Frank Pinello (@bestpizza33) is on a mission to get to the bottom of the controversy.
Follow Frank to discover the stories of three pizza makers in Nassau County, Long Island, who collectively have been making pizza for 140 years and all operate pizza parlors within a few miles of each other. One thing they have in common is disagreeing about something they have all contributed to - the creation of the "Grandma Pie".
Frank will meet King Umberto's (@kingumberto), Umberto's (@umbertospizza), and Da-Angelo's Pizzeria (@daangelopizzeria) and learn the nuanced differences between the way each of these pizza masters make their Grandma pies.

This is probably one of your best episodes. You get to see the old-school competition, but I do believe they all played a part in shaping the scene ''the square grand mama'' and have all found success in their own right. It’s great seeing both generations speaking the language. Don’t let it die. My dad is Toscano and I try to keep practicing with him. A bit hard to get all the Sicilian but I love it.

My family has been making Grandma style pizza since the 70’s. Back then my parents did not have a lot of money so we never had a round pizza pan. We always just used a cookie sheet and Mom would say “ round or rectangular it tastes the same, these ones have more edge pieces “. I still have the same aluminum pan that I use to this day,it has cooked it’s fair share of Canadian style Grandma pizzas!🇨🇦

As a chef, grandma pizza is one of my all time favorite styles. There are only 2 places I know where to get one in Houston, so I am working on making my own.

As an Italian who grew up in the Italian restaurant industry outside of Italy, I saw it all. My father was an old-school Italian, and we knew all the local Italian immigrants who opened restaurants and pizzerias.
When I was a kid growing up, and later working in the restaurants, I watched my dad and those other middle-aged immigrants speaking Italian, fighting, arguing-you name it. And let me tell you, they were all super critical of each other. They never praised each other's food. It was always, "My food is better," or "My wife's cooking is better."
And then, it got real. It depended on where they were from. Jesus. Southern Italians? Forget about it. They wouldn’t praise Northern Italians at all. And the Northern Italians-the old-school guys from north of Rome, like the Torinese, Milanese, and Venetians? Minchia. These guys would talk shit about Southern Italians like it was their full-time job.
then Neapolitans would criticize romans or even guys as close as BARI.. then Romans hated everyone ... saw I learnt a lot .,,
the woman, the mothers.. the wives etc.. they were more polite and generous to your face and in company they would always praise the food and cooking of other women..
but once in the car they would find something to critic LOL
It was serious. Then you had the Sicilians, who don’t even consider themselves Italian. LOL. They just say, "I’m Sicilian."
so trying to get to the bottom of who created the grandma slice? from these old school guys!! FORGET IT!!!
none of them will admit it was the other guy....
now listening to those three guys.. they are obviously 1st generation immigrants to America.. so they came from italy.. they would have eaten pizza in italy as kids

which comes from ROME....
the SFINCIONE... from Sicily... ( yes, a little different to the grandma)
but.. Americans have always taken italian cuisine and changed it...,
the DETRIOT PIZZA.. a bastard child of the GRANDMA...
the GRANDMA.. a ROMAN - PIZZA AL TAGLIO
so.. who copied the roman pizza first and sold it to Americans?
it wasnt invented in America...
an italian brought it to America...

My mother made a sheet pie with a pillsbury dough, pressed out with a rolling pin on a 4×8" dark cookie sheet oily puffy not floury just watery tomato, fresh garlic and parmesan cheese the neighborhood loved it, that was the 70's and we know New Haven , we ate Zuppardi's Apizza every Sunday.
All 3 get credit. I miss eating long Island pizza. Someone needs to open a long island pizza in bristol, tn. No good pizza here at all. Would be a huge success🍕🍕

Those pans are absolutely available again in 2 sizes, they are being produced by a retired pizza maker out of Reno. Same rolled steel reinforced pans, same guage as the old Allied Metal pans. The company is called swhenterprises.
