- Pizza Siciliana and Calzone in a Pizzeria in Catania, Italy. While the Pizza Siciliana is topped with tomato sauce, mozzarella, anchovies, olives, mushrooms and onion, the regular Calzone in filled with tomato sauce, mozzarella and cooked ham (prosciutto cotto) - While taste and texture of these 2 foods vary greatly, the quality is consistently outstanding: interestingly it's even still a higher dimension in comparison to a Grimaldi wood oven Napoli style pizza I had in Barcelona -

my first calzone was in Naples and I loved it, I was young U.S sailor and never seen one again. Fast forward a few years and pulled into Palermo. For sure the best Calzone ever! I have yet to find anything remotely close to the Sicilian and Neapolitan calzones. lots of claims that they were but it was just a claim.
As an airman had my first in Catania near Sigonella NAS. Was stationed in Comiso and theirs was equally good
When the travels restrictions are lifted, I'm gonna go to Sicily and try those street foods! Looks amazing~!
Make sure to visit a lot of towns! Don’t stay in Palermo or Catania. Rent a car and have a trip all over the island.
Just go, don't wait. The restrictions are all lies and also nobody sane in Sicily doesn't care about them.

I want to visit Italy again but I've only ever been to the north/Rome/Florence, and I have friends from the North.. where I am told they have to wear masks all the time, even outside in the open air.. is it different in Sicily? More normal? I'm from the UK which isn't exactly normal but also not too insane, we never had to show passes for restaurants or had to wear masks everywhere or anything like that..
I would love to go to Italy again but if the whole visit is going to be trying to follow along with insane corona restrictions, even now 2 years after the start of the pandemic, I will go somewhere where I can have a better time

The dough I make for pizza is very elastic, thus it's not easy to open to size. Does anybody know why this is happening?
If it is hard to stretch, then add more water; if it is so soft that breaks easyly when giving it shape, try adding a little less water or reducing the fermentation time. Or maybe you can simply use larger dough balls. A normal pizza is about 270g of dough.
Dough must be elastic...i think that you mean that is difficult to open because it comes back. In this case, you need to rest more your dough. use a 00 flour that can bear up to 48 hours.

Where I live (France) Calzones tend to be different : more tomato sauce inside, less cheese, and tomato sauce on top with an extra layer of cheese. It makes the Calzone really wet and personally I love it when a pizza is really wet.

The dough on the pizza should be a little thicker. The ends of the slices shouldn't droop so much and have all the toppings slide off when you pick up a slice.
