same! I became convinced though when i made Sweet potato + Feta + crunchy roasted nuts + tahini/lemon dressing with lentils one time. You need a lot of acid, crunch, salt and bitterness to bring back the balance from the sweet potato but then when you do it's super nice : D

For the Tahini Lime Butter, I put the butter in the microwave till it was about 75% melted, then stirred in the rest of the ingredients. It looks too liquid at first, but as it cools it gets a lovely texture. Way easier than all of that "bashing" you were doing. I didn't have any sweet potatoes, but I put it on a roasted Carnival squash and it was to die for!

These are probably the recipes I've made the most since they were first posted on Patreon. My favorite way to cook sweet potatoes! Tahini butter is also good with lemon and a bunch of herbs instead of soy and sesame oil, for a mix-up. It's a really nice side for some white fish, also.

Another great sweet potato recipe is the japanese sweet potato, cut length wise and cut into wedges, skins on. Season with salt, pepper, avocado oil and S & B curry seasoning (or one that is more savory leaning than sweet). Roasted those till they were soft and they are great as a snack or a side for dinner but it’s the breakfast spin that is chef’s kiss. Cut the slices down further, kind of like American fries/ hash from a diner. Crisped them up in a pan and then cracked in a couple of eggs; salt and pepper served sunny side up. It was the best meal I had all week.
Number 3 is going to be SUCH a hit at brunch, love finding new ways to deal with sweet potatoes! Soy braised in bibimbap is my current standout but these might be contenders

if you mix the sesame oil into the tahini 1st, then slowly add the thinner/watery ingredients, it comes together much easier.

I have yet to have a good experience with tahini. It always reads as too bitter for me, I just use sesame oil in its place.
