    Hi Aunty Flo! Made this some few days back with the beans flour. You know I would skip the boiled egg but added smoked fish instead but used raw egg in the mix and concentrated tomato puree for the classic moi moi colour.. And it came out nice.. Thanks so much for sharing! Love you loads

    My moi moi is cooking this second. I used all the listed ingredients minus eggs plus garlic and canned tuna. After 1 hour and 30 minutes, I will present my verdict. *fingers crossed*

      The verdict: I will give myself 4 out of 5 because it was almost salty...almost! Apart from that, it tasted great. I will be careful next time for sure. Thanks for the recipe!

      Andee GlamFairy no specific brand dear. Once it says beans flour on it, it should be ok. Some of them are specific and mention that the flour is made from black-eyed beans.

      I use warm water and only soak for 30mins to 45 mins

      Sia Suzanne no, it won’t work because the beans have already been cooked. What sets the moi-moi is the starch inside the beans. If the beans have already been cooked, the starch would already have set, so won’t hold the shape you want for your moimoi. Always start with raw, soaked beans, or bean-flour (also raw).

      vikingv2000 bell peppers have a higher water content than long red peppers- this will water down your moin moin mixture and make it harder for it to set. In addition to that- bell peppers have a completely different flavour- trust me- it won’t be very nice. (I’ve tried it before)
      The other thing about this is that the effect createed by the right type of pepper (or indeed the tomato puree) is a thickening effect on the moimoi mixture as it cooks- bell peppers can’t do this. It’s for this same reason that I’d use long red peppers for my stew rather than bell peppers. Flavour, colour and texture/thickness.
      I was always told, growing up, that you don’t use tomatoes in moin moin. But Flo has obviously tested and tried her method well enough for it to work. I reckon it’s worth a try. 😉

      Djoanng you sure can add anything you want. I would break the smoked turkey into small pieces before adding. People add sardines, smoked fish, etc

    Can this be made with any bean flour? I have a hard time finding black-eye pea flour, can it be made with black, brown, etc. bean flour? thank you

      aluxbalum I think you can but the taste will not be the same when you use other types of beans flour. Also you may need to reduce the quantity of water you add because some beans flour are not as "binding" as black eyed beans flour.

      Sabine Onwuka I used beans flour once, and found it to have a bitter after taste.
      I was put off using bean flour.
      Since Flo has given it a seal of approval, I may try again.

      Kzora100 it improved the texture of the Moi Moi. Flour is dry, simply mixing it with water does not get it as "wet" as when you leave it to soak. You will understand it better when you prepare Moi Moi with and without leaving the mix to soak. When you compare the 2 results and you will see the difference in texture.

      +Ofure Osagie blending helps incorporate everything. And if there are lumps blending will get rid of those. But no, you must not.

      Maybe those that cook the ones you eat add lots of crayfish. Crayfish is ground into powder before adding to the Moi Moi. Or sardines.       Did you cook it long enough? If yes the only other thing I can think of is that you added too much water when mixing it.

      In African food shops outside Nigeria.
      It is also sold in Nigeria but you have to really look hard for it in Nigeria.

    Hi Aunty Flo! Made this some few days back with the beans flour. You know I would skip the boiled egg but added smoked fish instead but used raw egg in the mix and concentrated tomato puree for the classic moi moi colour.. And it came out nice.. Thanks so much for sharing! Love you loads

      Sis, I know lots of people that can't stand hardboiled egg in Moi Moi LOL. I have heard about mixing raw egg (even milk) in Moi Moi. :) Will be trying the raw egg one soon. Love you too nwanne m Felicity Osuji :)
