I saw this video and afterwards had the intense urge to make this pie. I went to 5 different stores looking for vanilla beans because i wanted to make it exactly how she makes it. This is the most complex thing I've ever baked and it was a bit of a challenge but I have to say, it came out so incredible. Seriously the best thing I have ever made, maybe even the best pie I have ever tasted. I cannot believe i made that. When I finish it, I will have dreams about it. This pie has cured my depression and has helped me reach spiritual enlightenment. I highly recommend you try this recipe.

All the ingredients are pretty cheap except for the Vanilla Bean (which is essential in the custard's flavor). I also used a whole pack of graham crackers (8) for the crust. The pie turned out amazing and was a big hit at the family Christmas dinner. People who normally don't like coconut flavored items loved this pie. 10/10 Thanks, Bon Appetit!
I have made this recipe so many times. I love how u incorporate coconut as many times as u can. It is out of this world. The only thing I did was sneak some cream of coconut in with the whipped cream. I go coo coo for the coconut 🥥 🌴🤪 but it is beyond perfection 🙌🏻🙌🏻🙌🏻

My caramel was to thick but it's not a problem (extra chewy), custard was too liqudy and that was a problem, so make sure to use enough of cornstarch. I have made it few times I love The only thing is when I add the heavy cream the caramel hardens immediately I’m making it for church this weekend I’ll try warming the heavy cream ❤😊

the caramel is a great idea. i had peanut brittle with coconut a few years ago, it made me like both peanut brittle and coconut. i wish i wouldn't have remembered it because i haven't been able to find it in so long

the caramel looks good but i imagine it would be really nice also with a citrus curd layer (i'm really into kalamansi things right now, that would be dank with this pie i think) just something sharp to cut through the creamy mildness
If you guys like coconut, I highly suggest looking up a traditional Filipino coconut/buko pie recipe. It uses fresh coconut slivers and is a lot simpler and lighter than this version (nonetheless, this recipe looks amazing!) There are lots of different recipes for it so you can't go wrong with trying to make it yourself with your own local ingredients :D
I had the make the caramel 3 times because it kept getting chunky, and the custard didn’t set and I cooked it for like 20 minutes. I’m so sad I spent so much time and money on this disaster 😢

I would’ve used whipped coconut cream for the top. You can use the fatty solid part that separates and whip it just like heavy cream.
