, minced
    2 Tbsp Onions, minced
    2 Tbsp Celery, chopped
    1 Tbsp Chadon Beni/Culantro, minced
    1 Tbsp Chives, chopped
    3 Pimento Peppers, minced
    2 Tbsp Fresh Green Seasoning (Optional)
    2 Tbsp Tomato Paste (Optional)
    2 Tbsp Vegetable Oil
    4 ½ Tbsp Brown Sugar
    ¼ Cup Tomatoes, chopped
    1 Cup Water
    1 Scotch Bonnet Pepper
    2 Tbsp Salted Butter
    Salt & Black Pepper, to taste
    METHOD
    1. Place washed chickens on a clean cutting board and pat dry.
    2. Cut each chicken into 12 - 14 pieces, ensuring to cut breast into halves, thighs into two pieces and back bone into two or three pieces.
    3. Place chicken into a bowl, sprinkle on the salt and black pepper and rub liberally over the surface areas of chicken pieces and on all sides.
    4. Add the garlic, onions, celery, chadon beni, chives, pimento peppers and continue massaging and integrating all herbs onto the pieces.
    5. Lastly add the bottled green seasoning and mix one last time. Let marinate up to overnight for maximum flavor or at least half hour if you’re in a hurry.
    6. Place a medium high sided cast iron pot on high heat. Once hot, add vegetable oil and swirl to cover base of the pot. Immediately sprinkle in the brown sugar.
    7. At this time, allow sugar to progress through the different caramelization stages.
    8. Sugar should start to turn a light brown colour after 2 minutes then progress to a bubbly blond brown colour at three minutes. Stir sugar with a pot soon to evenly mix and disperse heated oil and cook for an additional 20 seconds until the sugar develops a deep amber and intense brown colour with puffing bubbles.
    9. Immediately add your seasoned chicken pieces to the pot carefully and away from you to prevent any splashing and stir chicken pieces in the pot to evenly coat with the browned sugar.
    10. Once pieces are coated evenly, cover pot and let chicken cook for 8 - 10 minutes to allow it to spring its natural water.
    11. Remove cover; chicken should have developed a medium brown tinged colour and some water would have accrued at the bottom.
    12. Add the chopped tomatoes, the cup of water and stir to incorporate. Place hot pepper in, reduce heat to medium, cover and let chicken cook for 15 - 18 minutes.
    13. Remove cover, chicken would have developed an intensified brown colour at this point and some gravy would still be present in the pot. Add the salted butter, allow to cook for an additional 5 minutes uncovered to reduce/thicken gravy, then taste chicken and sauce for seasonings.
    14. You may want to add some additional salt, black pepper or your favorite spices at this point to tailor flavor to your desire.
    15. Remove from heat and cover pot for 5 minutes to allow chicken and juices to rest before eating.
    16. Serve with simply boiled rice, macaroni pie and callaloo or maybe with scalloped potatoes for a great meal.

    So sad to see such negativity, this show is about learning to make authentic dishes, for those of us who are not familiar with most of the process, it great that Chef has patience and Kezz is asking questions. Love you guys🙏🍽️❤️

    There are a lot of things we all put in our personal stew that we didn’t see here but I think the main idea was to give novices a basic idea and I think it was good for a basic. Made me feel to ask for piece. My additions are ginger, Maggie sometimes or all purpose seasonings, star anise sometimes, thyme sometimes, curry sometimes, casreep, ketchup or oyster sauce at times, basil or mint sometimes and even rosemary sometimes...........all depends on my mood. A good stew chicken is life. No butter and no oil though! Good job chef. My mouth was watering

      yep lol! I have done this a few times and got it just right, then other times i added the chicken too early and got sweet chicken. lol still tasted good but i did add a little dark oyster sauce to balance the flavor

    Chives and sieve/scallions are of the same family but one is more potent than the other; chive grow like weeds and more pungent & scallions have bigger bulbs and a less aggressive scent

    Actually this is almost the same way like the puerto Ricans make it. To be honest I LIKE THIS WAY BETTER. BROWN THEN COOK DOWN!! BTW I WOULD OF MIXED THAT CHICKEN ALITTLE MORE STRONGER . GIRRL THE CHICKEN IS DEAD BOO!!! LOL!!!

      Really ? " I WOULD OF..." ? " MORE STRONGER." ? It is 'would have', and just 'stronger'. Also, Jason questions how people could pronounce 'chive' the way they do [which is actually the West Indian style], but then he says "brongning" and "Carrib bean", which is incorrect. It is 'Carib bean', with the accent on 'Ca' not 'rib'. And well 'brown ing'. He should really not criticize the West Indian names for things if he is speaking, West Indian; DUMB.

      If you can’t use sugar squeeze lemon or lime in the oil instead of the sugar. It makes a brown base as well!

    Does the minced green seasoning come in a bottle in the grocery store/ or farmer's market?

      They sell in the West Indian store if you have one in your area or I usually make my own . I usually use like 10 bundles of Scallions , 2 heads of garlic , two hot peppers one if you don't want it so spicy, I use a combo of cilantro or shadobeni this what we trinis call it and some fresh ginger and some salt and grind up in your blender . Add this seasoning to your everyday prep of any type of meat and you will not be disappointed! Hope this helps !

      It's popular in many Caribbean countries. So great to see how each country has a slight difference. For example, in Jamaica, all spice and Bay leaves would almost always be added 😊. Love Caribbean cuisine. The best!!!

    Wellll welllll I have been doling stew chicken alllll wrong tried this way and it came out great tasting did not use oil just sugar in a very hot pot followed Jason's instruction to her about turning the sugar etc

    Why ual didn't let the oil hot first before you put in the sugar so it will brown fast that how I do it .
