A good way I’ve found to fix texture issues of ground beef is to can them as meatballs then smash them into ground meat when you open the jar. Make small meatballs and bake for 10 minutes so they hold their shape during canning. Works great!
I have found browning the ground beef, in a skillet, on the stove, gives a better consistency after canning. When I cooked it in the roaster and even when I raw packed, I ended up with that "dog food" consistency, which we don't like either. We really enjoy your videos and now is the time to get our pantries stocked. God bless.

Woo hooo! I remember mine (lockdown skill). I kept peeking into the kitchen fearing there would be an explosion. When it was all done, I kept going into the kitchen and looking at all my jars cooling and felt so much joy! A friend from Ghana was staying with me and every time he went into the kitchen I would say "Look at my beautiful jars!!" He thought it was hilarious.
Tip 1 - Put a little broth in the bottom of the jar before you fill it with the meat. Tip 2 - Since people often don't like the texture of canned hamburger, can just 1 or 2 jars the first time (along with a canner full of something you know you'll like). If you really don't liked it, you haven't wasted a canner full.

Ground beef texture: I've found that while browning don't break up the meat as much as I normally do. Golf ball size is too big, grape size and a little larger is just right. It seems that it breaks up a bit during processing so starting with bigger chunks helps. I cook in my 15" stainless skillet in batches of 3lb, I think that helps with texture too
I pressure can my ground beef in beef broth and much prefer it than the other methods! I just use some high heat to get some crisp onto the beef when I'm using a jar of it for dinner and it turns out great! Made tacos really quick the other night on my lunch break from work and no one would've known it was "canned". Lol!
This is the best time of year to buy corned beef. I bought two roasts from Aldi for about $20 and will just chunk them up to pressure can in pints. I will get eight or 9 pints from these two roasts and will get those extra meals put up for me in hubs.
Me too! I have had an All-American canner (brand new) in my garage for at least two years now that I am terrified to use until I got some instruction. I think I can do this now LOL
I’m starting my first garden this spring at 20 years old and I couldn’t be more excited! That being said though, with my age, I am a bit embarrassed about my inexperience, but finding this channel has invigorated my excitement about growing and preserving my own food even more! I love to see new and experienced canners or gardeners or homesteaders alike share their knowledge! Also, if anyone has any tidbits of general advice I’d love to hear!
@elcy Congratulations on your first garden!! Inexperience is nothing to be embarrassed about! Like the old saying goes ‘You gotta learn to walk before you run.’ My husband & I are both 43 and we started gardening & homesteading when we bought our land at age 22. We’re still learning new tips & tricks. Some have helped & some not so much. I highly recommend getting in contact with your local extension office. They will be a HUGE help with what & when to plant. The one here in NW Arkansas has so many classes that I have attend over the years. For example: canning classes, gardening classes, bee keeping, & much more! When you start to put up your own food, I highly recommend going to the National Center for Home Food Preservation website. Read up on how to do it safely. The video above is a fantastic video with CORRECT preservation information. I have come across a few TH-cam canning videos that do NOT have correct preservation information. I hope you yield a heavy crop harvest!
My mom and her sisters canned in the 60’s and 70’s. I just started three years ago and this year will teach my daughter. Never too early or too late. Enjoy!!!
Here are some things I wish I'd known and others I just feel you might not have heard: 1) Only plant what you like at first. And don't go overboard the first year. You don't want to get to dreading what you're doing. 2) You don't plant "fall" or "winter" produce in the fall. It gets planted in the spring and grows until the fall! I'm talking about things like winter squash, pumpkins, brussels sprouts, cabbages and other brassicas. 3) Soil really matters. The easiest way to garden is to buy GrowBoxes, Smart Pots, build raised beds or buy huge crates or wooden boxes. They last for years and almost eliminate digging, weeding, and a lot of bending over. If they're deep, put leaves, branches, sticks in the bottom. Then add high quality potting mix to the top. You can buy it locally in bulk or in bags. Too late this year, but keep in mind that many big box stores discount everything in their garden section, typically in late September or October to make room for holiday items. 4) The most common errors are over-watering and under-watering. You can buy an inexpensive 3-way tool to measure the soil's moisture and pH -- they're typically $10-$12. 5) Practice growing indoors this winter to get experience. I would recommend sprouting seeds in quart canning jars, growing herbs like basil, and growing microgreens. I really need to write up my favorite way to do sprouts and greens. We have never canned hamburger. We just freeze it. Now roast canned is wonderful beyond words. I have wonderful memories of coming home in the winter and mom opening up a jar of beef or chicken to make homemade beef and noodles or chicken and noodles. If beef prices would come down I would definitely spend the time canning some. I tend to stock up on meat when it is on sale. I had gone a little overboard right before Covid. My siblings griped at me but, when Covid hit they changed their tune.
New to canning but I learned recently that cooking ground beef to start with a small amount of water separates the bits of meat. The water quickly cooks out & the texture is better at dinner that night. It was a chef’s trick. I plan to use that when I can ground meat. Good video. Thanks
These canning 101 videos are so helpful! I grew up with a mom and extended family who all canned, so it’s not new to me, but we live in the Caribbean now and have year round access to all our fresh veggies. That said, the prices on canned goods from the store can be really expensive, so having convenience foods at home is a struggle. I’ve canned jams and pickles in the past and we’ve enjoyed those, but I’d like to try doing things like beans and chicken. We can buy cases of frozen thighs and legs for about $1.00/lb, so we freeze it, but I’d love the convenience of having it off the bone and ready to go. This has all been really helpful and I getting m excited to try some new things :)
Hi Rachel, I have 2 electric roasters and I couldn’t get through canning season without them! I have spent this week canning out of my freezer! Today I canned a whole turkey that was buried in the bottom of the freezer!! Happy canning! Also great series of canning 101 for anyone new to canning!

