Hausa/zongo stew is one the favorites of many Ghanaians because it can be paired with most of the Ghanaian favorites meals eg waakye, tuozaafi , rice , boiled yam and many more so today I like to take to through how I make mine and I hope you will like it enough to try ❤️
Ingredients ;
1 and half kilos of chopped canned tomatoes
300g of Tomatoes paste
4 big onions
2 red onions
3 thumb size ginger
5 cloves of garlic
Chili peppers (to preference)
1.5 tbs each of aniseed, Rosemary
1.5 tbs all purpose seasoning
1kg of goat meat
500g mixed Intestines
150g of wele
300g of cow foot (kotodwe)
Sunflower oil
Salt
1tbs of curry
1 tsp of nutmeg
4-5 Bayleaves

A suggestion: the meat could be made more tender by first bringing it to the boil for five minutes, then leaving it to simmer for about three hours on a low heat. This makes it so tender that it comes apart in the mouth with hardly any chewing!

I understand what you mean, the oil can always be scooped out after the stew is ready it helps the stew process go faster

I know what you love oil helped to fry the stew faster but you can always scoop the excess oil when the stew is done😊 thank you soo much for watching ❤️
I know we love some good old traditional stuffs we grew up with but somethings are better left in the past which is serving food with leaves. We have plates of all types now. Using leaves doesn't make the food taste better. Our ancestors would have used plates if they had alternatives then
Ever heard of being eco-friendly recently and why a lot of people exercising ecosystem system so much lately? Our ancestors were practicing something very good . I do not see anything wrong with bringing what is good from the past to our recent days. ‘Sankofa’. It just being good memories there is absolutely nothing wrong with serving food in the leaves hun.
I disagree. It does taste better. The leave itself gives it a unique taste. The leave itself when used to make moimoi gives you a better taste compared to the one done without it.
