Old chef secret for quick scaling. Use a drill with a single hand mixer prong inserted. Scales fish perfectly in seconds without damaging the skin.

@@CookingWithClams you can also use a pressure washer. And blast the scales off with water. It helps remove the slime coat to

Will, when you make your recipes would you please tell us why you use such things as tomatios (flavor, texture?), Serrano peppers?, heat, flavor?
Yes absolutely, A Serrano is hotter and more consistent than a jalapeno, and has a bit more earthy taste. Tomatillo has an acidic burst like lime that won’t cook off like lime juice

I forgot to mention I LOVE that you used avocado as a kind of mayo substitute. My eyes roll everytime I see people use mayo, I just do t think that is proper cooking… not trying to get all pretentious I just don’t think mayo is a legit cooking ingredient
It has its place, and nothing beats homemade but yes it’s like a cheat code, so many other ways to add fat

Clams you rock with your recipes. I don't cook much but I do grill fish quite often. I've found that by using real wood charcoal instead of briquettes the smokey flavor from the wood adds a very nice taste to the fish. Give it a try some time.

Good one. I make salsa verde a lot. It was great to see a recipe from a marinade base. I like to steam my tomatillos I won’t boil them anymore I feel like it loses flavor. I will def be using my cilantro stalks now I never knew that was a thing!

@@CookingWithClams Boiling & charring are both good ways to soften them. Just depends on the flavor you're going for. Now, they are called toe-ma-tiyos. 😉

I've never heard of Mexican street corn, but I know I want it now. Can't get banana leaves, can you suggest an alternative?
To just steam a fish, parchment paper. But to get a similar effect and flavor I think either grape or fig leaves but you’d need a lot

Next time try Roasting the tomatoes, onions, peppers & garlic in the oven at 350 for 30 minutes. Provides lots more flavor than just boiling. Coat all with a little Olive oil.
I didn’t want to use oil, that’s what the avocado was for. And didn’t want to roast them because it was going onto the grill where it was going to pick up smoke flavor