UPDATE: I’m in north, central Texas town with population 5,000. In the ground coffee section at Walmart yesterday, they only had Folgers and Great Value brands. The produce section overall looked really good with nice looking lettuce that was a little small but plentiful and at a decent price. I’ve attempted to grow lettuce here myself, but temperatures of 110+ makes it difficult. For a while now, I’ve been keeping an eye out for off-brand canned peaches, and they finally had them, but only two cases were on the shelf. We greatly appreciate all of your hard work and determination in keeping us informed!
I’m not able to watch the whole thing right now but I wanted to let you know, I’m coming back tomorrow prepared and ready to learn how to use my pressure canner. I’ve been buying extra meat for several months now and I felt secure. The more I think about it, it all needs to be canned. Oh wow! I just found your channel. This video took away my fear. In the 60-70's my mom would make us leave the kitchen whenever she used the pressure cooker to cook vegetables. She didn't can. She was a nervous wreck. I really don't know why she did it since I just steam veggies. Thank you for sharing.

I’ve went spent a ton of money on fresh veggies & all the canning equipment & tools several years ago ( I think just before you tube came out or was popular). I also spent days peeling, shelling, shucking, etc. Then I went to canning everything. Needless to say, I end up with a disaster along with wasted time , food and money! I was sick to my stomach!! And so I’ve aloud fear to prevent me from ever trying it again!!! But the times we are living in these days, I’ve been really wanting to give it another try. I love your videos but FYI folks, for the BEST control, cut in the direction you can control, you have the best control over any object when paying attention and using a proper tool or sharp knife, such as using food scissors when opening tubes. I love doing my ground beef this way, I use onion soup mix as my liquid. I just make it according to the package, bring it up to temp and fill my jars. It gives it great flavor!

Wow. It takes that long to get a canner? Keep your eyes open. They often sell at second hand stores, on eBay, on Facebook Marketplace, Craigslist, yard sales, etc. Most of the parts that can go bad are (usually) available. You never know with the supply chain issues going on now. Maybe someone you know has a canner and you could do some canning together?

