Hi Rosanne, great questions :) No, I haven't stored it at room temperature before. I haven't tried grinding the chia seeds myself but I've read that you can. That is a great idea if you don't like the 'seed' like texture.

Have you made larger batches successfully that can be kept out of the refrigerator? Also, have you tried grinding the chia seed first?.
