My mother has been on a low carb diet for a while, so all the pasta in our house is weird. I made spaghetti last night and I can't remember what type of pasta I used (maybe semolina), but it absorbed too much salt from the water and didn't have the right texture - also took 20 minutes to cook. Last night, I just had it so I only made a single serving of those noodles, but tonight when we all ate it, I made the chick pea pasta to go with the sauce..... and it was amazing. I think the chick pea pasta is even better than regular pasta. It blends so nicely with the sauce and has a great texture. If you want a healthier option, give it a shot.

I'm Italian. My relatives & I make our meatballs out of equal parts hot Italian sausage, ground beef & veal. I add a little dry red wine to my sauce. No sugar! If it's too sweet add a few springs of mint. We cook our sauce all day long. Serve it the next day with pasta! As you said, it's always better the next day! No jar sauce! 1/5/22: Okay, I made it exactly the way you do, except I added the mushrooms, oregano and pinch of sugar, and I have to express that it came out WONDERFUL! I have never added that much olive oil to my sauce after the fact, only when frying down my bell peppers and onions I add enough oil to cover the pan. It made it look and taste so velvety smooth, and I didn't even have to add a can of tomato paste to thicken it up (something I usually do) ...wow! I just had to touch base with you after making it. Great recipe! It made me hungry for my mom’s spaghetti sauce. She 'added chili powder' to her sauce for a little bit of 'added heat', plus a bit of sugar to cut the tomato acid. I also remember she added 'whole garlic cloves', and a lot of 'button mushrooms'. It was 'lucky to find a whole clove' on your plate. Your various recipes with collards and your Southern green beans are similar to hers, bringing back even more great food memories. And your style of cooking also reminds me of hers. She called it, "Put and Taste". You know exactly what flavors you are looking for. Thanks for your very enjoyable videos!

I like all spaghetti noodles. Thick is ok. Reg is ok. Angel Hair I do like more, however it kinda gets sticky. So my go to is vermicelli. It's thinner than normal spaghetti (in america, not italy) but thicker than angel hair. It's absolutely perfect for both this recipe and home made asian dishes. The only thing is that it's slightly harder to find than all the other noodles.

The oil makes it silky smooth but not greasy. Please trust the process and let me know what you think afterwards. 🤤

Here’s one more tip, add some worchestire sauce to the meat when you’re browning it...adds great flavor!

Your spaghetti looks AMAZING! I stopped using jared spaghetti sauce long ago! Making your own sauce is so much better! I am definitely going to make it your way this week!

I make my spaghetti just like your mother taught you. I put extra Italian seasonings and basil because I like the taste. Delicious looking. Thumbs up.👍
