  • How to Freeze FRESH Squash and Zucchini - No Blanch Method
    Throughly wash vegetables, chop off ends of vegetables, slice into desired shapes. Prepare freezer containers / bags. Date and label containers / bags. Slice vegetables into desired shapes/sizes and place vegetable slices into bags. Seal to remove any excess air and lay flat in your freezer. This will allow the vegetables to be used easily in a family style preparation or in a stir-fry option.
    To store for saute or roasting: slice into the desired size/shape and place into a freezer safe storage container. Gently press out any excess air and lay flat in the freezer.
    For breaded squash/ zucchini- I do not blanch my squash and still get a delicious result when frying. If you freeze without breading and intend to fry your squash or zucchini, it will be too soft and watery to add breading after defrosting. Breading should be added prior to freezing for best results. Simply slice your squash / zucchini into your desired shape and size (I prefer about ¼ - ½ inch and round), dip into cornmeal of choice to coat vegetables, shake off excess, and place into freezer safe storage bags. Remove any excess air from the bags, and lay flat in the freezer.

    Hey Steph the veggie farm I used to work at as a kid/teenager always washed their veggies b4 they took them to market to sell. Plus u shouldn’t b using dawn dish soap to wash veggies. Use a vinegar/water solution.

    I noticed everyone saying vinegar and water to wash the veggies! The best way i have found is to pour 1 cup vinegar into 1 gallon water and then dry and slice! I use 1 part flour and 2 part cornmeal and season salt before freezing on the trays! And then putting in freezer bags!

    I use one part flour and one part cornmeal, with seasoned salt. I freeze mine on a cookie sheet before bagging so they don't stick together.

    I would flash freeze the coated squash on a tray, then bag them so they don't stick to one another. Also, fry them frozen to keep them from getting mushy and to have a nice crunch.
    You can also dehydrate your squash if your freezer is too full.

    You can fill the plastic cup first, then place your zip loc back over it and flip!!! So much faster.

      Put tomatoes whole in freezer bags…in the freezer they go. When you want to use them…run under warm water and the skins will fall off. They will be mushy…perfect for red sauces and casserole type dishes ❤

      I freeze cherry tomatoes whole. Just pop them right in the freezer in quart size bags. Ready to dump into the pan for a pasta dish. Couldn’t be easier!

    Hi Steph. Like the different variety. When I freeze for Frying, I coat in Flour and cornmeal and season then Vacuum seal as they last up to a year and when ready to use, I don't defrost I use in frozen state. Also I treat the others the same way I would a frozen veggie. Defrost makes them mushy for me. I do scrub my veggies but with 5% vinegar not 4% which is now being sold, so be careful and water. I have never had a problem. No soap especially Dawn on my veggies. Love the shredded way, I so need silicone holders. I don't flash freeze anything but I do set up on cookie sheets in a single layer on parchment then vacuum seal. Thanks for the tips.

    Hi Stephanie. I am new to your channel. I am from Texas. Have you ever tried frying bite size pieces of russet potato, okra, zuccini and squash together in a cornmeal batter. You can buy the okra from the grocery store already frozen amd breaded for a short cut. The vegetables compliment each other and are so good. Season to taste with salt and pepper in your batter before frying. My mother use to make this, it was one of my favorites. I like your channel and especially giving create to your sweet neighbor and God for His blessings. Happy 4th of July! 😊

    Vegetable skins are porous and can absorb that soap. The CDC recommends NOT using soap for that very reason.

      The CDC 😂 like we trust them for anything. So when things are sprayed with pesticides, and as we know, even the so-called organic labeled food is sprayed in this case only with so-called approved pesticides, that is all inside the vegetables since it’s porous? Hmmm 🤔

      CDC? Really? Then I would use the soap. They don't want you to wash the pesticides off. These beautiful vegetables might be organic and pesticide free. But if you buy in the grocery store like most of the public does, they have pesticides. If they say soap is absorbed, where do the pesticides go? I would rather have soap than pesticides.

    Since dawn is so poisonous as people are saying, what do people wash their dishes with or in? If you are buying vegetables from your grocery stores, don’t mind the chemicals, they are already added lol. I use dawn too Stephanie, if I buy from the stores, but most my veggies are homegrown.

