    Okay, I’m not blowing smoke when I say I passed this video once when I just saw brittle and was like no, don’t care to watch *sweet brittle candy video*.     made a batch this afternoon - love it. I just realized I gave it all away (half to the host of a party we just returned from and half for my daughter to take to her pot luck meetup with high school friends all home from college) and didn't get any pics of the results. guess I'll have to make another batch...
    for the last year I've been making a traditional peanut brittle recipe I found on Hillbilly Kitchen's YT channel that turns out really well but I love the idea of using honey instead of karo syrup and including spices to make it salty & savory. I noticed you add the nuts at the very last instead of early to let them roast in the caramel. your way made cooking the caramel go much faster, which I wasn't expecting or ready for but when I realized it I added the nuts to slow things down. We found your new cookbook at a bookstore in the Virginia Highland area of Atlanta but they didn't have the cookbook this recipe is in (though our library has both & had checked out both to review yay libraries) so I'll have to order that book

    Delicious recipe!! We made 2 batches this weekend and it is dangerously craveable! The 1st batch was shiny and glossy and perfect. In the 2nd batch it turned out cloudy, matte and wasn't smooth like the 1st batch. Using a thermapen to measure, got up to 300 . . . any thoughts on what could have caused the difference? Could I have stirred too much? Still delicious!

    I like the simplified caramel recipe and the one-pot process. I previously made microwave brittle, but the timing of the process was always a challenge and too easy to burn the peanuts. This was much better. How would Karo syrup change the recipe instead of honey? And, regarding the quantity of nuts, are you adding 6 oz of each nut or, 6 oz. of peanuts and another 6 oz. of the other nuts combined for a total of 12 oz. of nuts. Or, 6 oz. of each nut for a total of 24 oz. of nuts? I tried it with 24 oz. of nuts. It was good but too many nuts - it was like a big PayDay bar. Please advise.

      Peanut brittle is an incredibly common candy in the US, frequently included in cookie boxes around the winter holidays. It's often very plain; my grandmother's didn't even include salt. I became aware there was a similar Indian treat as an adult, but I would doubt that many Americans know about it or the many other cuisines that have some version of it. Of course, I suspect Carla does know about these other versions, but the purpose of the video isn't really to discuss the relative merits of peanut brittle from India, Mexico, Georgia, Africa, etc. Could be interesting, but it's a different video.

    Now I remember why I sadly turned negative on Carla, demonstrated here as in all the videos on this current channel (that I recall watching): she is not generous or appreciative enough provide a link to the written recipe, or even mention amounts within the narrative/transcript. Shameful. These videos are no more than a marketing teaser to sell a book, not a tutorial for beloved fans, which is so disappointing and such a turn-off. Others of your former team have similar channels, and I have purchased books ( Claire Safitz), because they are sharing actual recipes that I can try out after viewing the video, find i
