So I cooked this dish tonight and served it in the pineapple bowls! In a word...WOW! Absolutely fantastic!!! I did make a few of modifications. I used thinly sliced chicken breast cut up into small 1-1.5" bite sized pieces instead of shrimp. I added a tbsp of corn starch to the soy sauce when I marinated the chicken for an hour in the fridge before frying for some extra crisp. I used a can of peas and carrots instead of frozen vegetables. I also threw in about 1/4 cup of chopped red onions (sauted with the garlic & peppers) as well as a cup of halved tiny cherry tomatoes for more color. (I also used the chopped green onions.) I used three Serrano peppers finely chopped (with seeds) instead of the birds eye red chili peppers for kick (my local grocer didn't have the red ones.) I also added 1 tsp of red curry to the 1 tsp of regular curry powder for a bit more kick. I added about 1.5 tbsp heavy whipping cream to the eggs for extra fluffy smooth texture. Finally I also added 1/2 cup of a variety of dried raisins for an extra hint of sweet. This was a HUGE hit and my dining partner LOVED the pineapple bowls which gave this dish a fancy ambiance. Oh, and I know you’re plant-based now, so I wanted to suggest you try making this with king trumpet mushrooms sliced into rounds like scallops, in place of the shrimp. These mushrooms will soak up the marinade, though, so double the white pepper & soy sauce. Cheers!

Hi Seonkyoung, I tried making pineapple fried rice today. The flavour was delicious. But I felt the liquid was too much and was making my fried rice mushy. My rice was cooked previous day, not overcooked and was dry. It was perfect till the point I added the sauce. But later it was not as expected. I also want to add I didn't make in wok. Any tips to avoid it.?
Tried this out but had to swap some ingredients that I already had, like cooked pearl barley for rice; and macadamias for cashews. Turned out really nice. Thanks for the recipe!

So I cooked this dish tonight and served it in the pineapple bowls! In a word...WOW! Absolutely fantastic!!! I did make a few of modifications. You can also add turmeric powder to make the rice yellow colour, and add chicken/pork floss as topping. That's how we eat it in Singapore 😊
