I also saw it stop right next to the virtual railfan athens, TN Railcam right when the front of the train showed up. It was the same train, I know this place, Same locomotives. Thats how I know. In the part 1 video of this, I did not hear any sound like any sort of loud air pressure release. Thats usually what you hear before an emergency stop, So it probably wasnt an emergency and they maybe applied the handbrakes. Not sure for what it was though, But I still know for sure it wasnt an emergency stop.
I was by the hospital when I heard the pop. It's clearly audible in the first part at around the 1:52 mark. It was a slow stop at first then it sped up like the air had bled down. As I was driving from the hospital to the Railroad Ave crossing, I could hear the air lines charging back up.
My grandfather was an engineer for the L&N and said they don't stop for animals. He said farmers would tie sick cows to the tracks to try to get money from the RR.

If there is a empty rail car in between loaded ones doesn't the empty derail on curves?
They're designed to hang in there. Also, they're less top-heavy so they tend not to tilt.
