    Waaaaaaaayyy back in the day (we're talking almost 60 years ago) my grandmother made this for her little restaurant she had. Only she used bologna, cheese, sweet relish and tomato soup (straight from the can), and used a meat grinder, the kind used to make sausage. It was one of her biggest sellers.
    After she passed, my father inherited the grinder and would go get a whole "log" of bologna, a half log of cheese, the relish and soup, and we would spend the evening making the "sandwich spread" for his work and our school lunches for the next couple of weeks.
    Ah, the memories!

      This sounds great! My hometown grocery store sold tons of 'pink sandwich spread' that I'm 100% positive was bologna salad. Its good. Their's was a bit different then Emmy's but they still used mayo. I used to think it was so gross just because it was pink.

      I know Sara’s videos well, And I think she is a great cook and I do like her recipes, and she seems like a nice person, but.....there’s this phenomenon that exists in society that nauseates me.
      And it’s this practice of complimenting morbidly obese/unattractive/mentally challenged people in an over-the-top way, and using patronizing words and phrases to describe them like having a “heart of gold” in a really blatant and tacky attempt to downplay and ignore the fact that they’re so fat/unattractive/mentally challenged.
      It’s just so so obvious that that’s what it’s about.
      If she didn’t weigh 600 pounds, would you still think she had a “heart of gold”? Or would you care about her getting more traffic?
      Probably not! Just sayin’.

    When my daughter was little ( mid 1990s) we had a birthday party for her and I used an antique cast iron meat grinder to make my own sandwich spread using bologna. I served it as finger sandwiches. The grinder was probably from the 1920s ? Maybe older. It has a wooden handle and a nice reinforced table vise to hold the grinder securely in place. It worked fabulously. I’ve also used it to make my own ham loaves ( baked ham loaf with horseradish sauce YUM ) ! I still have the grinder, I think that it will last forever lol .

      Grew up with bologna but never heard of this recipe. It was either on its own, in a bulkie, or on the very odd occasion fried (as a kid). Brings back memories :)

    when using anything that suctions to the counter get your fingertip wet and run it around the rim of the suctioning base. The water helps create a better seal.

    I'm screaming. I literally used to make exactly this when I was a kid. The theory was that my mom would always make tuna salad sandwiches and wondered what would happen if i chopped my ham and veggies really tiny then mixed that all with mayo and I've been obsessed ever since. I thought i was just weird but apparently this is a thing.

    My mom made bologna and cheese salad sandwiches! She told me that's what she ate for her entire road trip from Indiana to Los Angeles, CA in her early 20s moving to California. She used an old-fashioned cast iron hand-cranked grinder and it was delicious. She's been gone ten years but I'll never forget. Thank you, Emmy, for this blast from the past.

    My 72 year old mother still makes bologna salad (no onions, mustard or cheese though). Just bologna, relish, mayo and salt and pepper. And it’s delicious. She always uses ring bologna. And this can be done in a food processor. Ham salad, chicken salad and scan turkey salad. Yum!

      Yeah, I only eat dill pickles that don't have added sugar. Clausen is a good brand, but nothing beats making them at home. I'll also add a variety of peppers when making the pickle chips and after they're ready, I'll take some out and make my own custom relish out of them. It's the crunchiest, dill-iest (sometimes spiciest) relish you'll ever get. I'm wishing I had some right now :/

    True story. Growing up in Scarborough, Ontario, Canada, my highschool job was in the A&P deli. Leftover meat ends we ground up, added mayo, relish, celery and onions and sold it! Couldn't eat cold cuts for years! Fantastic paying job, though. 🇨🇦✌💖

    Bologna salad was a staple in my house as a kid for lunch. Especially at my grandmother's house! We still even eat it today! Not newly as much as we used to, like in my childhood. We actually had a meat grinder that my grandparents bought JUST for bologna salad. They still have it; they bought it brand new in the early 60s. That goes to show that vintage things were build to last!! About 5 years ago, the bad that makes it stick to the surface cracked so it won't stay still, so I bought them a new one for their safety and as older, traditional people are..... They still use the old one unless I'm around hahaha, but YES! Even thinking about bologna salad evokes so many childhood memories!

    I loved seeing this video! Back in the 69's and 70's, our family called this "party meat". I do not know how it got this name in our family, but it was ground bologna with pickle relish, sweet red pepper, maybe some sugar? It was sweet and delicious and we made sandwiches of it.

    It was called Sandwich Spread in markets in the 50/60s when I was a kid.

