I'm 75 year old grandma, mom, wife...I love to make pizza in my wfo in San Diego. I love and have been watching so many of your video's. Nothing teaches better than your letting me and others see how its done.
I have lot's of pizza equipment but I would love to know where you got your deep dish dark pans and wooden serving paddles.
I'm definitely going to making the Panuozzo..they look so yummy and fun to make. Much easier than making my sourdough breads.

I grew up in NYC with pretty much the same recipe that Vito made. Ricotta and Mozzarella mix
with choice of Italian meat. sauce . excellent!

how do you make your own yeast? I love the videos. so helpful in pizza making.
Just google "sourdough yeast"; it's essentially just taking flour and water and letting it ferment natually on your counter top. You need to discard 1/2 each day and add more flour and water (same weight). It's basic.

I'm sorry Vito, what type of woods? Orange and I can't hear the second type of wood. Do you use Orange because the smoke isn't as strong as other types of wood?
I use olive wood and orange wood
Orange is for the flame so to worm up the top of the oven and the olive wood is to maintain the temperature of the inside and the bottom

700 F it better be, because 700 Celsius would be over 1500 degrees F Either way those numbers don't sound right. 400 F would be more like it.
