The Best Sugar Cookies to Decorate with Royal Icing (No Spread!!)

  • If you´re curious to see how I make my cookies, and how they keep their shape, well look no further! I use a common recipe but have made a few simple tweaks to make these delicious, no spread cookies a sure hit!
    My favourite part is that it calls for brown sugar (I prefer using dark brown sugar), it gives it so much flavour and a beautiful golden colour. These cookies are great for decorating with royal icing as they can be handled and transported easily without worrying that you´ll break them but still maintain a softer bite! They aren´t too sweet, so once they are iced, they taste amazing. And if you're scared of too much puff, you can reduce the amount of baking powder from 1tsp as said in the video to 1/2 tsp.
    The changes I've made to the recipe:
    - add dark brown sugar instead of golden brown sugar
    - add 2 teaspoons of butter emulsion flavouring in addition to the vanilla
    - add 1/2 to 1 teaspoons of baking powder instead of 1/4

    I substitute 2 tablespoons of the flour with corn starch. I also add a tablespoon of crisco and mix it with the butter. The cookies melt in your mouth and yet strong enough to handle and decorate.

      Amazing!! I've heard corn starch helps to soften cookies but never tried it! I'll have to try it one day 🥰

      Hiii how do you substitute like do you just add 2 table spoons of cornstarch to your flour? Kinda confused

      @@normari_gutierrez3535 I put 2 tablespoons of flour in my measuring cup and then spoon flour on top of that to equal 1 cup.

    Amazing job at making the video...
    Recommendation: cut the baking powder to 3/4 instead of a full teaspoon, you will still get the rise. The longer the powder sits in the dough the more likely you will get bubbles in the last few cookies. Also, you can cut back on the flour, and make sure you refrigerate the dough for at least 1 hour (2 hours preferred) before rolling out. You want that butter to chill really well! This will make the cookies not spread without the extra flour. The amount of flour makes the difference between a cracker texture cookie and a good soft buttery cookie without loosing the shape.
    Love your personal tweaks... the brown sugar can make all the difference, and the butter flavor is great for cookies along with many other deserts and pie crusts ❤️! Again amazing job at making the video!

      Yes it will work! I've made it with golden sugar which is the lighter brown sugar we have here without any issues!

    i made the cookies using 3/4 tsp of baking powder and dark brown sugar, I cooked one batch for 7 min they were light in colour, the 2 + batched i cooked 2 min longer until they were darker in colour, i much preferred the taste of the darker cookie, what a difference. This is my new sugar cookie recipe, amazing taste texture and no spread!!

    I've used for 1 cup butter (225g) 3/4 cup brown sugar and 1/4 cup white sugar, 2 eggs, then only 2 and 1/2 cups flour and it was perfection! My favorite cookie ever! I flatten my dough while it's still room temp, and put it in the fridge/freezer flat for about 15 or 30 min... Then good to go! Brown sugar is a great idea! Thanks!

      @@normari_gutierrez3535 So I've tried and retried and I've found the perfect recipe... (for me!)
      I use the following:
      1 cup of butter (2 sticks)
      1 cup of sugar (you can divide the sugar the way you want, brown & dark brown taste caramelised, while white only adds sweetness which is also delicious if you like sweet things, you can add tastes to your icing later on. So you can do half and half or 2/3 and a 1/3 or divide between the 3 sugars)
      1 egg + salt (I add my salt to my egg or on my egg to avoid that raw egg taste)
      1 tsp vanilla
      1 tsp baking soda
      1 tsp baking powder (all 3 can be added to the egg & mixed to it before pouring)
      3 cups of flour (To me that's the prfect amount. The cookies cook perfectly, the dough is not greasy - I would go up to 3/4 cup but not more. I don't like cakey flourey stuff 😂)

      ​@@normari_gutierrez3535 Little Cookie had me try Meringue powder which is a substitute for egg whites... And it's amazing. Her recipe is on her channel, it's something like 2 cups of powdered sugar + 1 tbsp meringue powder + 1 tsp vanilla + food coloring of your choice 1 tsp + 1 to 3 tbsp water ...
      I prefer to cover my cookies with buttercream - which is the most delicious thing I've ever tasted 😂Butter 1 stick + 2 cups powdered sugar + 2 tbsp milk + vanille or other
      This one is not great for decorating, it's more of a frosting.

