So I cooked this dish tonight and served it in the pineapple bowls! In a word...WOW! Absolutely fantastic!!! I did make a few of modifications. I used thinly sliced chicken breast cut up into small 1-1.5" bite sized pieces instead of shrimp. I added a tbsp of corn starch to the soy sauce when I marinated the chicken for an hour in the fridge before frying for some extra crisp. I used a can of peas and carrots instead of frozen vegetables. I also threw in about 1/4 cup of chopped red onions (sauted with the garlic & peppers) as well as a cup of halved tiny cherry tomatoes for more color. (I also used the chopped green onions.) I used three Serrano peppers finely chopped (with seeds) instead of the birds eye red chili peppers for kick (my local grocer didn't have the red ones.) I also added 1 tsp of red curry to the 1 tsp of regular curry powder for a bit more kick. I added about 1.5 tbsp heavy whipping cream to the eggs for extra fluffy smooth texture. Finally I also added 1/2 cup of a variety of dried raisins for an extra hint of sweet. This was a HUGE hit and my dining partner LOVED the pineapple bowls which gave this dish a fancy ambiance. I made this tonight and it was fantastic!! Huge hit with the family. Another perfect recipe, thank you Seonkyoung!! I will definitely be making this one again. Oh, and I know you’re plant-based now, so I wanted to suggest you try making this with king trumpet mushrooms sliced into rounds like scallops, in place of the shrimp. These mushrooms will soak up the marinade, though, so double the white pepper & soy sauce. Cheers!
Just made it myself. It was AMAZING! Thank you! I added lobster, scallops, oysters, crabmeat, and used shallots in the rice and fried crispy ones on top. Sauce was just like a restaurant by me

I made this a few years ago for friends, I find that if you bake the pinapple while is filled with the fried rice and finish it off with a slash of truffle oil, the aroma is amazing

You can also add turmeric powder to make the rice yellow colour, and add chicken/pork floss as topping. That's how we eat it in Singapore 😊

Pineapple fried rice:
