Everyone should have the joy of trying an authentic Newfie Jiggs dinner! It was my first taste of peas puddin cooked in the salt beef brine. Served with bread dressing, mashed potatoes, boiled veg and beef gravy. Soul food!

The way I heard it as a child (here in Minnesota) was "Pease porridge hot ....". Whether it's soup, hummus-like porridge, or firm pudding, I imagine it all tastes pretty much the same way. Thanks for the lesson on pudding, and the history. I honestly didn't know it was cold and firm. I'm back now, I had to run to the kitchen, dig a container of my home-made pea soup out of the freezer and nuke it in the microwave. I love the stuff.

Hi mate, a geordie here, I use a few ham hocks, for the stock bay leaf and pepper, I love to add a ham stock cube then pressure Cook it, takes a third of the time, then I add the meat in little pieces and spread it warm on a stottie, I cook my peas right down and it solidifies when it cools
I have to be honest, the first time a Geordie friend told me about this I was repulsed but it looks very nice! Almost like a savory porridge in terms of texture and appearance, reminds me of a dish the Romans used to eat called "puls" that was in a roughly similar vein. Thanks for making this video!

I acquired a taste for it the first time I et a Newfoundland Jiggs dinner. It’s not unlike a gam and pea soup only it’s more substantial and thick. Great texture. A bit of beef gravy on it and it is delicious.
I remember as a child here in the U.S. there was a rhyme we’d play a game to that used the words Pease pudding cold, Pease pudding hot, Pease pudding in the pot nine days old. Never knew it was about a recipe.😂
My mum was from Newcastle-upon-Tyne UK and I knew that rhyme we always had pease pudding on a Sunday if we had roast pork greetings from South Wales UK 😊
Really good! The Pease Pudding I've eaten (and made) has always used ham stock, though -- not pork. Also, we rolled it up in a muslin like a huge sausage and poached it in the stock, rather than putting it into plastic containers. Then you'd just cut slices as needed.
Can't have a traditional "jigg's dinner" here in Newfoundland without having pease pudding boiled in a bag. Cooked in the pot with the salf beef, after a couple of hours,add the cabbage, carrots, turnip and taties! Turn out of the pudding bag and mash with butter and pepper! Great the next day ,cold, sliced, on homemade bread as a sandwich!

Funny you recited that childhoods nursery rhyme because the entire time you were cooking it, i was also playing back that rhyme in my head. I've never had Pease Pudding, but i am Spanish American. But yet i still knew the nursery rhyme. I love pea soup. It is what i usually make after the Christmas ham. But i would like to try your recipe and have it cold. Makro Hangdong mate as you walk in the first lot of shelving on the end of the aisle but they aint always there took me a while to find them - and they are Aussie split peas but they are the real deal. Dont forget Chris this is traditional not with cured smoked ham which is delicioius. Best, Rik
@@BackyardChef lol, you must of had the last packet:-) I called in there, looked at the end of the isle where the Dhal is, non there, I found them eventually in Kad Farang Rimping after going to Airport Plaza Rimping and Bakersmart with no joy. Just found this video mate. You made it like my mother did. Spot on. I am a Northern boy too...Can you remember Ibbetsons Pork Dips? Always had Pease pudding and some crazy flavour going on in that bun....Tried for years to replicate it but never managed. I think the secret was the the stuffing they added. Have a go bro i am sure you will knock it out of the park.
Oh, my...turns out, I've been making pease pudding for decades without knowing it! 😄 Except, in my kitchen, it's called habitant-style pea soup (habitants were early french settlers in eastern canada)! Hot, it's thick and rich and buttery, and a perfect compote for dipping flatbreads and vegetables. Cold, it slices, scoops, and molds. 🥰😋
Pease pudding, or porridge, dates back to Tudor England. It was a dish whipped up by ship's cooks before battle. A hot meal before the fight. A cold meal after. And if the chase lasted several days, Jack had Pease pudding for nine days. While chasing enemy ships, cook fires were not permitted.
peas pudding is readily available from the deli counter of all the supermarkets here in the north east and also sold in the chilled section, not a rare as you think it is.
It was very common in the North East of England sadly not as common anymore - I love it - great with bacon and sausages and thick sliced toast with a good helping of butter on. Best, Rik
If you have too much stock for the peas then why not boil the stock down to reduce it to the 1.5 liters that you need, it will concentrate the stock flavour

I know it has a bad reputation (which is thoroughly undeserved) -but I always add some MSG which boosts the already lovely flavour even more

Mix a little flour with it and fry it as patties in bacon grease--again watch the salt!