I talked myself out of doing this because I heard someone say in a video to be very careful because you could poison yourself & family. So I just didn’t want to do it at all. Thank you so much for the canning 101 videos. I’m loving them. I have an all American from either my mom or grandmother and I’ve been told I should replace the dials and a few other parts. Honestly don’t know how old it is but I know we were canning in the late 60s to mid 70s. These videos are giving me confidence to reach out and get the parts and start pressure canning. I have water bath canned so feel good with that.
I understand if you are using a pressure canner with a dial gauge, it is very important to have them tested at least once a year. I have found it to be easier to use a weighted pressure regulator. 1-they don’t have to be tested every year to ensure accuracy. My county extension office is an hour away, not convenient. 2-I don’t have to “babysit the dial”. I can hear the weight rocking and most importantly, I can leave the kitchen and go about my day while keeping an ear out for changes in pressure by the frequency of the rocking. 3-they are inexpensive on amazon.
You should get the dial checked at an extension office or replace it (still getting it checked is a good idea in case the new one isn't accurate). Also, if yours is like the one I inherited from my granny, it probably has a petcock valve instead of a weight- it's an easy swap out to replace this with the weight valve (you just need an adjustable wrench and probably some elbow grease- make sure you don't crossthread the new one!). I just did this after years of using it with just the petcock and new dial... I wish I'd done it sooner!

Being a dairy farmer I have my own ground beef. I can it and use it for tacos, hamburger gravy, beef stroganoff, goulash and spaghetti. Saves room in my freezer and it’s super quick to throw together a meal.

I'm with Todd--raw packed ground beef is yucky. I cook my ground beef and use diluted onion soup in it when I can it. The onions give it a nice flavor.
I’ve watched this video 4 or 5 times. I just got a brand new roaster and 2 pressure canners from the online auction up here in Fremont, Michigan. They were all still in the boxes sealed! They look like they’re from the eighties from the looks of the boxes. I also scored two water-bath canners in great condition. I’m so excited, I’ve never canned but I finally have the guts thanks to you. My mother canned when I was a child but once I was old enough to learn she didn’t can anymore. Vegetable trimmings IE: the ends of celery stalks carrots onion skins etc… can be boiled to make an amazing vegi stock. As well you can add beef bones and adde even more nutrients if you wish. You could also use ground up dehydrated veggies.
I have never done pressure canning before. I have done water bath canning pickles, tomatoes and jams. I would like to do pressure canning to be able to can more food for the pantry 😊

'Living Traditions' finally got me to feel comfy water bathing tomatoes; 'RoseRed Homestread has taught me a lot; Mrs. Volfie has taught me a lot....but you,my friend, just may make me to feel confident enough to 'pressure can'. Water canning is great, easy and do'able for most folks; but our 'proteins' need to be pressure canned...quite a bit different. Growing up in the 70's and 80's was a special time; my mom made stew in a pressure cooker....boom...2 days of slow cooking turned into 30 minutes of 'pressure cooking'. For us of that era, we are very familiar with pressure cooking, yet canning in that form is scary to us....I DO NOT KNOW WHY.....WE GREW UP ON PRESSURE COOKING. Gearing myself up for 'canning' onion soup or stock. Not sure why it seems scarey...but it is.....I will get over it....like I did with 'water bathing'....it just takes time.

I’ve had my new canner for two years, still in the box! I’m terrified of it. I look at it on the shelf in my closet, shudder and close the door quickly. I water bath can what I can, but that’s as brave as I’ve been able to muster so far. If I don’t soon try it, I’m afraid I’ll have to will it to my granddaughter. Lol 😆

I'm new to canning and I absolutely love it! I was looking for a solution to preserve meat just incase we lose all our power! I initially thought of a generator but came to realize that soon we will be out of gas, the noise it makes may make you a target and I didn't have the investment for going solar. So canning was my solution! I started on vegetables lots of vegetables carrots, potatoes, celery, sweet potatoes! Now I'm canning meats. I cook my ground beef with onions, salt, pepper and garlic! I absolutely love the taco seasoning at Costco. I will add plain water at times or beef broth! I really enjoyed your video!

