  • "Lo schiaffo" (slapping) is an ancient pizza stretching technique and one of the most delicate steps in the making of Neapolitan round pizza. It is a gesture that cannot be learned in books (or in videos!). Only experience can make the difference.     Ho provato molte tecniche di stesura: con montagnetta di semola al centro; a punta di banco; ma questa è la migliore..me la insegnò un ragazzo molto più giovane di me che ho 45 anni..il tempo di 5 prove ed ora è questa la mia tecnica..

      @@_BigSoap_ they are different. French croissants have more butter and more layers, less sugar. Similar shape. The problem is, in France, most of them are now frozen and it's difficult to find artisan real ones. Same in Italy with Cornetti/brioches. Brioches is only a name as that is another story.

    Io abito da tanto in Inghilterra, e quì la situazione è ancora peggiore, in quanto non hanno la minima idea della vera pizza Napoletana. Io sono un pizzaiolo improvvisato, e m'ispiro molto ai tuoi video, ed in genere a tutti i video che aiutano nell'insegnare l'arte dell'essere pizzaiuolo, e dai quali ho imparato tantissimo.
