    It's so refreshing to see a real cook at work, someone who actually scrape out the cooking pans, and use every last bit. Nothing more infuriating than to see waste of good food and ingredients...well done John, you are an inspiration and a credit to your profession .

      Totally agree with this comment. I was taught at school home economics to clean out the bowl with a rubber spatula so not to waste. On TV they are so wasteful

    As a boy from Hartlepool, now living in Pembrokeshire, this just makes my heart sing (and my mouth water). I've always eaten pease pudding alongside ham, or in a (stottie) sandwich together, rather than set together in a terrine, but that makes perfect sense to me. The only thing that stops me making pease pudding more often is that there's only so much I can eat myself, and I've never managed to freeze it successfully, but with these vids I'm inspired to try again, and to have a go at stotties as well! Thank you!

    Hi John, after watching this and salivating for the old pease pudding and ham in a bun or stottie cake,
    I would often alternate from a Ham & pease pudding to a Savoury Dip with Pease pudding and sage and onion stuffing from Ibbitsons when I was in town on a Saturday before the game... Delicious I'm living in Asia now but still hunger for the dips and pease pudding in a stottie.
    So I think this will be on my menu very soon Thanks for the great recipes.

    Born and brought up in Sunderland co Durham. This was a frequent meal for us and we all learnt how to make it. A favourite pub lunch for us was a stottie cake, pease pudding and ham sandwich, with 2 halfs of draught exhibition. Unbeatable.

    Hey John, I did the “Peas Puddin’” today, it was lovely, I’ve done it before hot with a ham joint but not cold with the ham addition. It’s real comfort food as the nights are drawing in and the summer has gone. I even made home made sausages, lighter than normal (more crumb) as my wife doesn’t like dense bangers. Again I’d never wazzed the Puddin’ up smooth and cut it out of the tin like you do. Fantastic, love your lessons and videos. 10/10, Howay the Lads, hoho! Cheers, Mike, a blown away Jock in Devon👍👍

    "Peas pudding hot, Peas pudding cold, Peas pudding In a dish 9 days old" was what we used to say when I was a kid !
    .. as I think the flavour would increase as it was left for a while to mature !
    Personally we never had It like this, the Peas pudding was always sepperate from the ham and served with fresh bread in a sandwich or with a salad.

    Hi John...Canada here and married to a Newfoundlander...I learned how to make pease pudding the newfie way. They use a tightly closed pudding bag with room for expansion and add it to "The Pot" (aka Jigs Dinner) which is usually a 1.5-2 g pot of water w/ a few pieces of salt beef to season and flavour the pot. The pot is left to boil for 3 hours and the pease pudding bag is added when the pot is still cold. At the 1.5hr mark, a half of a whole cabbage (full half uncut) and very large chunks of turnip are added to cook...then whole carrots/potatoes are added respective to cooking times so all veg are done at the 3hr mark...sometime a bread pudding is added to the pot...they will add diced onion and allspice to the pudding. After everything is cooked, they use the cooking liquid (they call it pot liquor) by adding it to the drippings from a roast and make gravy...very delicious!! As for the pease pudding, when cooked it is removed from the pudding bag and butter is mashed in with a fork. It is left to stand before serving so it will firm up a wee bit...it is served warm with the veg, roasted meat, stuffing etc and covered with gravy. I like to use the leftover pudding to make a quick pea soup w/ dumplings, using the leftover pot liquor too of course! =) Love your videos!!!! Thank you for sharing them!! You are a gem!!!!!

    Fantastic John, I love peas pudding and now i've found your recipe i'm going to try and make it at last. My Nanna used to buy it along with savaloys from Newboulds butchers in Middlesbrough when I was a kid and its one of those memories I've never forgotten. You are an inspirational cook John and beat all these so called celebrity chefs. Great honest food well cooked that tastes wonderful......

    Great video. I love peas pudding. I’m in Newfoundland. Here we place peas in a bag and boil it with salted meat and vegetables. I’ve always thought it deserved to take centre stage though! I’ll be trying this recipe soon.

    Peas Pudding is one of my favorite side dishes. My sister makes it when she cooks up a Newfoundland Jigs Dinner. She uses salt beef as the dinners protein. I'm going to surprise her by cooking your recipe & bringing it to our next dinner gathering.

    As I'm watching this I'm thinking what the heck is he doing?! I keep watching and I have now found a new way to make my peas pudding!!!! In Newfoundland we put the soaked peas in a pudding bag and cook it along with the meat and veggies then take it out and let it drain. We then add s & p and butter and serve it as a side to our cooked dinner.

