I haven't tried pumpkin butter, but intuitively I don't think it would work. Pumpkin seeds are super healthy because of their iron, zinc, magnesium, and protein content, among other nutrients. Since the oil is not removed and refined, I don't consider it an issue at all. Good questions 👌🏾

I don't have a suggestion at this time. Pumpkin seeds are unique, because they turn into this texture without any added ingredients needed to cause the "curdling".

I coat it with VERY thin layer of grape seed oil (other oils can be used) using a paper towel, then put it in the oven upside down. Set the oven to 400F and bake it for about 45 minutes. Turn the oven off and let it cool in the oven with the door closed. This is a rough explanation, there are lots of great methods and tutorials online.

Pumpkin seeds are very unique in the way they curdle on their own with no added lemon or anything else.
