My Chicken Fried Rice Recipe = BETTER THAN TAKEAWAY

  • My Chicken Fried Rice is a recipe I have been making for years, Its a quick recipe for takeaway-style Chinese chicken fried rice with loads of flavour. I've included lots of swaps so you can use up whatever you've got in your pantry.

    Ingredients:
    2 tbsp vegetable oil
    1 onion peeled and diced
    1 red bell pepper deseeded and finely chopped
    2 cloves garlic peeled and minced
    2/3 cup (115g) frozen peas
    2 cups (250g) cooked shredded/sliced chicken
    1/2 tbsp sesame oil
    4 cups (800g) boiled and cooled long grain rice (this is about 1 1/3 cups (300g) dried rice that has been boiled in water)
    2 eggs
    2 tbsp dark soy sauce
    1/4 tsp salt
    juice of 1/2 a lemon
    To Serve:
    1/2 bunch of spring onions/scallions chopped

    What a legend you are. I tried your crispy chilli beef with egg fried rice and it tasted out of this world. Your recipes are so easy to follow even for a total amateur cook as me. My family thoroughly enjoyed it and I will be trying you chicken fried rice too.thanks again and please keep sharing you cooking knowledge.

    That's the beauty of a great stir-fry: its perfect for re-purposing leftover food. So important at times like this to be creative like this. Your egg technique is bang on too. Great recipe, thanks for sharing. You keep posting and I'll keep watching.

    Hey Nicky. I've just made this tonight. I did use ready cooked rice and discovered in didn't have soy sauce so swapped it out for hoisin, your instructions were so easy to follow ! Made for my friend and his wife, she's an excellent cook and gave it her seal of approval! I'll be trying more of your recipes ☺ Thank you x

    Great recipe, I’d highlight that it’s 300g of raw basmati rice that when cooked is 800g in weight. Don’t do what I did, I used 800g of raw rice cooked that and ended up with a very rice heavy meal. I’ll make it again soon and engage my brain next time😂

    Sorry I comment quite a lot, but made this + the sesame chicken for friends here in Germany on Saturday. They loved it, and I've told them to subscribe. You literally make beautiful meals, easy, quick and bl..dy tasty. When I'm home in UK I want an invite to dinner 🤣 but honest, I'm making beautiful meals for my boyfriend and I, because you make it soooooo easy.     Yummo. Have you seen the utensil that most Asians use with a wok? It's like a little headstone shaped scraper with a curved front edge. That curve fits the shape of the wok and makes mixing easy. It works so much better than the ole egg flip. cheers.

      She used a 1/4 tsp of salt in 4 cups worth of rice. Any less then dont bother seasoning your food 😂
