I just wanted to come back to this recipe and say I made this and was quite skeptical of how it would turn out but IT WAS AMAZING!!! I added a few tweaks and will be making this recipe over and over again. Thank you for a lovely recipe! Here’s my version: 2 cups walnuts 1 red onion 4 cloves garlic 1/4 cup sun dried tomatoes in oil, plus a few extra tbsp of the oil A few dried mushrooms, rehydrated in water and red wine 2-4 tbsp Tomato paste mixed with some water 1 tbsp avocado (or olive) oil 2-3 tbsp taco seasoning 1 tsp soy sauce 1 tsp miso paste and water slurry Splash of balsamic, high quality (optional) 1 juice of a lime (optional) 1/4 to 1/2 cup of water 1. Soak walnuts in a bowl overnight. 2. Drain walnuts. Put them into a food processor and pulse until you have meat like crumbles. *Be careful not to over process or you will end up with walnut butter. 3. Chop onions, garlic, rehydrated mushrooms, and sun dried tomatoes very fine. 4. Add oil to a skillet, and saute your onions and mushrooms until translucent (about 2-3 minutes). 5. Add in the garlic for 1 more minute. 6. Sprinkle the taco seasoning across and stir to combine. 7. Add in sun-dried tomatoes with a few tbsp of their oil. Cook for 1 more minute. 8. Add in the crumbled walnut and stir very well. 9. Pour in the soy sauce, miso paste/tomato paste water slurry, and a splash of high quality balsamic. Stir well. 10. Cook for another 4-5 minutes. Add more tomato paste and water as needed to add a bit of moisture to the mixture. I also added some extra sundried tomato oil here. Before removing from heat, stir in lime juice (optional). 11. Take off the stove and serve.
I'm conducting a diabetes reversal cooking class and we were talking about the importance of omega-3 fatty acids and that walnuts are an excellent sources for this nutrient. So I begin searching for a "user friendly, budget friendly" recipe and you popped up. It has been a while since I visited your page but I want you to know even 4 years later it is still RELEVANT and my class really enjoyed the Walnut Meat Taco. I sauteed the veggies in a vegan beef broth then added the walnut meat to my skillet. It had a wonderful flavor! Thank you again for sharing.
Just add a binder honey like an egg substitute, flax seed egg, follow your heart , etc with a little flour or bread crumbs 😀 to turn into a burger or meat ball. Just a thought. Luv your videos

Silly me, I should have watched the video more thoroughly! I did the recipe but I was worried about over processing it and it ended up too crunchy! The taste was amazing and now that I have looked closely at the texture, I can see where I made my mistake! Can't wait to try it again as it I soooo easy!!

pretty good, but a bit too much wallnuts for me. I replaced half of the walnuts with 1/4th cup red lentils (before soaking) and it worked out just as well and became much cheaper. thanks for the recipe
I’m making the switch from meat to plant based. I’ve given up pork and beef organically (pun intended). What I mean is, it just happened. I didn’t plan on it. Chicken…well that’s a little tougher. And fish, stop it. Don’t mind my dust, I’m under construction. So for me, I’ll probably use an egg to bind it so I can have a burger. Just an accident discovery on my part I’d like to share- if u toast the walnuts first then boil them about 30min, u don’t have to soak overnight neither boil forever lol
@@MakeItDairyFree it came out really good! I even got my pops to try some. The only thing I will do different next time is use the blender instead of bullet to blend. Not every piece of walnut was chopped and then I got hungry and said forget it lol I seasoned with some Worcestershire, season all and onion powder.

Make It Dairy Free hi!!! This was actually my first vegan meal. I’m going to try the vegan way for the next five weeks. I added way to much taco seasoning so it was a tad bit salty. Other than that it was good.
Thank you so much for this recipe it came out awesome and I tweaked it a little bit for my own family needs, just a little bit of cooked lentils and sun-dried tomatoes instead of fire roasted came out so good. Also I haven't tried it yet for this recipe but from my other recipes I've found that tapioca starch is a pretty decent ingredient to be the staple of keeping stuff together. Gonna test it out for next time. Have you found anything yet though? Noticed this video is 2 years old
Btw I tried the recipe came out horrible. I definitely need to soak the walnuts for at least 12 hours, 30 minutes the walnuts will be to cruchy. And you need a food processor a blender wont work. Other than that I know your came out tasting much better.

A binder would be using mashed black beans or lentils works really well for patties. Sweet potato as well

You could probably put them in an Instant Pot to get soft (faster) as well... For a binder, use canned Chickpea water

I would use rapeseed oil to replace olive oil, and I would use coconut aminos in place of soy sauce, other than that, ty

Also I haven't tried it yet for this recipe but from my other recipes I've found that tapioca starch is a pretty decent ingredient to be the staple of keeping stuff together.

You can add an egg, or chia seed (soaked in a bit of water until it makes a glue) to make the meat stick together.

Btw I tried the recipe came out horrible. I definitely need to soak the walnuts for at least 12 hours, 30 minutes the walnuts will be to cruchy. And you need a food processor a blender wont work. Other than that I know your came out tasting much better.
