Roasting meat in a pumpkin is a legit technique. There are old American cookbooks from the 18th century that talk about it. Usually they did pork though.

The chicken in the pumpkin sounds really good! I’d use some of that stock that came out to blend up with the pumpkin to make a soup too. It’s already seasoned. Add a bit more stock, blend it up and maybe a bit of cream when heating it. Squash soup is a thing and pumpkin is a squash. Maybe crumble a bit of blue cheese for garnish on serving. Sounds delicious to me!

Hello all, To add to your pumpkin spice recipes.... I took a basic oatmeal raisin cookie recipe. used PS as the flavoring, used mixed dried fruits and nuts. It made for a delicious cookie. Double the recipe and freeze a tray of preformed cokkie balls for xmas. They bake beautifully from frozen. Enjoy the Horror Jacques Mexico
to get the best of both worlds cut up the pumpkin and potatoes (why no carrots or turnips or rutabaga? and later in the roasting another tray of green veg near the end. hey Thanksgiving turkey a la Halloween!!!) and put it on the base of the pan and set the chicken on top so that you get the crispy skin. the gravy is a must! That was an inspired David moment.
also to make the presentation nicer roast the chicken with a cheaper wonky pumpkin and roast a nicer one (open at the bottom rather than the top and roast on the side to cook but not melt) I can even picture the pumpkin cut to just cover the chicken with the veg strewn about the base...bring to the table and lift the cloche and there's dinner.