    INGREDIENTS:
    1 cup slightly softened unsalted butter (227 grams)
    1 cup packed light brown sugar (200 grams)
    1/2 cup granulated white sugar (100 grams)
    2 large eggs (100 grams)

    I made these cookies today. I was hesitant because of the unspecified amount of flour. Yes, you can add all the flour you want to get cookies that won't spread, but they will be dense and dry. I started with 3.5 c of flour like the original recipe calls for. The dough was the consistency I use for my large chocolate chip cookies and they spread some. So I added the cornstarch and a bit of flour for a little over 4 cups of flour/starch and gave it a go. I was presently surprised. I made rectangular cookies and hearts the straight sides. The rectangles were rolled too thickly (obvs my fault) but kept their shape quite well - a slight amount of bulge but no real spread. The hearts were closer to 1/4 in. but rerolled a few times so I thought they'd the terrible. They are crisp and clean. They might be more tough because of the rerolling - but the cornstarch should help that. Because of the extra sugar (compared to other recipes and that brown sugar is sweeter than white sugar), these are pretty sweet by themselves. They are very like a chocolate chip cookie base that needs dark chocolate to balance them out. Once I add the royal icing, I fear the real problem with these cookies will be that they're too sweet. But we'll see once they are decorated and consumed. I did chill the dough for a few hours before I rolled them out and then for the amount of time it took to roll out the second half (10 - 15 min). The bake time was longer because they were thick AND chilled. Closer to 15 minutes for my 2x3 in rectangle. Thanks for posting this :)

    i tried this recipe tonight so my kids and nieces can decorate them tomorrow (which is a tradition we do every year, while painting some sort of Christmas ornament we buy from the dollar tree that is just that fake wood). the Kids love the way this taste (not too sweet) without the royal icing.     We always have salted butter at home, so I omit the added salt.
    Try lemon extract instead of or in addition to vanilla.
    KitchenAid fans are a bit nuts about them. Our Mixmaster works fine.

      Add another half cup of flour, or you can cover your dough and let it sit a bit, it may get less soft as is sits. If your butter was too soft or its really warm and humid it may take more flour. Try that, cover the dough and then in 30 minutes try rolling and putting in the fridge before you bake and it should work!

    I cannot wait to try this recipe. I did use the link for the written recipe and neither the one the link brings me to or the "original recipe here" link has your tweaks of: 2 tsp butter emulsion and 1 full tsp of baking powder as indicated in this video tutorial. I'm sure both recipes are fabulous as they are but I wanted mention it. I'm going to give these cookies a try with your verbal tweaks in this video. So looking forward to making these. ❤

    We made them and they looked and smelled so so good. The taste was not good at all. I read through the comments and think we must have done something wrong?! We measured by weight not volume and did everything as perfectly as possible, but they taste like cardboard to me...my daughter says play-doh

      It could be maybe you got the sugar measurements wrong, but these cookies are meant to not be too sweet because royal icing is really sweet, so it balances out the icing. Thats why I lke to use real vanilla and butter flavour as its tastier to me. Everyone has their preferred taste though, but try searching up a recipe with powered sugar you may like it more!

