It's good you qualified the name as "Filipino-style" carbonara. Real carbonara is Italian in origin, and is simple, easy and quick to cook. It does not have mushrooms, parsely, cream, etc., and uses eggs or egg yolks - which provide the creaminess. Adding more ingredients than required is just showing off, which Filipinos are known for. The simpler, the better and the more authentic. Sorry, but I think Italians (especially Romans) will not eat this carbonara as it is a corruption of the real one. Note that when one shows off, one's ignorance usually shows up.
This is a fusion dish which uses ingredients familiar to the palettes of the target nationality. So don't hate if you don't like the ingredients used and stop being a purist if the title of the dish doesn't claim to be authentic.
