I don’t put the onions or balsamic in my tomato bacon jam. But I usually make it to put in grilled cheese sandwiches that I also put caramelized balsamic onions in lol
I'm always bemused by the bacon you have in the US, because you don't use back bacon (at least I've never seen it used) we tend to use back more than streaky, and I'm wondering what the jam would be like if I used back bacon. The jam looks fabulous!!
Yummy! Love this recipe. Can't wait to try it this weekend. Can you make a large batch and seal in canning jars using the water bath canning method. Would make an excellent gift at Christmas in a gourmet food basket. I love making food baskets to give away with unique items in it. I have made red bell pepper jam with strawberries. :) Love your videos
I wouldn't water bath can it because of the bacon. If you want to pressure can, I would find a recipe that is specific for canning to make sure you have the right ph level and the correct timing. It does last quite a while in the fridge though.
Never heard of tomato jam, but sounds delicious. It might be a bit of a pain in the rear, but wouldn't just cutting the cherry tomatoes in half before cooking speed the whole process up? I'm not a cook but going to give this information to my niece who loves this kind of stuff

I warmed the cream cheese up a bit in the microwave and mixed in the bacon jam. I didn't measure but it was probably 3 parts cream cheese to 1 part bacon jam.

I think it would be fine as long as there is a little fat for flavor. The bacon doesn't stay crispy anyway, so that isn't an issue.
You're right, but some farmers/butchers make small batches with back bacon, I cure my own so doesn't last lol. Idk why that is👍

Yes, but the time you spend cutting the tomatoes will negate any time spent sautéing them.

Bacon is naturally salty, so you could try a lower salt variety and see how it tastes!

I have had to buy a few replacements because mine gets scratched from regular use. Steel wool shouldn't be necessary to clean it though.

They may have too much moisture. Maybe drained and dried a bit, then not cooked as long..
I think that would be just fine! I would drain some of the juice, but not all. Then reduce them just like I did in the video.

It is not a tested canning recipe and meat needs to be pressure canned, so I would not can it.