    Hi, Emmy! My great-grandfather was a professional butcher, in Moscow, PA, and we had a version of this as a family recipe. However, we made it more frequently with "city ham," (wet-cure ham, rather than dry-cured country ham), and we usually ground it with a meat grinder than shredding it fine. The city-ham version is deserving of attention in its own right, without the preserved, processed meat flavor of commercial baloney.
    Our proportions were roughly two parts meat, one part sharp aged cheddar. My grandmother always called aged white cheddar "rat cheese," and remembered being sent into town to buy from the oldest wheel in the country store because that was often the cheapest and most flavorful. Then you must add a very small amount of ground onion (you don't need much, but it adds enormously to the finished dish, especially if you wait an hour or two for the sulfur compounds to bloom), and sweet gherkins to taste. Bind with mayonnaise, or if you like you can use Miracle Whip. (I am not a fan of MW, but admit that in this particular use it works just about as well as the Hellmans--both are glorious.) Finish with splashes of the gherkin pickling vinegar mixed in to slightly loosen and add an element of sweet-tart to the final product.
    The final look should be like confetti on a field of pink: white or gold cheese first, then flecks of sweet gherkin.The end result is cheezy enough to come across as what I call "Yankee Pimento Cheese," and is pure bliss. My mother learned it from her mother-in-law, who learned it from HER mother-in-law, who learned it from her own husband. Mom said that she was taught it could be made with any cold, cooked meat, including leftovers like pot-roast, but that baloney and city-ham were convenient choices in a butcher shop. I still make this quite often: it is pretty, insanely yummy, and ham is among the cheapest meats per pound, and keeps forever. You can adapt the recipe to food processors easily--just be careful not to chop or shred the meat, cheese, and pickle too fine, as it is kind of mushy and boring if you blend it too well. On the other hand, you can blitz the onion to smithereens: it just speeds the aging and ensures better distribution of that deep savory under-flavor.
    Again, this works best given a couple hours aging. I like it best with city ham, really sharp white cheddar, onion (about an eighth to a quarter of an onion per three or four pounds of spread), with gherkin rather than relish (relish is sticky-sweeter than gherkin), and mayo rather than Miracle Whip. I've added sharp mustard. It's not bad, but not needed. Make enough to last a week for packed lunches. Spread over toast and broil under a hot broiler, until the meat and mayo brown and the cheese starts to bubble. Serve as a side to scrambled eggs in summer, for a nice, cool element to breakfast. Stuff into pie pastry and cook as a pasty. Serve alone on lettuce as a 50's style diner lunch entre.

    For anyone interested, Bologna (pronounced as Bow-loan-ya) is actually a city in Italy, in the Emilia-Romagna region, where this type of ham is a speciality. In Italian is called "Mortadella" and was a food of the poor, made using scraps of meat and spices. Nowadays it is produced all over the world, and in the USA it is known under the name of the city where it is originally from.

    Simply Sara is so awesome! She is a pleasure to watch and makes some of the good old fashioned southern recipes I miss. Ham or deviled ham salad was a staple in our house when I was a kid. I prefer to make ham salad from a spiral ham now, and the deviled ham is too weird for me to think about eating. 😁

    My Mom made this while I was growing up but normally used, “SPAM” and she always called it, “deviled ham”. My Dad loves it and she still makes it but now it’s normally smoked salmon:)!     My Grandma used to make this with ham, hard boiled eggs, relish, celery, onion, and cheese. Brings back some great memories! Watching Ronco infomercials was my favorite thing to watch when I was home sick from school. The rotisserie cooker, the knife sets, the pasta maker, and the food dehydrator. I remember saying “Set it and forget it!” with the audience in the infomercial 😂😂😂😂

    Bologna spread is well known in Midwest. Especially here in Wisconsin. Grind or chop up bologna fine,chop up pickles or use pickle relish and add mayo to bring all together. Eat on bread or crackers. Yum 👍😊🍞🥪

    It sounds delicious! There was a salad years ago called ham peppers and onion. We tried to recreate it for ages with ham. Now I shall try it with bologna. Seems I remember then the colour was rather pink for ham.
    Maybe you gave me the secret!

    My grandparents used to make bologna salad all the time but like you said they call it ham salad or sandwich spread. I have so many good memories I'm making this with my grandma and now I want to go to the store and buy bologna so I can make some bologna salad LOL.     Thanks for the memories!!!...When I was a kid, we could eat lunch for a week on one batch. It really helped out when the budget was tight. Dampen the bottom of the grinder to help make the suction work.