    Ive never seen it done with the ham inside, amazing. My partners Nana serves this with half boiled potatoes , ham a bun and the pease pudding. Surprisingly its really nice :)

      I always wondered what this stuff was. I thought you actually must serve it as a pudding 😂 and from pictures of it I was a bit put off and didn't bother getting it. Now, I'm definitely going to try it (veggie friendly) and those stottie cakes look amazing too. X

    When we were kids my mum would sometimes serve pease pudding hot, with fresh tomatoes chopped and cooked into it....we would oftentimes have it for Sunday breakfast served with bacon, sausage, egg and hot buttered toast. It was delicious.

    I usually soak my ham in cold water overnight. Then boil in fresh water for 20 mins and change the water and continue the process i find this reduces the salty taste. Alternatively glaze the ham then roast till done

    Wish I could visit you each day. Your wife is a very, very lucky woman. I've always wondered what 'pease' pudding was b/c it's probably an English (UK) spelling w/ the 'e' at the end of peas. It just never sunk in & I didn't have reason to really look it up over the years. Thanks for the refreshing education. Much appreciated. The Stottie Cake seems to be more like a giant cracker that's been injected with the flat bread my families' elders & those of my generation makes. Flat bread has been passed down from generation to generation through my Native American ancestry. The Stottie seems to have the best of both worlds. I'm definitely planning to give it a try.

    I really like the background music. Well John, growing up my mom would make green split pea soup with ham. I liked the smell but the taste, no, didn't like it. Who knows, perhaps now that I'm grown I would like it more. Another yummy video. Thank you, I understand what it takes to make them. Shalom

    Wow, so that's what pease pudding is. I never knew John and I've certainly never had any to my knowledge even though I love peas, split or otherwise. This is one for trying especially with the ham which I love too, mind you I like anything from the pig even down to the squeak, I remember that from the piglets with the time I spent on my uncles farm as a kid. Thank you so much for showing me how to make it. I was going to ask if it could be eaten warm as a thick kind of soup but on watching the video for a second time you do mention that it can be warmed up in the microwave so I think the question is answered.       Cheers Keith. There's a well known poem in the north east of England as kids we used to all chant whenever my Nana made it , it goes. "Pease pudding hot, Pease pudding cold, Pease pudding in the pot 9 days old" Haha the kids today wouldn't know it of course. Working on a couple of variations of the pork pie Keith, just got a little more filming and the editing to do which will take a couple or three of days.

      Good luck with the PP, By the way Keith when you heat up the PP to a reheat safe temperature ( 80°C that's 175°F) it doesn't really return to liquid form, it stays quite firm, long as you don't boil it that is.

    Champion! I shall give this a try. its kind of a Geordie risotto :) The closest Ive come to it living in Asia for many years is a type of semi solid split pea dahl popular in Bangladesh (Halal so naturally no ham) it did remind me of my mum and grandmothers home cooking strangely enough. Excellent video and very clear instructions - all the very bast. cheers from Thailand!

      Yes of course you can Keef, chopped finely though Keef, my Nan used to put onions in hers, I got used to not putting it in, in my commercial kitchens because not all of our customers like it with onions in.

    Hi John love all your recipes! I've been a very keen cook for almost sixty years from my grandmothers knee and made pease pud many times. Problem is have the split pease become harder to soften nowadays. Never had this prob years ago but recent years having problems - or am I doing something wrong. Am never too old to learn so would welcome your comments thanks. Pauline.

    Hi John when we where kids in the north west of England must be 55 years ago our local chippy sold what she called pea cakes they where like today's savoury cakes but the main ingredients was peas and pieces of potatoes they where done in batter the people that lived round the chippy all remember them and buying them they where awesome they just looked like fish cakes and savoury cakes but where pea cakes a was just wondering if you had herd of them in the north east cause your recipe is so like it could your recipe be adapted to be done in batter cause that recipe is so like Mrs brooms who owned the chippy I am new to your channel and done a few of your recipes with great success especially the sausage stuffing loaf every one loved it sorry it's gone on a bit John would also like to wish you happy new year

      Pease pudding can last in the fridge for about 3 to 5 days if stored properly in an airtight container.

    Hello John. The last three packets of split less I've bought where as hard as bloody nails. I was making pea soup with bacon ribs. Boiled them for two hours. Still hard.

    Very much like what my family does. We use green or yellow dry peas, smoked ham shocks, chicken stock and more water, soup, not pudding.

I've never tried this , though I've heard about it from geordies I've worked with in the past.     It was easy to make and balanced. You could make patties instead of sausage links, for those who don't have a grinder with attachments.

    Hi John. I followed this recipe and it was delicious. The first time I’ve had ham n pease pudding stottie in 14 years since I left the uk. (Darlington)
    However because I made so much, I poured the pudding into 3 Tupperware boxes. How long can pease pudding stay refrigerated for in air tight containers? And would you recommend freezing it?

      Yeah according to the song you can keep it for 9 days haha, but seriously I keep mine in Tupperware for about a week in the fridge, never tried freezing it though.
