I think Claire should have her own channel. She's one of the best TH-cam hosts I've ever seen - very genuine. Not many people can truly be themselves on TH-cam and not come across as phony or loud or obnoxious. Probably 85% of TH-camrs annoy me.
After weeks of ignoring recommended videos of her "chef makes gourmet version of candies" series I decided to finally watch her videos just to found out I really liked her content, sadly I just found out she is not longer in BA, so sad dude, so sad
For me the reason I love watching Claire is that she is so genuine. She constantly says that what she made is "really good" and in the gourmet chef series she is constantly burned out and I love how she reacts by having an existential crisis and still always delivers.
Absolutely adore that she quoted Julia Child here. In teaching my boys to cook (and live life) I frequently worship at Julia's altar: "You must have the courage of your convictions." Priceless.
Made this for Thanksgiving. Decided to brûlée the individual slices as they're served since it's just me and my wife and we didn't want a soggy brûlée topping on day 2. Worked like a charm! The pie is very good and I will definitely make it again. The only problem was that the crust was very difficult to roll out but very forgiving to "patching." Highly recommend!

I got a kitchen torch for Christmas a few years ago, and it is hands down my favorite kitchen tool. Any excuse I can find to use it, I will. Saving this one for the holidays!!

The reason why using fresh pumpkins compare to Libby purée because pumpkins becomes stringy when you cook it and Libby’s purée are actually hybrid of butternut squash. Looks amazing 😍

Oh my goodness that looks good. I think I'm going to try it for Christmas. Also, thanks for the tip about the egg-wash at the end of the blind baking!
