I never blanch my veggies. Beans, capsicum, celery, corn on the cob - I just put them in a single layer on a tray in the freezer and when they’re frozen solid I bag them up.
Thank you for testing this out so I didn't have to. Super helpful when you have a lot of Littles running around and don't have the time or energy! So thank you again!
Hi there! Thank you so much...that is such a wonderful compliment! Thank you for watching and for your kind words! Take care and have a great evening! 🌻
Enzyme Actions: Freezing just a couple days is most likely not long enough for your test as most of use keep beans frozen longer than that. It is my understanding that blanching stops enzyme actions which can cause loss of flavor, color and texture. I'm curious how the test would do after say 6 months.
Finished the last of last years fozen beans a few weeks ago. I didn't blanch and bagged them in portion size freezer bags after rinsing and drying. I always use a steamer to cook them about 5-7 minutes. Butter and seasoning after draining steamer of water no complaints. Freeze all my peppers pre-cut for cooking too, no blanching they work great in all dishes after months of being frozen.
Hi there...that is wonderful! I found the same....they still taste fine and texture pretty good too! Thank you for your message and also for watching! Have a great evening!

Great video! I'm growing green beans at the moment and have far more than I can use. Personally I prefer to blanch mine, and just boil them quickly before I eat them, but it's good to know I don't have to blanch them if I don't have time.
Love your video, this is great, now I know I did the right thing, did not blanch the beans, and don’t worry about the dirt in the nails, you were digging without the garden gloves, because I have the same problem, lol, thank you.
Thanks for sharing. It's my first time freezing beans and so far I'[m seeing people prefer that non-blanched method. I'm going to try just freezing and we'll see. My wife likes canned beans so we'll have to compare them after.
Thank you for a great, informative video. Appreciate you experimenting & reporting your results to us! I just harvested several pounds of beans today & was looking exactly for a video with information like this. Thanks again!
I didnt even research beforehand i just put my green beans and runner beans from washing straight in the freezer. Ive done same with my beetroot. Froze without blancing. I hope my beetroot cooks ok i havent tried any yet. I do wonder when blanching the veg may lose some of its nutrients. Im glad i came across your video.
I am also trying to determine the best way to store peas or beans. But not for cooking but just to preserve them for eating raw. They are always mushy after defrosting. In your case, the blanched beans will always turn mushy because you cut them and after blanching the water is trapped inside the beans. When freezing, the insides are now frozen water. Would like to try blanching UN-cut and see if better.
I just harvested more beans today and needed YT to decide how I wanted to do this. Thanks for the vid. I have decided to not blanch but wanted to make sure before I started. BTW, I always thought blanching was just dumping them into boiling water for only about a minute or so and to not "cook" them. So your 2nd trial with two minutes was probably the most accurate way. But why bother like you demonstrated? Save time!😊
Great video. I never blanch before... and I will keep freezing it as raw. I did with fennel bulb sliced, and the secret is not allow air in, because will burn (dark) the top slices.
I was looking for a recipe for blanched and found your video. I am not going to blanch beans and they go straight in the freezer. Thank you thank you 🥰
Hi Alana excellent video again thanks, the little experiment was very informative i didn't know how to blanch beans as we always just wash them in cold salted water then freeze them, but from now on we will cut some up for stews instead of leaving them all whole, it's a great feeling walking down the garden and walking back with a basket full of vegetables, Sue has just dug three carrots 🥕 for tea tomorrow they smell amazing, thanks again for sharing with us take care and stay safe 👍 😊 .