I've not finished the video yet but a suggestion. If you're doing the (ground beef?) the thing right at the beginning. Rather than cutting the end off and squeezing it out, which you seemed to get a little bit of food crushed inside. Lay it in the tray and puncture the knife in the middle and run it down the length. You can then peel it open and the cover just comes away. Repeat for the other half.
Great job. Don't forget the canner needs the seal edges oiled on the All American. The Presto the seal need a wipe and oiled but not with the same. Great vid
Hi! Love your videos! You should try dry packing. Same process just omit the broth or water. Fill jars, tap firmly on counter surface to remove air pockets then fill to level. I dry pack ground hamburger and sausage and it hold it's texture so well! Perfect for quick pizza, tacos, sausage gravy, the list goes on. 😁 Happy canning!!
There was a lady who canned burger three ways, raw pack, partially cooked and topped off with water, and partially cooked and packed alone, the raw pack was her least favorite, she liked the precooked with no water the most. Many say that canned burger is like dog food and that browning it first gives it better texture… I browned mine and added beef broth, I haven’t tried it yet though…

I did this and cooked until pink was mostly gone. Should I brown it longer? I will definitely not chop it up so much next time. Thanks.

@elcy Congratulations on your first garden!! Inexperience is nothing to be embarrassed about! Like the old saying goes ‘You gotta learn to walk before you run.’ My husband & I are both 43 and we started gardening & homesteading when we bought our land at age 22. We’re still learning new tips & tricks. Some have helped & some not so much. I highly recommend getting in contact with your local extension office. They will be a HUGE help with what & when to plant. The one here in NW Arkansas has so many classes that I have attend over the years. For example: canning classes, gardening classes, bee keeping, & much more!
When you start to put up your own food, I highly recommend going to the National Center for Home Food Preservation website. Read up on how to do it safely.
The video above is a fantastic video with CORRECT preservation information. I have come across a few TH-cam canning videos that do NOT have correct preservation information.

My mom and her sisters canned in the 60’s and 70’s. I just started three years ago and this year will teach my daughter. Never too early or too late. Enjoy!!!

Here are some things I wish I'd known and others I just feel you might not have heard:
1) Only plant what you like at first. And don't go overboard the first year. You don't want to get to dreading what you're doing.
2) You don't plant "fall" or "winter" produce in the fall. It gets planted in the spring and grows until the fall! I'm talking about things like winter squash, pumpkins, brussels sprouts, cabbages and other brassicas.
3) Soil really matters. The easiest way to garden is to buy GrowBoxes, Smart Pots, build raised beds or buy huge crates or wooden boxes. They last for years and almost eliminate digging, weeding, and a lot of bending over.
If they're deep, put leaves, branches, sticks in the bottom. Then add high quality potting mix to the top. You can buy it locally in bulk or in bags.
Too late this year, but keep in mind that many big box stores discount everything in their garden section, typically in late September or October to make room for holiday items.
4) The most common errors are over-watering and under-watering. You can buy an inexpensive 3-way tool to measure the soil's moisture and pH -- they're typically $10-$12.
5) Practice growing indoors this winter to get experience. I would recommend sprouting seeds in quart canning jars, growing herbs like basil, and growing microgreens. We have never canned hamburger. We just freeze it. Now roast canned is wonderful beyond words. I have wonderful memories of coming home in the winter and mom opening up a jar of beef or chicken to make homemade beef and noodles or chicken and noodles.
If beef prices would come down I would definitely spend the time canning some. I tend to stock up on meat when it is on sale. I had gone a little overboard right before Covid. My siblings griped at me but, when Covid hit they changed their tune.

New to canning but I learned recently that cooking ground beef to start with a small amount of water separates the bits of meat. The water quickly cooks out & the texture is better at dinner that night. It was a chef’s trick. I plan to use that when I can ground meat.

These canning 101 videos are so helpful! I grew up with a mom and extended family who all canned, so it’s not new to me, but we live in the Caribbean now and have year round access to all our fresh veggies. That said, the prices on canned goods from the store can be really expensive, so having convenience foods at home is a struggle. I’ve canned jams and pickles in the past and we’ve enjoyed those, but I’d like to try doing things like beans and chicken. We can buy cases of frozen thighs and legs for about $1.00/lb, so we freeze it, but I’d love the convenience of having it off the bone and ready to go. This has all been really helpful and I getting m excited to try some new things :)
YES! Taco seasoned, I did 12 pints & that didn't last long. We need to find some at a good price. For sure I'm going to do more.
Hi Rachel, I have 2 electric roasters and I couldn’t get through canning season without them! I have spent this week canning out of my freezer! Today I canned a whole turkey that was buried in the bottom of the freezer!! Happy canning! Also great series of canning 101 for anyone new to canning!

