Hi Guga, here in South Africa we are really big on grilled lamb chops. we like to marinade the chops in lemon juice and then grill it. while we grill the chops we also add more lemon juice with the normal spices. give it a try its awesome.

There might be many reasons, but one that comes to mind is the fact that it has carbs (bread crumbs) in it, and the brain processes fat and sugars (or carbs) as 2 separate sources of energy and they have 2 separate rewarding signals when ingested. Now you are triggering both at the same time and you get double the pleasure. That's the reason why Pizza (flour and mozzarella), Hamburgers (buns and meat fat).. etc.. are the most rewarding foods :) Cheers from Italy !

Guga how the lamb is finished has nothing to do with the "gamey" flavor. The age of the lamb does. Get a lamb that's a bit over 8 months and you'll taste it, get one well past that and it will peel the paint off the ceiling of your kitchen. This is why very few people like mutton. You should do mutton, just be sure for one serving to wet brine for a few hours, then cold smoke before searing. This method makes even the rankest mutton palettable.

I highly recommend the marinated version. I didn’t grill I pan fried in olive oil. Let me tell you one of the best ways to cook lamb. 10/10. The vinegar really shines in the marinate. Added a lil lemon juice in mines

We raise and sell grain-fed lambs for the freezer. Lambs are butchered at approximately 120 lbs yielding an assortment of cuts ~ 50 lbs of fresh lamb. Now taking deposits for 2021 lamb crop. Ave price about $8 p/lb.
It would be fun to see a fried comparison. Comparing how the different wash types; egg, milk, buttermilk, water, wet/beer batter, etc, react to frying. Or comparing batter types; tempura, wet, seasoned flour, cornmeal, breadcrumbs, etc.

So in Turkey (maybe other parts of the country too) but from what I know specifically in Balıkesir and ESPECIALLY in İzmir-Greek islands Lamb's are generally fed with Oregano(Kekik) which produces and INCREDIBLE flavour, you wouldn't believe the difference it makes.

Lamp Shwarma is my favorite food, the standard salads added to the sandwitch/burito/w.e are: 1- tahiniya sauce: not like the Tahini itself you'll need to make the sauce from it with lemon, water, and salt. 2- simple Palestinian salad: just cucumber, tomato, and cabbage, then add some lemon juice and salt. 3- Onion salad: cut onion rings, then cut them in half, then add sumaq, then leave it in the fridge for 1 hour to have a slight pickled taste. and ... the Shwarma itself : sorry, I was never able to master it, and there are many different recipes but the best restaurants never share their secrets as it brings in a sea of money lol
