Shola, your moi moi with a few ingredient changes is my mother's recipe...delicious. Mum is dead now. But she was a fantastic cook from Delta State. I am looking for your Ayamashe stew and Ofada stew. They are not the same thing although some Nigerian takeaway cooks argue this with me. The difference is Ofada is cooked with 100% red pepper plus other ingredients, and Ayamashe is cooked with 100% green peppers plus same other ingredients. If you have your own recipe for these two sauces please send me the links. I have subscribed. For your information, I live in North Wales and have to cook my Nigerian food because no Nigerian restaurant near me. The ones I have ordered from in Manchester and Liverpool do not cook like you, so their sauces do not satisfy my taste buds.