Brilliant idea of using the roaster to brown large batches of meat !!! I wish I had thought of that a week ago 😂 when I did my ground beef to clean the freezer.
UPDATE: I’m in north, central Texas town with population 5,000. In the ground coffee section at Walmart yesterday, they only had Folgers and Great Value brands.
The produce section overall looked really good with nice looking lettuce that was a little small but plentiful and at a decent price. I’ve attempted to grow lettuce here myself, but temperatures of 110+ makes it difficult.
For a while now, I’ve been keeping an eye out for off-brand canned peaches, and they finally had them, but only two cases were on the shelf.

I’m not able to watch the whole thing right now but I wanted to let you know, I’m coming back tomorrow prepared and ready to learn how to use my pressure canner. I’ve been buying extra meat for several months now and I felt secure. The more I think about it, it all needs to be canned. Oh wow! I just found your channel. This video took away my fear. In the 60-70's my mom would make us leave the kitchen whenever she used the pressure cooker to cook vegetables. She didn't can. She was a nervous wreck. I really don't know why she did it since I just steam veggies. Thank you for sharing.

I learned how to freeze vegetables while growing up but was never shown how to can. I’ve went spent a ton of money on fresh veggies & all the canning equipment & tools several years ago ( I think just before you tube came out or was popular). I also spent days peeling, shelling, shucking, etc. Then I went to canning everything. Needless to say, I end up with a disaster along with wasted time , food and money! I was sick to my stomach!! And so I’ve aloud fear to prevent me from ever trying it again!!! But the times we are living in these days, I’ve been really wanting to give it another try. With your You Tube tutorials, I believe I’m gonna give it another shot. So thank you for getting back down to the basics!!’ Thank you!!! Thank you!!

I love your videos but FYI folks, for the BEST control, cut in the direction you can control, you have the best control over any object when paying attention and using a proper tool or sharp knife, such as using food scissors when opening tubes. Love these hints. i have started pressure canning too! thank you

I love doing my ground beef this way, I use onion soup mix as my liquid. I just make it according to the package, bring it up to temp and fill my jars. It gives it great flavor!

I’m so excited to try this out. I just purchased Ball canning book and got presto canner like you have. Won’t be in until Aug 16 22. But I’m studying and building jar supplies etc until then.. you inspired me to go for it!
Wow. It takes that long to get a canner? Keep your eyes open. They often sell at second hand stores, on eBay, on Facebook Marketplace, Craigslist, yard sales, etc. Most of the parts that can go bad are (usually) available. You never know with the supply chain issues going on now. Maybe someone you know has a canner and you could do some canning together?
What a great video for beginners! I also use broth, and add a teaspoon of dehydrated chopped onion to each jar.

I talked myself out of doing this because I heard someone say in a video to be very careful because you could poison yourself & family. So I just didn’t want to do it at all. Thank you so much for the canning 101 videos. I’m loving them. I have an all American from either my mom or grandmother and I’ve been told I should replace the dials and a few other parts. Honestly don’t know how old it is but I know we were canning in the late 60s to mid 70s. These videos are giving me confidence to reach out and get the parts and start pressure canning. I have water bath canned so feel good with that.
You don’t necessarily have to replace parts, you can just get them tested at your local county extension office.

I understand if you are using a pressure canner with a dial gauge, it is very important to have them tested at least once a year. I have found it to be easier to use a weighted pressure regulator. 1-they don’t have to be tested every year to ensure accuracy. My county extension office is an hour away, not convenient. 2-I don’t have to “babysit the dial”. I can hear the weight rocking and most importantly, I can leave the kitchen and go about my day while keeping an ear out for changes in pressure by the frequency of the rocking. 3-they are inexpensive on amazon.
You should get the dial checked at an extension office or replace it (still getting it checked is a good idea in case the new one isn't accurate). Also, if yours is like the one I inherited from my granny, it probably has a petcock valve instead of a weight- it's an easy swap out to replace this with the weight valve (you just need an adjustable wrench and probably some elbow grease- make sure you don't crossthread the new one!). I just did this after years of using it with just the petcock and new dial... I wish I'd done it sooner!

