The music differences are super easy to explain: The Early Versions is using synthesized/fake instruments. The final versions are all recorded with an actual orchestra and real instruments.
Also, no mixing.
I was about to comment with something similar too, its usually so they don't "leak" a full quality soundtrack before its either 100% finalized or guaranteed to actually be in game. Usually they add the "lower quality/experimental versions" of songs to get the feeling to the end user of how the soundtrack could be; to keep a little element of surprise in it when you eventually here the true majesty of the full quality one in game.

Hey fun fact. The reason that the old tracks sound way less full than the final ones is because the old ones are made completely in software while the final ones were actually recorded live
All of these changes are a testament to the quality for which Nintendo strives. They could've released the game with the original music, original graphics, etc. and it would've been great. But they put that Nintendo polish on it to make it a masterwork.

Something I've heard many times from game developers is that polish is the difference between alright and good, good and great, and great and fantastic.

4:28 I believe Luncheon Kingdom was inspired by Pompeii in Italy because there is the old town ( the place that you land on in the odyssey), which is abandoned so it must be referencing Pompeii. Also, there is a volcano behind the town, which is just like Mount Vesuvius!
MkStarfighter It's more evident in the Spanish version. The volcano is named "Monte Delisubio" (Mount Deli-suvius)

I am tired of that one voice clip of Peach shouting “MMAR-RIOOH!!!!” I’ve heard it since Mario Galaxy 1, it was in Galaxy 2, i heard it more than enough times in 3D Land, and now in this Odyssey trailer. It was very well put together voice clip and fit the mood in Galaxy, but Nintendo just used it too much! SHUT UP!!!! (I accidentally spelled out sh*t trying to spell shut)

The way they use synth versions of the songs as a template before getting instruments in a studio is awesome
When saw the first trailer for the game, I was super bummed because I assumed that it would only use synthesized music. It was a big relief when they released Jump up Super Star.

The switch is like a fusion of the Wii, Wii U and DS. Wii and Wii u because motion controls, and DS because it's portable and can be taken anywhere.
Don’t forget, It’s also fused with GameCube and Super Nintendo too. GameCube because the buttons, the controller, and the startup has GameCube similarities, and Super Nintendo because the side ways controllers looks exactly like the snes controller since it has shoulder buttons and 4 buttons
It is soooooooo fun to watch these videos and see how the games change over development.

This is the first time I've seen a beta64 video in such a long time! Good to see this channel still has quality!
All the differences between the final and early music tracks are mostly due to how game soundtracks are produced, it's an earlier MIDI version (using pretty decent sound samples of course) used as a placeholder before they actually recorded the tracks with live musicians (or had it partially recorded, and definitely not fully mixed). That's why it sounds "more muted," as you say. It can imitate, but not quite replace real recordings. It could get much closer to the desired sound with a lot more tweaking, but I'm sure they felt no real need to expend time and effort on simple temporary tracks. I mean, there's obviously going to be changes made, but a lot of it is just due to the timeline of events shortly before and leading up to release. That said, your videos are great, I've been a fan for a long time and to have this SMO video out so quickly after release is pretty impressive. Good job.

Did you know in beta odyssey wasnt cappy? Why? Here are reasons:
1. In first trailer mario had diferent logo which means ther wasnt cappy
2.mario had similar hat movement like in final game but i dont think it could capture something (hat had hat throw, hat jump and more)
3. There wasnt nuts.Because it wouldnt make sense if mario could break break nuts with his soft hat.
4.it had different intro cutscene because there was no one who could grab mario's hat and fix it.I think the intro looked like this: bowser's hat threw mario away and the hat what got stomped wasnt destroyed by the rotating things on airship(i am cz man so dont mind me) and cacade looks like was first level of early odyssey.
Some moons was replaced like in wooded kingdom.
5. Odyssey got also changed: the white cap on door is different in final game.

And i also think the Steam gardens was renamed

Look, don't judge me but...when you jump on the globe on the Odyssey a song will play. 2 songs, "Jump up Superstar!" or the final song in the game when you beat, "The Darker Side of The Moon" and climb up the tower. Well, I almost cry when I hear them. It plays it as if it were a music box. And that last song almost made me cry normally. It's sad but it's tears of joy! But, kind of leaving out the whole joy factor...

I remember seeing the rocket in the New Donk City rooftop park in E3 footage. When I reached that in the game, I couldn't find the rocket and felt confused. I'm glad they moved the rocket to where they did. It feels much better there. Just goes to show the massive amounts of attention to detail they put into this game.

Thank you for truncating some of the differences this time. The Yooka-Laylee one was a bit overboard. When changes are abundant and so many of them are minor, it's best to summarize. This was a good video.
When it comes to early game music, I've noticed they use sequenced music. Later on in production, they go and hire live performers to play the music. A good example of this was Dragon Quest VIII on the PS2, where an earlier version used sequenced music at first, but later versions used a full orchestra, though the former was used in the 3DS port.

I think I have an answer to why the music sounds different from the early and final versions. The early ones are most likely arranged on a MIDI file and are simulated instruments, used for brainstorming and changing the piece before the music is printed and sent to the orchestra and performed live for recording (the final version). Hence why they sound very contrasted from each other.

This game was actually supposed to be able to launch alongside the Switch if deemed necessary. Which is why the game looks more polished instead of radically different

The main reason why the early music track sounds "empty" is because its recorded via midi (electric sounds). We composers use it as a placeholder to test and to show the main idea of the themes so then it gets recorded by a better library of electronic sounds or a profesional Orquestra/band. Cheers!

For the record, on the music the final versions are performed by actual bands and a full orchestra. The "muted" versions are most likely just the composer working with a synthesizer setup. This was most likely used as a guide for the performances for the final music, and used as a filler until it was actually recorded. I don't think they ever expected to use the synthesized version as the final music.
For the music I think it's quite common do create Midi versions of tracks to test them before doing a proper recording with real instruments for the final version

Oh god, I remember that the Wooded Kingdom theme sounded like the faded music that plays on the radios in the game. When I was watching the Treehouse play it, I thought it was loud music playing from the Splatoon 2 Tournament because they got through saying that the tournament started. xD

I don't know about you guys, but I think this game went through a TON of changes. So much so you mention a TON a TON of times. I think you need to get that verbal tick sorted out mate. But still, good vid, just need a TON of script changing to not come off repetitive
