Your demo is a work of art. So perfect. I am so inspired. I just started making phulkas recently. I was doing the initial heating of the rolled dough in low heat. I need to change that high heat for 7-8 secs as you advise. Keeping my finger's crossed. I want it as good as yours.Thank you.
Watched a lot of roti making videos. This is the best one so far. Also thanks for the tip of covering them with cotton cloth at the end.. I always had the problem of condensation in my roti box. This helps
Every time I used to make chapati on Thava it used to become hard..n yesterday aftr watching this..I made phulka..chapati became soft n I was so happy..Thankyou☺️

I was getting the atta right but rest wrong . below 3 very useful tips from u & m rocking it 1. edges should be thinner 2 flame should b between medium or high 3 finally when placing roti on flame, keep flame low initially & then increase it. Thanks for the fine points! I find using the tapering belan really difficult; it tends to make the middle thin and the Estes too thick even when I try to rock it and avoid that. The flat one seems to work much more evenly with less problems. Maybe I’m doing it wrong. I don’t have a gas burner so I just flip it back after cooking the second side, and they puff great, but better when I let my dough rest a bit longer.

A well presented roti tutorial. You don't mention what size portion of dough is being rolled out however and what diameter the dough circle is which will determine the desired thickness of the roti prior to cooking. Your rolling technique is a joy to behold. It must have taken quite a while to perfect it under your mother's direction.
Nice video , the traditional brass box caught my eye, please clear my doubt how long do u knead the dough first and after resting the dough for a while how long should u knead?Also the exact way to knead..cause some of us just use our palm some apply pressure using knuckles, now which method gives you best results.