Good vid! We do everything different here. We blanch but pull beans out the second the water starts to roll. Put in ice water. Cook them for way longer. With a big ol chunk of sidemeat or fatback in em. And taters sometimes. Gonna have to try the unblanched way. I only ever ate crunchy beans at expensive restaurants. Usually whole.
Hi Billy...thank you very much my friend! I love fresh green beans...I eat them raw straight from the garden too...so good! Take care and have a great evening!
When using zip bags, you should submerge them most of the way in cold water, to push out all the excess air. You will get a much better result. Blanched or not…
Good morning! That is a fantastic tip...I never thought of that, thank you very much!! I'm trying that this year! Thank you for watching and I hope you have a wonderful day! 😊🌻
It sure would be great to omit blanching from the whole process of veggie preparation for freezing, but I’m wondering if a 5 day trial is actually long enough. Since blanching is supposed to greatly slow the process of decay or aging (as I understand it does), by inhibiting certain enzymes, it seems like a period of weeks-if not months-would be required to compare the two. Maybe not, but it seems like the breakdown in food quality would a slower process than a week (or less) would reveal. 🤔
Frozen veggies will never spoil once are kept in the frozen state. You can store meat for dozens of years like that, never mind vegetables. But when i say frozen, i mean temperatures below -5 Celsius.
Wow I watched your video before I realized we have the same unusual name. Thanks for the experiment. It just saved me a lot of time processing some of my beans. ETA: And we pronounce it the same way too, even more unusual. I always tell people: "It rhymes with banana." They never get it wrong again.
Great video! I've learned this about 9 years ago when we moved from the Netherlands to France. Was an eye opener for me, since than I put many thing directly in the freezer, onions, carrots, leeks etc.
Hi there! Such a time saver isn't it? I love to freeze onions as well...it is so handy to have them pre chopped so you can just toss them into a recipe! Thank you very much for watching and also for your message! Take care and have a great night! 🌻
@@kelcritcarroll the color will fade just a bit, but frozen vegetables are not intended for bright crisp salads after long freezing. That would be less than 2 months. Long term freezing is really ideal for cooking without breaking the bank in the off season, when vegetables are imported and far more expensive. Great video Alana! I reckon if the beans are going to be eaten in the next few months then no blanching is the answer and that will save so much time. Lovely to see you - have missed you these past months 🙂

I just did some this morning and I just set the timer for 2 minutes after I dumped them in and they didn't really come back to a boil but I suspect they will be just fine for soup and stew
@faithandfitnesswithanna Good morning! I'm sorry your beans turned out chewy when you didn't blanch them...I bet the variety of bean may make a difference? I think some of the Italian flat beans are tough when not blanched. I hope you have better luck with your next batch! Take care and thank you for watching! Have a great day 🌻
We grew beans for the first time last year and I froze them without blanching. Not sure what I did wrong, but the texture was terrible when I cooked them. They were super chewy , the color turned brownish and they were limp. That was after cooking for maybe 7 minutes.
Hi Robert! I just put our corn down in the freezer and I still blanched the cobs for 3 minutes before cutting kernels off of the cobs. I just find the kernels cut off the cobs easier when I blanch first. I don't think it's necessary to do it though. Take care and have a great day! 😊🌻

@@Lord72969 oh, you will have to let me know how it works out! There is nothing like the taste of garden fresh beans! I will live vicariously through you until ours are ready! 😊😊
Hello and thank you for watching! These beans that I used were a bush style bean but I have heard that the flat bean variety taste better when blanched. Apparently they are more woody when frozen without blanching. I hope that helps...take care and have a great evening!
I blanch because they hold up to freezing for longer periods. But to cook I just reheat them in the microwave or tip them into a stir fry since they are already cooked.
Hi there...thank you for watching and for the tips! I cooked some beans the other night that weren't blanched and so far they are still great but I bet they won't be as great further into the year as the blanched ones.
Just wondering, could the length of time frozen affect the outcome? 5 days is just much shorter than how long I know I would probably have those babies in my freezer lol
Good morning! I always keep my beans much longer than 5 days too and the beans pretty much have the same texture for quite a long time I found. Now, I do believe different beans have different textures and some do need blanching...these ones were a bush bean and string less. Also, in my test, I should have accounted for the blanching time on the one batch and boiled them for less time than the unblanched ones. I hope that helps...it's a tricky thing to try to get as much as you can stored for winter at the height of harvest time. I'm always looking for ways to save a wee bit of time during the season! Take care and have a great day!
Hi there! Thank you very much for watching and for your kind message! So far so good on the frozen bean front...still tasting good! Fingers crossed it lasts! lol!
Good morning and thank you for watching! Personally, I have never blanched peas and they turn out lovely...not soggy or mushy! Take care and have a great day!
In allllll of my research i learned this: blanching is needed for veggies you will freeze for long term freezer storage for (more than several months), to reduce how fast the skin and nutrients break down. If you are going to freeze things and use them quickly within maybe a month (educated guess), you do not need to blanch. All of the vegetable-garden-harvesting families on youtube will always say to blanch before freezing. But they are harvesting large amounts of vegetables to freeze. They will not be using it all quickly, but to store away long term and eat over about 9 months until next years harvest. They need to blanch before freezing to maintain its integrity while being in the freezer for so long. I appreciate the experiment but it would make more sense to test frozen veggies that have been sitting in the freezer for 6 months - 12 months
I love it when people question convention and put it to an experiment! And extra bonus when the path of least resistance is the winner!!
I was just about to prepare green beans for the freezer and after watching your video I opted not to blanch. Thank you for the time saver. First time reviewer. New subscriber.

