Stability of folded protein depends on entropy of solvent for non polar residues. Water shielding around non polar amino acids decreases its entropy, so to make the reaction favourable, protein folds forming hydrophobic core that leads to INCREASE IN ENTROPY OF SOLVENT OR WATER.
