I was a bartender from 21 until I was 30 (encouraged to make drinks the right way, but we had commercial mixers too). A lot of people are not conditioned to the “right” way. For example, they don’t want a traditional margarita, they want tequila with a margarita mixer. Or they want a Whiskey with Squirt, not a Whiskey Sour. Yes, that might get the job done during happy hour, and I’m all for making the customer happy (I wasn’t stuck up, snobby, or argued with anyone). But I always encouraged people to try a proper cocktail.
only recommendation I'd have Babish is getting the Boston shaker tins, they are easier to get drinks out of compared to the shaker set you have. I also recommend using just stainless, as the coating and wear off over time and can sometimes be found in your drink.
I can't believe it took until this episode for me to realize this, but there absolutely ought to be a collab between Babish and Greg from How to Drink. And of all the collabs the two of them could do, this seems easier than many others since Greg is in New Jersey and Babish is in Brooklyn.

minor slip but rye bourbon is not possible, rye needs to be 51% or more rye in the mash bill whereas bourbon is 51% corn, basil hayden is a super high rye bourbon typically which makes it awesome for manhattans but their rye is even better and my go to! (source is I work at a liquor store that sells about a hundred different bourbons alone)

For all the attention and meticulousness that Andrew gives to his food, his relatively blasé approach to the cocktails highlights how drinks are treated by the public in general. There is a LOT more to cocktails than people realise. Many of them are so easy to make - but so difficult to make *_right_*
Please don't start here. I love Babish, I even enjoyed this episode, but if you want to learn to make cocktails, stick with the pros. How to Drink and Anders Erickson on TH-cam are both great for recipes and for explaining the concepts behind them.
After sobering up from all those cocktails, could we see you make your take on 40 clove chicken? We rub ours with Basil, Thyme, Rosemary and a bit of Sage, all mixed with EVOO. Always a simple favorite with company...

19:15 the garnish is typically dots of bitters on the foam (3-5 dots) then run a pick through the middle of them to make them kinda look like hearts. it's basically latte art for cocktails that have foam - not too dissimilar for a French Martini

Grenadine comes from grenada, which is spanish for pommegranite. Its also the root of a grenade, because a grenade is just a pomm, but made with metal and explosions
This is great, but for the love of all that is Holy, DITCH THE COBBLER SHAKER! You want a Boston shaker with a Hawthorne strainer, these are so much easier to work with and you don't end up with ice blocking the spout during pouring.

You garnish the bitters on the whiskey sour but dropping them into the foam. you can use a cocktail pick and make fun little designs!

The Manhattan is probably the easiest to remember the specs when you know it's based on the zip code (2oz whiskey, 1oz vermouth, 2 dashes bitters)

also, iirc, you typically double strain for cocktails with egg whites because it helps make the foam super silky and hold garnishes better
