Roman-Jewish-Style Artichoke: Original (Kosher) vs. Gourmet with Marco Sed and Angelo Troiani

  • One of the oldest Jewish community in Europe has lived in Rome for over 2000 years. The Jewish-Roman culinary tradition has had an enormous impact on Italian cuisine, with many original recipes becoming national heritage over time. Among these culinary inventions, the most recognized is undoubtedly the artichoke "alla Giudia" (Jewish style). Marco Sed, from the kosher restaurant Yotvata, tells the story of this vegetable dish along with the tricks for cooking it to perfection. The word then passes to Angelo Troiani, a Michelin star at the Convivio, who broadens the horizon with his "artichoke strike", a dish that includes all the artichokes of the Lazio tradition - Roman style, Marticella style and of course Giudia style.

    Great video! I’ve been making simple artichokes for 40 years, but never knew of these recipes! I’m intrigued here that every part can be used, in some form or fashion. I never deep fry because IMO it’s too dangerous and messy. But the second recipe shown seems to require much less oil than the first. Late winter early spring artichokes are just coming to market where I am, so I’ll give it a go! Thank you!

      @@carlorobotti5572 That is only the case for wine, and only among extremely observant Jews who are a minority even among the Orthodox. Even most Orthodox Jews only buy this kind of wine for Passover. Fresh produce does not even require kosher certification according to most mainstream Jewish authorities; you must only make sure to wash it well and check that there are no insects before cooking or eating. I'm not sure where you got the idea that the farmers must be Jewish - you must have misunderstood something.

      Non si possono mischiare carne e latte. Nel suo ristorante serve latticini e pesce, niente carne. La lasagna è ricotta e spinaci o qualche altra combinazione senza carne, di certo non la lasagna tradizionale. Saluti

      You can not eat fish and meat together, but it can be in the same restaurant. A kosher restaurant will not have dairy and meat however

    ma che vuol dire "foglie di menta".... le diverse mente hanno sapori completamente diverse ed una non vale l'altra. Nei carciofi alla romana ci va la nepitella (Clinopodium nepeta) che a Roma chiamano "mentuccia", da non confondere con la menta romana (Mentha pulegium) detta in italiano poleggio o mentastro che si usa nella trippa alla romana. Mo' che ci hai messo tu? Boh... A fermare il video e a guardare bene mi pare nepitella. Ma uno che ti senhte dire menta e ci mette la rotundifolia, piperita o spicata sai che combina?

      He said that they are produced by them by other cheese factories. Basically they have agreements to produce kosher cheeses using traditional but adapted recipes.

      the fact that they gave those factories the kashrut (the procedures that need to be followed so as a food could be classified as kosher - in this particular case we're probably mostly talking about the strict separation of the ustensils, as any other "adaptation" of the recipe is impossible, or that grana padano is not grana padano anymore) and hired a mashgiach to supervise that the rules are followed doesn't make them the producers of the cheese.
      by the way, from what I know and have experienced, in most if not all cases, the medium-scale industrial production of cheese in Italy basically follows (not willingly, but simply because that's how it's done) the kashrut, so that most of those cheeses could be considered kosher, except that there was no mashgiach there to certify it. this might actually explain that piece of grana in their refrigerator, the exact same grana I could bet I spotted yesterday at coop.

      I formaggi kosher sono fatti nei caseifici dove vengono prodotti i formaggi tradizionali, ma vengono usati cagli vegetali invece di quelli tradizionali. Le produzioni sono produzioni speciali, ma mantengono il marchio del caseificio e del formaggio, come nel caso del grana padano inquadrato nel video. I caseifici producono questi formaggi per Yotvata

    Ero molto curioso di provare questo piatto. L'ho provato finalmente al ristorante Ba Ghetto a Venezia e non era affatto buono (terrible infatti). Non lo consiglierei.

      Durante molti viaggi in paesi Buddisti ne ho visti di insetti. Li mangiano come snack, (purtroppo). In un ristorante 5 stelle in Asia addirittura ho trovato vermi grossi come il mio ditino nell'insalata. (Non se ne fregano). Mi fiderei più di questo chef, che di un ristorante asiatico.

      Lo specifica proprio perché un tempo andava tutto bene se eri povero e quello avevi a disposizione, proprio come vivevano gli ebrei nel ghetto di Roma. Per motivi religiosi non potevano però mangiare proprio tutto e quindi le loro preparazioni richiedevano più tempo. Capisco l'ignoranza, capisco volersi ergersi a pulpito, ma magari avere un pizzico di cultura generale non guasta mai.

      Per altro il "controllo insetti" al carciofo pulito subito dopo non è stato fatto, non sono neanche in grado di mentire in modo decente.
