Hello, may I know what is the function of that metal piece that looks like a plate in half and is attached to the Steering Knuckle? Thanks

Those are dust shields / brake backer plates. They protect the brake rotor (somewhat) from road dust, water, etc. Thanks for watching!

Why not mark the position of the eccentric cam for the camber and put it back together in the same position.

There's so much play between the cam and the slots in the strut, the cam position is really not an accurate indicator... at all. Because of that, I actually ignored those indicators on the cam bolt head because I found them useless. Also, on the passenger side of my car, after a certain point, when the cam was adjusted all the way to one side, it still wasn't far enough to get where it needed to be, so I used a pry bar to move it beyond that point, because there's so much free play between the cam bolt and the slots. To state it more sussinctly, the cam adjuster isn't accurate or repeatable... at all. Also, in the case of replacing the strut with a new one, any marks you might make on the old strut go out the window when you pull it from the car, because the new strut will be different. Thanks for watching!