    Ok, im gonna try these. My family loves my sugar cookies and i use confectioners sugar and almond oil and bs to achieve the browness/ crispness on bottom with a soft lofty cookie. Its a recipe out of Tasts of Home magazine, an old issue of early 90s. Its the only one ive used since the family raves over them. But i trust you that these are delicious. Since its the almond oil, i think ill make these and go half and half vanilla and almond. I too love them lofty and just a bit golden sides and bottom. Thankyou for sharing! They have got to be good with brown sugar in them! You are basically combining a snickerdoodle, with the eggs and combination of sugars, less the cream of tarter, and a traditional sugar cookie! What a pleasure watching you! I love the little science of food tips.

      I bake at 350°F and my cookies are usually bigger so I do around 10 minutes. But I usually set a timer for 7-8 minutes and then keep checking back to see when the edges start to get golden brown!

      If you don't have brown sugar, you can add molasses to white sugar! You can google homemade brown sugar 😊

    my mom complained about the original recipe I followed by emma's goodies so I've been trying to find a new one. I tested out 3 recipe already (all quartered because I don't need 100's of cookies yet.       If you man chilling the cutouts before baking, I would say try no longer than an hour as they dough can dry out if uncovered too long. But if you just want to keep the dough before rolling in the fridge, you can wrap it in saran wrap and keep in in the fridge for a couple days

      You can do either or. I always like to add a touch of vanilla and then other flavours as well. But you can do just almond as well just a personal preference!

    I've just discovered your Channel, as I'm embarking on decorating cookies for family and friends. If I want to plan ahead and make the cookies first, should I, 1) bake them, and then freeze them, 1) freeze the dough and then bake them, or 3) don't freeze the dough or the baked cookie. I've enjoyed watching your videos. Oh, and I received my Butter Emulsion today. Can't wait to use it in my sugar cookie recipe. :)

      Yay! You got the butter emulsion!! I got so many compliments on my cookies and icing when I started using it! Personally I prefer to freeze the cookies after I've baked them. I find it the easiest way and keeps them nice and fresh!!

      You got it! I don't like to refrigerate them before rolling because it becomes hard to roll. But after I cut the shapes, I'll refrigerate them. As long as the cutouts are cold to the touch, then you're OK to bake!

    This will be the third year I've made your cookies for Christmas. They are a HUGE hit with neighbors and friends. Because I give them out as gifts, I end up making 200-300 cookies each season. I want to make the dough ahead of time, roll it out and freeze it flat. My questions: Is that the best way to do that? Would you suggest cutting the cookies and freezing the dough like that or would you bake the cookies and freeze them once baked? I use your royal icing receipt as well, can I freeze the decorated cookies to keep them fresh? Thanks for your help, and THANK YOU for your wonderful videos. I had failed at Royal Icing so many times before I found your video's.

      You are amazing!! That's a lot of cookies!! I'm sure people just love it though and what an amazing thing to do 🥰🥰 I would bake the cookies then freeze them, I feel like then half the work is done!! You can freeze dough and roll it between saran wrap but I feel like you might as well bake them if you're doing most of the work already. As for after icing them, you can definitely freeze then as well! In a container or in ziploc freezer bags. The only thing to remember is to make sure they come to room temperature before you open the container or the ziploc bags or they can get condensation on them! So a couple ways you can freeze them and hopefully will make it easier for you 🥰🥰

      I would say 2-3 dozen. If you're cookies are average size then much closer to 3 dozen but if they're on the larger size, like 4 inches and are a rounder cookie then maybe closer to 2 dozen. Also depending how thick you rol them, the thinner they are the more cookies you'll get!

      Yes! The original recipe doesn't call for refrigeration but I find chilling it a bit so the dough is cold helps keep the shape super sharp, and it doesn't take long.

    making cookies for someone who can’t have butter.. have you ever tried this with vegan butter? i’m going to use earth balance sticks. just curious if you’ve tried and have any input. regardless i will come back and update you on how it turns out!
    update: i subbed the butter for earth balance unsalted buttery sticks (same quantity that the recipe called for) and it turned out AMAZING! they’re perfect! baked nice, taste delicious, and held their shape with nice clean vertical edges. thank you for this recipe it’s sooo tasty!
