    You may occasionally see this very distinctive cake bread in some bakery store. Put a chocolate cake coat on the bread, which is both good-looking and delicious.     抹茶口味蛋糕:用6克抹茶粉和8克低筋面粉代替14克可可粉,抹茶粉不用与热水混合,与其余低筋粉一起过筛加入到蛋糕糊里。
    Mocha flavour cake: Replace 14g cocoa powder with 6g matcha powder and 8g cake flour, matcha powder does not need to be mixed with hot water, it is sifted together with cake flour and added to the cake batter directly.

    低筋面粉 Cake Flour 100g
    可可粉 Cocoa Powder 28g
    葡萄籽油 Grape Seed Oil 54g (无味的植物油也可以, or vegetables oil)
    水 Water 84g
    纯天然香草精 Vanilla Extract 5g
    食盐 Salt 1/4tsp

      4g milk powder and 29 water instead of 32g milk.
      Yes you can use sunflower oil, or any vegetable oil.

      You can try 7g milk and 7g sugar instead of 12g condensed milk

    Hello. I have a sample oven with height of 4.5" from bottom rack to top heating element. Would the 450g recipe expand to the heating element with a pan of 7.25x3.8x4in (inside dimensions)?

      My oven has convention function, but most time I don’t use it when baking unless I want a extra darker bread or cake.

      Convention will colour the bread/cake more darker, even burn the surface, can be used for Baguette and some European traditional bread.
      For most of my recipe, the baking temperature and time have already counted in the colouring and whether it is cooked, so don't need turn convention on. Another very important point is that the oven must be preheated 20-30 minutes in advance.

      你可以试试,那样就是戚风蛋糕的做法。
      在混合蛋白霜时,可以用大一点的刮刀或者是大一点的手动打蛋器的工具。用轻轻翻拌的方法是不容易消泡的。材料混合均匀即可不要拌太久。

      The cake is moist because the cake batter and the bread dough all have more water than common.
      The baking time of this cake bread is almost same as normal cake. Don't over bake, it is ok when internal temperature of the bread reaches to 92C on the thermometer.

      You can multiply every ingredient by 0.7 for you pan. but you pan's height may be too low for this bread cake, it may cause a mushroom shape.

      面包面团不能发得过大,要放在比较凉的对方,大概有40-50分钟时间去做蛋糕糊。夏天气温高时,做蛋糕胡时可以先将烤盒放在冰箱里20分钟,之后再常温发酵,这样面团才不会发得过大。

    If I wish to make a coffee cake batter instead of chocolate, how should the ingredients be adjusted please?

      You can use fresh espresso coffee instead of water, or you can use instant coffee powder. You can adjust how much coffee flavour you want. You can keep the same amount of cocoa powder or you can reduce some of it. If you reduce the amount of cocoa powder, you need replace the amount of cocoa powder that you reduced with cake flour.

      Replace 14g cocoa powder with 6g matcha powder and 8g cake flour

      Matcha powder does not need to be mixed with hot water, it is sifted together with cake flour and added to the cake batter directly

      在室温18-24°C下,可以保存3天。
      也可以切片后,小包装密封冷冻保存,食用前室温或冷藏解冻后即可。

      这是两种不同食谱的混合体。如果蛋糕体没有消泡什么的问题。
      检查一下是不是面团发的太大了。
