Thanks for this delicious recipe and if I may make a suggestion since I have been cooking and baking for over 5+ decades, buy yourself a few silicone pastry b,rushes so you will not have any pastry brush hairs falling out and into your food from the use of the old fashioned traditional pastry brushes. Silicone pastry brushes are easier to use, clean very well, and are so much more sanitary than the old fashioned pastry brush you are using. Once you try a silicone pastry brush you will never go back to using that old fashioned pastry brush again:). Thanks again for sharing, and please keep offering your cooking and baking video's as I am really enjoying them.
This pie looks so yummy! I'm gonna try to make one. I've never used filo dough before so it will be interesting. Do you know of anything I could substitute for ricatto? I don't like it at all. Thanks for sharing and for the detailed instructions too. I really enjoy your videos.
you might want to try (frozen) puff pastry. different texture, but its not as fussy as using the phylo dough. you just roll it out and use it like that.
I have my first one in the oven right now. I found it fun to make and think that the joy in cooking makes the food taste better. One question: What would you suggest as the best way to reheat this beautiful dish? Thank you for sharing.
You can heat it in the microwave, but the pastry won't be crisp. I haven't tried a conventional oven, but that would probably help crisp the shell. I hope that answers your question. Thanks for the positive comment. -Dennis
I love your videos because you do mot do stuff like spray your food with stuff like hair spray or lacquer to make it shiny. What we see is what you eat or give tp neighbors. And you cook food that we could and do cook. And you re us where to get the ingredients if they are not in a usual supermarket.
A vegan version would be really easy. Leave out the chicken and substitute with nuts, such as walnuts or more pine nuts. You could add vegetables such as chopped carrots and celery. Really, almost any filling will suffice. If butter is not okay for the pastry shell, you can use a mild olive oil.

I would have made a flakey short crust pastry instead. Though this is the best use of phyllo pastry for a savory pie I’ve seen so far.

You could substitute cottage cheese for the ricotta. One person wrote to say she added sautéed mushrooms, which sounds really good to me. -Dennis