You are very welcome and I hope you have an abundance of goodness stashed away for winter! Take care and have a lovely day!
Love this!!! Thanks for sharing, just threw my pot of water away!!
Thank you very much for watching and for your kind message! 🌻😊
I just did some this morning and I just set the timer for 2 minutes after I dumped them in and they didn't really come back to a boil but I suspect they will be just fine for soup and stew
I was interested in blanching because I Did not blanch mine and they were so hard and chewy . I will try blanching
Have a great day 🌻
Thank you! Glad I found your channel.
Thank You So Very Much! I Learned A Lot! Gonna Stop That Extra Process. Much Happiness I Wish For You!!!
Hi Tracy! Thank you for watching and for your kind message!
I love it when I can save time, especially this time of year!
Very helpful video. Thank you for sharing.
Thank you very much for watching and for your kindness! Take care and have a great night!
Hello what's good
We grew beans for the first time last year and I froze them without blanching. Not sure what I did wrong, but the texture was terrible when I cooked them. They were super chewy , the color turned brownish and they were limp. That was after cooking for maybe 7 minutes.
7 minutes...thats way more than blanching. Usually it takes me 1 minutem
Thank you for saving me the trouble. I’m not even going to wash them. It just rained.
The results may be different in longer term. After a couple of months in the freezer there may be a difference? Thanks for the experiment.
Hi Teresa! I agree...perhaps long term in the freezer might change my mind! lol! So far, so good but only time will tell! Have a lovely day!
Did long term end up changing your mind?@@alanacawker-therusticwife
Awesome thank you. I'll vacuum seal mine.
Good morning! Vacuum sealing is the best...they stay so much nicer in the freezer, don't they?
Thank you for watching and I hope you have a great day!
@@alanacawker-therusticwife thank you, yeah luv my vacuum sealers. Saved alot of food throughout the yrs. Havagoodone
I like how you say the word "out".
Thanks for the experiment
Would the same apply to doing corn off the Cobb ? Thanks for sharing the info , stay safe ! Have fun !
Hi Robert! I just put our corn down in the freezer and I still blanched the cobs for 3 minutes before cutting kernels off of the cobs. I just find the kernels cut off the cobs easier when I blanch first. I don't think it's necessary to do it though. Take care and have a great day! 😊🌻
Thank you for the effort put in. Helps me to decide.
Hi there! Thank you very much for watching and for your message! I heated up some beans that weren't blanched the other night and they were still lovely! Good colour, texture and they weren't mushy...so far anyway! 😀 Take care and have a lovely day!
@@alanacawker-therusticwife Hi, Do the unblanched beans keep longer in a vacuum bag.
@@Lord72969 hi there! I haven't used a vacuum sealer yet but I bet they do! My brother has one and he said they keep everything really well! The crazy thing is, I bought one at a thrift store and haven't used it yet!! 😄 Why am I like this??! Lol!
@@alanacawker-therusticwife Hi Alana, Thanks for your reply. I've just purchased a sous vide vacuum sealer and will try it out over the next week. My beans have been cropping now for the past fortnight here in Southern England.
@@Lord72969 oh, you will have to let me know how it works out!
There is nothing like the taste of garden fresh beans! I will live vicariously through you until ours are ready! 😊😊
Hi there . Does it work the same for pole beans ? I have the flat and regular pole beans .
Hello and thank you for watching! These beans that I used were a bush style bean but I have heard that the flat bean variety taste better when blanched. Apparently they are more woody when frozen without blanching. I hope that helps...take care and have a great evening!
Nice garden...and big.
Astounding! Thank you!
Hi there! Thank you very much for watching and for your kind message! Take care and have a great day!
Excellent video! Thanks
Thanks so much! Love this video.
Thanks for sharing 😊
This is such great news! I'm sorry you've worked harder for so long but now you won't have to do so much! And neither will I! 😂
Hi there! Thank you very much for watching and for your kind message! So far so good on the frozen bean front...still tasting good! Fingers crossed it lasts! lol!
Hi! Should we blanch green peas ?