    I usualy use them in tomato sauce. I grind them up in the food processor ,yellow and green, carrots garlic, and peppers from the garden throw in the tomatoes in the food processor. And make my sauce my family cant stand any other store bought sauce. All through the food
    processor. Oh and o also grind zucchini for zucchini bread and freeze that for winter.

    I love cooking zucchini and yellow squash in my vegetable soup in the fall and winter. They add beautiful color and flavor to the soup. I have never thought of buying them in the summer to freeze them for winter cooking. Will they be mushy after being frozen? Could I shred zucchini and freeze it for winter quick bread baking?

    You wash your dishes with dawn then eat off the plates don't you. The key is to rinse thoroughly.

      Yeah but the veg actually take in detergent the zucs and squash are soft skinned. And she did use a lot of detergent. Dr Oz had a recipe on his show once he added vinegar and a small amount of bicarb no dtergent

    What about putting up zucchini for zucchini bread? I usually shred mine when i use it for bread, but if I do that and throw some in the freezer, it pretty much comes out mushy. Is there any way to freeze it for the bread? Could I just cut the ends off, slice it down the middle freeze it and, after thawing grate/shred it for the bread? I really like all the fresh veggies God gives us.

    Those are some beautiful squash! I have two questions: Could you add carrots to the squash/zucchini mix and freeze? If yes, do you peel the carrots first? Second question: my m-i-l always added flour and cornmeal when frying. Have you ever heard of that? Thanks. I enjoyed this.

      You can add carrots and use the same process. However, you do not need to peel the carrots. By not peeling them they will preserve more of the nutrients. To your second question, it’s a personal preference. I’m familiar with both ways. I like a thinner coating as opposed to a flour & cornmeal which would make a thicker coating.     I am new to your channel. When you freeze your Zucchini, they won't be soft or mushy when thawed before cooking? Also, I make many loaves of Zucchini bread, so you are saying I can grind them down and freeze and that too won't be mushy to use? Thank you so much for this information. I grow my own Zucchini.

      I don’t thaw them before adding to a dish. Any liquid that is created is liquid that would have been created normally. As for the zucchini bread, you can grate the zucchini and place in freezer bags in the quantities you need for baking. Such as , if your recipe calls for 2-cups of grated zucchini, bag in 2-cup quantities. Label your bags and they will be good for 6-9 months. Then use as normal when ready to bake. Hope this helps.       First, let me say, welcome to my channel! 🤗 To answer your question, the general rule is 8-12 months. However, you should always date your frozen food. Rotate them according to date and try to consume the older first to ensure a good rotation. This way all of your vegetables and fruits will be used in an appropriate time range. Always check to see they are sealed and they should be fine. I have used vegetables beyond this time frame that have been fine too. Mostly, it depends on how well the items were preserved and that there is no freezer burn. I hope this helps and you enjoy filling your freezer.     So after you freeze the Squash with the meal on it when you thaw them out is it going to have moisture on it?

      I fry them from frozen and do not defrost them completely. Shake them loose and add directly to fry pan or air fryer. Always place them in oil away from you as with anything you are frying for safety. Super easy! Thanks for watching and your question. Have a blessed weekend! 😊

    Nobody's ever told me but I kind of figured out on my own.... I'm sure peeps will be telling me if I'm wrong...lol, but I think if it's a vegetable it needs to be blanched, fruits not. Technically tomatoes, okra, squash, are considered fruit.
    If it contains the seeds of the plant is a fruit. So peppers, eggplant, avocados, straight to the freezer.

    Ye next time clean with baking soda or vinegar! I used to do the Sam thing during Covid… but I use dawn on my rescue kittens and it kills a flea on contact. you think about this it is not safe to use

    I would encourage vinegar and water also. I am not a scientist but maybe check with your state university extension office food specialist to be sure. There may be changes to the safe preparation and preservation of your harvest. Remember to compost the ends you cut off. Your heart is in the right place.

      Yes, onions freeze very well. Chop them into the size you prefer and toss them in.
