Been doing this for about ten years now cut up 50 pounds of onions (sack used to cost $15) put them in electric dutch ovens for about 20 hours then process them in quart and pint jars. Man they smelled good a lot of initial work but pays off in the end

My husband and I only watch about five all together on a regular basis, but if I had to choose just one, I'd have to have my Brown family! They are both blessed with many gifts, the least of which is their cooking😉 and that's wonderful... but their kind, gentle spirits, love of God, family and country, and the way they convey love for their neighbor (that's all of us, BTW) puts me at ease that we aren't a dying breed. I love their storytelling skills, too...not everyone can tell a story and tell it well!

Hi Lori ... Rob here. I had bought a 10 lb. sack of Onions several months ago. Instead of canning them, I sliced each onion, sautéed in olive oil in a skillet, and put them in quart size freezer bags and put them in my freezer. I've only used one of them so far. Each freezer bag is one onion, some two onions. I like your way of cooking them overnight in the slow cooker with the butter, garlic, and worcestershire sauce...less oil that way. Next time, I'll do it that way instead of sautéing them in olive oil. Thanks for the 'tip'. Always appreciated. Blessings! .......Rob.......

I was given about 40 pounds of onions, and didn’t have room to put them so I checked out your video for caramelizing onions. I had never done this before but your video was so easy to follow and my onions came out perfect!! Thank you so much for telling it so newbies can understand it.. THANK YOU 🤗

I dried all the onions I grew this summer. I also cut up (like chives) all the onion tops too. And dried all those. Now I have half gallon jars full of different kinds of dried onions and tops. Put each kind in their own jar. That way when I'm cooking I can throw in what ever kind I want to use. And I dont have much freezer space left. So I dont have to use up the freezer for things I can dry. I have also been drying all my spinach I have been growing all summer. Love dried spinach, and other greens. They work so good in frittata and quiche etc. Dont add any water to your dishes. I had used up all the dried spinach I did last summer. So I'm so glad to have a bunch more half gallon jars full. And I'm still drying more. 🧅🥬

Do you have info online somewhere about how you dry things? I would love to know more about that. We have a huge freezer, but my husband keeps it stocked with venison and fish, so freezer space is prime real estate here. I would appreciate anything you can share. Melody B in NC

I wish I could grow chives here in Arizona I fail each and every attempt. Back in California I had such an amazing herb garden and chives grew abundantly. I successfully have grown many a wild tumble weeds

Rachelle Stauffer Maybe you could grow them in containers? That would allow you to move them into shade during the Arizona heat. And have more control over the soil, etc.

@@1Melody1963 I have 2 dehydrators. That I use. I dry my onions and tops at 125 degrees. Takes about 10 to 12 hrs.. my spinach i dry at 125 also. Takes a out 12 hrs. You want the spinach to be really dry like paper. I also dry my other things really dry so that i can crush them into what i want to put them in. Last summer i had to buy 2 new dryers as my big one I'd had for 40 years finally died. I miss it. But i do like the temperature and timer feature these have.

I'm so glad to see I can put my Vidalia onions away like this for the year next spring, not just freeze them like I've been doing for 40 years! I freeze the sliced onions on a cookie sheet lined with wax or parchment paper then do small sandwich bags full, then put my sandwich bags in a gallon freezer bag. Still not finding jars, but we're emptying these jars of pear butter pretty quick... should have plenty of empties by spring. 😋 This looks SO easy using the slow cooker...thank you for a Blue Ribbon winner of a video! 🎖️🏆

Ms Lori I have never canned onions before and I was quite surprised at how beautiful your onions turned out as you placed them on the meat. I was thinking that after 8 hours in the crockpot then 70 minutes in the canner, they would pretty much be mush but I was wrong. They look beautiful and delicious. Definitely will be canning up some carmelized onions❣️🥰

Thank you so much! I have never canned before and never knew the process! Many years ago I remember my mom canning peaches with our next door neighbor but I have been afraid I would make my family sick so I just froze Spaghetti Sauce and fruit.... I will see about getting the proper tools and maybe try to can.... my husband loves caramelized onions with his Salisbury Steak... we had a bumper crop of Roma tomatoes and after I made Spaghetti Sauce I made Fresh Salsa! If I knew how to can I bet I could have canned the Salsa cause I do not think it would freeze well! You are an inspiration for me to try something different after all these years!

My hubby and I love French Onion Soup so much so we bought a single burner JUST for the purpose of making that soup. I put it on the table on our back patio and just sauté away!!😂 I love cooking odors don't get me wrong but they have those onions have to caramelize for so long and slow that it just scents up the whole house. And it sticks to my drapes and couch pillows to. No more though. I love the outdoors so I just tell myself we're camping!!😂 Thanks for sharing your recipe and canning instructions!! I wanted to let you know that before I start preparing Onions to Caramelize and to Can. I freeze them for about an hour or so and then I clean and process all those Delicious Onions! I am doing more today also 1/2 pint jars since it is usually just me at home. This is plenty for my brother and myself!

I was having a time of it when I was doing up my onions the other day. I had a face mask and glasses on. That didn’t help a bit. So I asked my husband to set up a fan and that did it! Worked really well. Mine are still in my big roaster on very low. The are doing so well and smells amazing. Thank you so much. Love having another option for canning carmelized onions! I did some a couple of years ago that called for water bath canning, and oh my, they were so good! If someone doesn't have a pressure canner, Linda's Pantry has a water bath recipe. I'm guessing the balsamic vinegar in her recipe is what allows for it to be water bath canned.

  • @lindaromas
    @lindaromas 3 ปีที่แล้ว +26

Well, I just peeled and sliced about 30 lbs of onions and didn’t shed a tear I just learned this trick this year and like you had tried everything else!
I placed a small bowl of water on each side of my cutting board and another bowl across from me.
I heard an explanation about the gasses released from the onion when cut are absorbed by moisture (your eyes and nose). The gasses go to the water in the bowls first! I used clear plastic storage bowls and noticed when I was finished the water had a slight yellow tint to it!
I heat my jars in a 250 oven on a baking sheet and just add more when I take out what I need. I got tired of wasting water since I’m on a cistern and it works great!

I love your approach to canning! I favor an ingredients based approach too, instead of canning individual dishes, like stews and soups. So versatile! I have a 25lb bag of onions and am going to use a portion of them for this recipe. Thank you!!! 🥰

I look like a martian, but I have very sensitive eyes. I wrapped Saran wrap around my eyes and head. Held it on with a bandana. Had a small desk fan facing my cutting board. This actually worked. No tears at all. You might look funny but it will save your eyes.
Great recipe. Getting ready to can it now.
I did use a Vidalia Chop Wizard ..Onion Chopper. No mess. So mine were chopped, not sliced. Did 18 lbs in about 30 min.

Love these on hamburger steaks. Also goo with brown gravy over fried chicken livers. Momma used to saute thinly sliced onions in butter til softened and then add eggs in and scramble them with a little salt and pepper.... delicious 😋. Love and blessings ❣️