Being a dairy farmer I have my own ground beef. I can it and use it for tacos, hamburger gravy, beef stroganoff, goulash and spaghetti. Saves room in my freezer and it’s super quick to throw together a meal.

I'm with Todd--raw packed ground beef is yucky. I cook my ground beef and use diluted onion soup in it when I can it. The onions give it a nice flavor.

I’ve watched this video 4 or 5 times. I just got a brand new roaster and 2 pressure canners from the online auction up here in Fremont, Michigan. They were all still in the boxes sealed! They look like they’re from the eighties from the looks of the boxes. I also scored two water-bath canners in great condition. I’m so excited, I’ve never canned but I finally have the guts thanks to you. My mother canned when I was a child but once I was old enough to learn she didn’t can anymore. Yes, I’ve had a lot of people tell me they can fresh tuna & salmon here on the OR coast. Someday after more experience I would like to try it.
Vegetable trimmings IE: the ends of celery stalks carrots onion skins etc… can be boiled to make an amazing vegi stock. As well you can add beef bones and adde even more nutrients if you wish. You could also use ground up dehydrated veggies.

'Living Traditions' finally got me to feel comfy water bathing tomatoes; 'RoseRed Homestread has taught me a lot; Mrs. Volfie has taught me a lot....but you,my friend, just may make me to feel confident enough to 'pressure can'. Water canning is great, easy and do'able for most folks; but our 'proteins' need to be pressure canned...quite a bit different. Growing up in the 70's and 80's was a special time; my mom made stew in a pressure cooker....boom...2 days of slow cooking turned into 30 minutes of 'pressure cooking'. For us of that era, we are very familiar with pressure cooking, yet canning in that form is scary to us....I DO NOT KNOW WHY.....WE GREW UP ON PRESSURE COOKING. Gearing myself up for 'canning' onion soup or stock. Not sure why it seems scarey...but it is.....I will get over it....like I did with 'water bathing'....it just takes time.

I’ve had my new canner for two years, still in the box! I’m terrified of it. I look at it on the shelf in my closet, shudder and close the door quickly. I water bath can what I can, but that’s as brave as I’ve been able to muster so far. If I don’t soon try it, I’m afraid I’ll have to will it to my granddaughter. Lol 😆

@@susansmith574 I did the same thing…I had my canner for a year but decided one day that I wasn’t afraid anymore and the desire to feed my family good food overcame my fear. I started with chicken breast. Raw pack chicken is the easiest thing you can process!

Thank you for your great lesson. will watch more of your advice.here in Bulgaria, where I am retired to, Heef is not an option, but chicken and Pork is readily available, as well as an abundance of seasonal fresh vegetables. I want to get away from the Supermarkets as much as possible, especially in the winter months.

I'm new to canning and I absolutely love it! I was looking for a solution to preserve meat just incase we lose all our power! I initially thought of a generator but came to realize that soon we will be out of gas, the noise it makes may make you a target and I didn't have the investment for going solar. So canning was my solution! I started on vegetables lots of vegetables carrots, potatoes, celery, sweet potatoes! Now I'm canning meats.
I cook my ground beef with onions, salt, pepper and garlic! I absolutely love the taco seasoning at Costco. I will add plain water at times or beef broth! I really enjoyed your video!

I've not finished the video yet but a suggestion. If you're doing the (ground beef?) the thing right at the beginning. Rather than cutting the end off and squeezing it out, which you seemed to get a little bit of food crushed inside. Lay it in the tray and puncture the knife in the middle and run it down the length. You can then peel it open and the cover just comes away. Repeat for the other half.

Hi! Love your videos! You should try dry packing. Same process just omit the broth or water. Fill jars, tap firmly on counter surface to remove air pockets then fill to level. I dry pack ground hamburger and sausage and it hold it's texture so well! Perfect for quick pizza, tacos, sausage gravy, the list goes on. 😁 Happy canning!!

There was a lady who canned burger three ways, raw pack, partially cooked and topped off with water, and partially cooked and packed alone, the raw pack was her least favorite, she liked the precooked with no water the most. Many say that canned burger is like dog food and that browning it first gives it better texture… I browned mine and added beef broth, I haven’t tried it yet though…
Canning meat alone is one place I haven't ventured in canning yet. Thank you so much for sharing.
