The Filipino take of ice cream is often overlooked and overshadowed by the commercial ones. Granted that halo-halo is a unique form, sorbetes isn't we should sleep on as well. Instead of regular cow's milk, carabao milk is used instead since it is cheaper. They also use coconut milk and cassava flour too which makes the ice cream, well, creamier and thicker. And residing on a tropical country, the sorbeteros - the one who makes sorbetes - have a variety of fruity tropical flavors at their disposal such as mango, dragon fruit, avocado, melon, pandan, coconut, durian, jackfruit, and even ube - not a fruit, but still widely popular in the country.

Faluda (as it is locally known) is very popular in India as well, we have a lot of Persian influence in our cuisine.
Edit: Traditional Indian ice-cream is known as Kulfi, it's denser and creamier than western ice-cream so takes longer to melt!

I'm from Indonesia and we have a dessert called 'Es Campur' which literally mean 'Mixed Ice' and it's actually similar to Halo-halo (even the name is similar) but different than halo-halo, es campur doesn't really contain any ice cream, it contains mainly shaved ice with fruits, cincau (bittersweet jelly), small tapioca balls, etc. and top it with condensed milk & coco-pandan syrup (a special flavored syrup which has the color pink).
There is also a similar desert called 'Es Teler' which almost the same but it usually contains fruits more: avocado, jackfruit, coconut but the main difference that we only use condensed milk, no coco-pandan syrup.
There's many more in fact just some examples: es doger, es puter, es lilin, es cendol, es cincau etc.
(Keep it mind the indonesian word for ice is 'es', so even ice cream became es krim)
I wouldn't call them ice creams though, but it's just amazing that Philippines and Indonesia as neighbors have almost similar deserts. Love Philippines 🇵🇭 from Indonesia 🇮🇩
P.S. across Southeast Asia there is a lot of durian ice cream which is delicious (if you stand durians)

In Malaysia we have ais kacang, which is quite similar to the Halo-halo from the Philippines. It is made from shaved ice with a variation of toppings. Most commonly: attap chee (palm seed), red beans, sweet corn, grass jelly, roasted peanuts, cubes of agar-agar, and vanilla ice cream. It is then topped with evaporated milk, condensed milk or coconut milk with rose and sarsi syrup.
We also have Cendol, made from coconut milk, rice flour pandan jelly, shaved ice, and palm sugar

Dondurma has a sort of cousin ice cream called Booza. While Dondurma is pliable and gets hacked off from a block to serve and doesn't melt (at least not quickly) Booza is stretchy like mozarella. It too uses orchid root and pine resin gives it the stretchiness, and also uses goat's milk, and can be scooped out. I don't know what the mixing process for Dondurma is like, but for Booza they take these great big mallets and beat the snot out of the mixture to give it its texture and consistency. There's a shop in New York that makes it. It's SO good! :-)

Aside from ube, The Philippines has some unique/unusual/interesting ice cream flavors. Like avocado , mango, cheese, and even durian. Aside from cow's milk and cream, some makers also use coconut milk or carabao's milk. Ice cream is only added. We have the famous “dirty ice cream” or known as street ice cream in different flavors.. and I think Ube ice cream is only in the 🇵🇭. 😋😋😋

My mother is from a city called Maraş (or Kahramanmaraş after the War of İndependence) in Turkey that is famous for it's thick ice cream. It's made with goat milk and an ingredient called "sahlep" which we also make a winter drink that is consumed with cinnamon. Sahlep is the root of an orchid that is endemic to the area. And it gives the ice cream a beautiful flavor and thickness. The ice cream makers beats the ice cream for a long time to make it dense. It melts very hard and you have cut it while serving it. Most of the people in Turkey only know the replications of this ice cream in super markets but since my mom is from there I get to eat it from the local makers as I grow up. It's amazing and really tasty.
